Made this for dinner last night. Two cornish game hens, split, and marinaded in plain yogurt with ginger, garlic, tumeric, etc then grilled and then topped with a Makhani sauce which had the same spices as the marinade as well as butter, yogurt, and tomatoes. Served with Garlic Naan

Tomatoes, green lentils, chicken stock, garlic, onions, curry powder, coriander, tumeric, black pepper, cilantro.

1-1/2 cups cashew milk

Continuing my challenge from Ink Explorations class: draw with a brush, and add ink wash shadowing. Yikes. Ink is not as easy as watercolor -- and I thought that was hard! Brushing is going better -- sometimes -- now that I've found my Isabey sable brushes. (I'd loaned them to a friend -- and forgot I hadn't gotten them back.) Color added with watercolor and color lifted from the Neocolor II's my son sent me for Mother's Day! (Best gift ever!) Two bottles of herbs and spices from Belize -- still good after 4-plus years -- (with a fun label that says they were bottled in Belize) and one from a potted oregano I sadly killed last year. That bottle's label is original to the container, which once held breast milk donated for sick babies. The middle bottle, from the fresh market in Punta Gorda, Belize, was recycled and came minus its label. I don't know what Yellow Ginger is, but it smells and tastes a lot like tumeric, and is a very common seasoning in Mayan households there.

From "Nyonya Flavours - A Complete Guide to Penang Straits Chinese Cuisine"

 

Ingredients :

 

4-5 tbsp oil

1 star anise

2 cloves

1 cinnamon stick

 

Spice paste (ground)

30 gm (15) dried chillies, soaked

200 gm (20) shallots

15 gm (3 cloves) garlic

20 gm belacan, toasted

20 gm (2cm) tumeric

20 gm (3 tbsp) coriander seeds

2 gm (1 tsp) cumin

2 gm (1 tsp) fennel

 

1.5kg meaty chicken pieces

300 gm potatoes, peeled and cut into wedges

400 ml thin coconut milk

100 ml thick coconut milk

 

Seasoning

1 tbsp salt

1/2 tsp sugar

  

Method :

 

Heat oil over medium low flame and saute star anise, cloves and cinnamon stick. Add in spice paste and stir-fry well. Add 2 to 3 tbsp thick coconut milk (if it is too dry) and fry over low heat until fragrant and oil separates.

 

Add chicken and fry for a minute. Add potatoes and pour in thin coconut milk. Simmer until chicken is tender and potatoes are cooked.

 

Lastly, add the thick coconut milk and season to taste. Continue to cook until gravy is slightly thick. Serve with boiled white rice, Nasi Kunyit (Tumeric Rice) or Roti Jala.

This soap is like walking through a citrus grove and catching the scent of citrus wafting in the warm breeze. Essential oils of Grapefruit, Lemon and Orange scent this soap. Tumeric colors a light yellow with chamomile flower flecks throughout.

This was cooked by Jason for tonight's dinner... This was very tasty but little bit spicy.... The rice however cooled my mouth down after each bite... This was yummmmy and very tasty.. cheers Michelle xxxx..

When I stripped the leaves off a bunch of chicory for a salad the other day, I was left with the core, which I suspected would be just fine in a soup. This is one core, one small carrot, one rib of celery, and one tiny white onion, shredded and sweated in a dab of ghee and a dab of duck fat with a garlic clove, salt, pepper, crushed red pepper, and a tablespoon of arborio rice to thicken everything. Deglazed with water (3cups) and a dab of concentrated vegetable stock, I then added a pinch of tumeric, mustard powder, nutmeg, and fennel powder, brought it to a boil, and let it simmer for a half hour before giving it a taste of the stick blender, a splash of vinegar, some chopped parsley, and a final seasoning. Didn't even bother with a spoon to eat it. Easy.

top tier: greek salad, toasted pine nut couscous, cinnamon chicken w/currants and honey syrup, cilantro.

 

bottom tier: almonds and choco chips, mandarin oranges, and blueberries.

 

Cinnamon Chicken Recipe

 

1 lb. boneless, skinless chicken thighs

1 tsp cinnamon

1 tsp ginger

1/2 tsp tumeric

1/2 tsp black pepper

1 tsp salt

2 Tbsp olive oil

2 Tbsp butter

 

Combine spices and olive oil. Add chicken and coat w/marinade for about 2 hours. Melt butter in a heavy skillet over medium heat. Brown chicken each side about 5 minutes. Cover and steam to finish cooking. Let chicken stand before slicing.

