A Day Of Baking.
I had a single pie crust and some apples left over from my last apple pie so thought I'd try making an Apple Tart. This turned out great. It's for Chanukkah! This is totally made from scratch, no boxes were opened for this dessert.

Happy Sweet Sunday everyone; today's treat is a lemon cheesecake tart from Epicuria.
I'm not sure how it will taste, but it is rather pretty and gave me an excuse to use one of my new background!

Tarte tatin, or, upside-down apple tart. This recipe requires 4-6 eating apples (not cookers). Melt butter in a frying pan with a metal handle (so it can get into the oven), and add the apple quarters skin-side down, in one layer. Add a pinch of cinnamon or all-spice, a spoonful of honey (or two if the apples are very tart), a handful of raisins or chopped walnuts if you wish, and half a water glass of brandy or rum. Cover and stew. When the apples are soft, but still keeping their shape, take them off the cooker and check that there's still enough liquid in the pan --- if not, add another drop of the liquor you used in the first place. Cover the apples with a disk of (reasonably thin) shortcrust pastry, prickle it all over with a fork, and put in a hot oven (200C will do) for c. 20-25 minutes (check after 20 mins). When the pastry is nice and golden, take out of the oven, set a very flat dish on top of the pan, and flip the tart on the plate. In my experience this is the only bit that is not completely straightforward, and it may require a bit of practice to get it right --- while practicing, avoiding to get any of the caramelised honey on one's hands is essential since it is seriously hot, and this is the reason for the long-handle frying pan. At times, if the caramelised honey is too solid, the pastry may break or the apple get misplaced, etc., in which cases the tart may need a bit of cosmetic surgery before being served.
This miniature tart dropped fell over so many times that this shot was taken with me seething in silent frustration. And yet, everything seems so serene on screen hur.

i made these tarts early last month because i wanted to use up the apples and the tart dough that i made a very very long time ago. i didn't manage to use up the tart dough but the apples i did. my mother was actually complaining that my tarts were so small (4 inches) and i had made only 2 (even though not many people eat such stuff in my household). but i only had 2 tart pans that i bought from daiso and i thought it was a good number because i didn't want leftovers to be in the fridge. again. i made everything from scratch, apple sauce, tart dough.

the lighting was crappy because it was late afternoon and the spot that i used had sunlight coming in directly from the window and casting rather harsh shadows and causing the apples on the tart to look overexposed. i also don't quite like the light quality of the evening sun which tends to be a bit yellow. the ones of the apple sauce was taken earlier in the day so they looked better IMO.
in the end i covered my window with my pattern making paper so that it wouldn't have such harsh lighting though that made it quite dark too. oh wells...
A make ahead tart that sets amazingly, is eggless and uses only yogurt and condensed milk in the filling.

I do enjoy browsing amongst all the sugary lovelies in the deli section of Carluccio's I am forever tempted and these strawberry meringue tarts have definitely caught my eye. Trouble is I could do with losing some weight not putting any more on so I'll pass on these and just head off to the local bar for a glass or two of diet wine.

It was reduced in the supermarket so I HAD to buy it ! Delicious!
I normally aver citrusy desserts, but citrus and chocolate is one of my favorite combinations. There's something about the dark bitter richness against the refreshing brightness of citrus that set me wild. The orange-chocolate ganache filling is from The Essence of Chocolate. Cookie-like crust with a creamy lemon filing (made with home made lemon curd and cream cheese), toped with beautiful summer fruit.
I made one large and 6 individual sized (like above) tarts (along with several other treats) for my sister's housewarming party. I just bought a set of these little sized tart pans a couple weeks ago, and I've been dying to try them out. Little desserts are so cute!
