More One Photo in Olinda, who has been there knows that there are many shops with things to eat, tapioca, pastel, all kind of things, and I thought the lighting of the place so good that I wanted to take a picture, I hope you like it!

One evening, we sliced tapioca for a change and fried them. The result was this.

Its a matcha weekend :)

 

Heidi is right, the possibilities are endless once you have the "foundation" of the ultimate tapioca pudding. So far, we tried the original vanilla pudding, chocolate and now matcha. Another flavor on my list is coconut.

A few weeks ago, my boss took me out to celebrate my 4 year anniversary with the company. Because we both have an adventurous side to us, we chose this Thai restaurant over in Las Colinas. Lunch was so good that we had to order dessert.

 

He had this fried banana eggroll type thing. I ordered tapioca pudding with coconut cream.

 

It was unlike the tapioca puddings i was used to. First, the pearls were pink, large and plump like caviar, clearly distinct from the coconut cream it floated in. Second, it was served warm which was a surprise. Most tapioca puddings I've had were clearly thick puddings, the tapioca pearls only being an afterthought.

 

In this dish, the tapioca pearls were the star and received more attention than the actual cream.

 

I came across pink tapioca pearls on my last trip to the asian store so I tried to recreate it at home. After two failed attempts, I finally learned how to prepare the tapioca pearls without cooking them to death (found here). Essentially you have start them out in boiling water first, let them cook a little while. Then turn off (or turn down to warm) the heat and let them "steep" to soften up on their own and to avoid breaking down the delicate pearls.

 

The product: plump, delicate, well cooked pearls of tapioca ready for any pudding.

Tapioca is a Brazilian ingredient that comes from a root called manioc, native from the Amazon. This flan/cake has a really intense coconut taste and the caramel on top is the key to make the recipe perfect sweet.