 

Honey Syrup Recipe

 

1/2 cup water

2 Tbsp honey

1/3 c dried currants

2 cinnamon sticks

 

Heat all ingredients in a small saucepan over med heat. Bring to a boil and reduce heat. Syrup is done when liquid is reduced by half. Remove cinnamon stick before serving.

Tamarind is widely used throughout Asia. It has an acquired common name “assam” which means “acid”. In cooking it combines well with sugar, chillies and other flavours. Tamarind slices and paste release a fruity acidic taste that makes this dish sour. Thus, sugar is added to balance it. This dish can be mild or a fiery hot, just add in more chillies.

 

Tamarind is said to have medicinal uses. It cools the system and cleanses the blood. The pulp or paste is rich in vitamins and minerals, is used in Chinese medicine. The bark is said to treat asthma while the flowers are said to reduce blood pressure.

 

My Version:

Recipe:

Assam Fish

 

Ingredients:

800g selar [fish]

10 slices dried tamarind – washed and soaked in 1 cup of hot water

2 tbsp tamarind paste – diluted in 1 cup of water and strained for the juice

20 stalk laksa leaves / daun kesom – picked the green leaves and discard the stalks

Sugar, salt and ajinomoto to taste ( add in some vinegar to balance the taste if needed)

2 lemon grass – bruised

 

Optional: pieces of pineapple and fresh tomatoes

 

Ground into a paste

6 red chillies and a few dried chillies to taste

6 cloves garlic

1 big onion

2 slices of ginger

1 ½ tsp turmeric powder or 5 cm fresh tumeric

1 tbsp roasted shrimp paste [blachan]

 

Method:

1. Prepared the fish, season with salt and pepper and lightly fry in oil just to sear them. Remove to a plate for later use.

2. Heat up 4 tbsp of oil, fry the ground spice paste and lemon grass till fragrant.

3. Add in the soaked dried tamarind slices with the solution and also the strained tamarind juice. Bring to a boil and add seasonings.

4. Add in the fish and simmer till cooked.

5. Put in the laksa leaves and just blench them in the gravy.

 

Salady bento today!

 

The eggless salad was super-easy to make. Just mash up a block of extra-firm tofu with veganaise, tumeric, salt, pepper and nutritional yeast. Everything is pretty much to taste!

Slowly glaze 1 chopped onion for 4 minutes.

Add 1 chopped garlic.

Add 1 T black cumin and 1/2 T tumeric and cook for a minute.

Add 5 T white wine. Let it simmer for 4 minutes.

Add chopped tomatoes (fresh and/or canned), season with salt or chickenstockpowder and simmer for 10 minutes.

Add the courgette, cook for 8 minutes or until cooked.

 

Serve with rice of nasi kuning.

Chef Lance Kosaka uses two brands of fish sauce in his dishes, and roasted sesame seeds. Most of his products can be found in shops in Chinatown or at Don Quijote

Almost complete. About to add some stock mixed with tumeric (chiefly for colour) and tomato puree, plus the eggs and the peas.

We used red cabbage for blue, beets for pink, and tumeric for yellow.

Photo: ʻŌlena is easy to grow in warm areas. All that is needed is a small piece (lower center) from which a new plant emerges to form a large rhizome in 10-12 months.

Polynesians use the rhizomes mostly as traditional medicine or yellow dye.

 

ʻŌlena is one of 24 or 25 canoe plants that were brought by the early Polynesians to the Hawaiian Islands. Another canoe plant, ʻawapuhi or Shampoo ginger (Zingiber zerumbet), is related to ʻōlena.

 

ʻŌlena can be harvested at any time of the year. However, I generally like to harvest it when the leaves turn completely brown. I find it has a better and stronger taste at that time. When leaves are green the rhizomes seem more watery and less flavorful.

 

The health benefits are reducing inflammation and joint & muscle pain, and increasing cardiovascular, skin, brain cell function and mood balance.

I fried the garlic, ginger and tumeric in butter over low heat until the pieces were soft and translucent.

Pan grilled chicken kofta's made with coriander, chilli, tumeric, and 'stuff', served on a roasted pumpkin and tomato salad, with basil.

 

Served with a ginger/basil/sour cream/lime juice sauce type thing.

 

This meal took me literally half an hour to prepare and make... So i was pretty happy with how it turned out.

This is another Phayant RoiTao (Footprint) Kamin (Tumeric) Yiap TaoKool (Both foot step on) created by LuangPhor Koon of Wat BaanRai (Nakonratchasima) in B.E.2536.

 

Notice this particular piece has a Yant Na inscribed personally by Luang Phor Koon. Only a total number of 1000 pieces were created, more importantly, to find a genuine piece and well-maintained piece is not easy nowadays .
