Here's the variegated tapioca again, in it's prime now (since summer is waning and it doesn't like cold weather as I recall from spring). I really really like the contrast of these leaves and stems.
Tom likes it best cold...Actually, really yummy Tom said...thought that I would make some tapioca--never been a fav of mine though.

INGREDIENTS:
1/2 cup Large tapioca pearls
1 cup Ice cubes
1/2 cup 2% milk
1/4 cup low-fat Sweetened condensed milk
3 ZESPRI® GREEN Kiwifruit, peeled and sliced
METHOD:
1. Place 4 cups water in medium saucepan over high heat; bring to boil. Add tapioca pearls, boil 3 minutes until soft; drain. Divide pearls evenly between two, 12-ounce glasses.
2. Combine ice, milk, and sweetened condensed milk into blender; pulse until smooth. Add kiwifruit; pulse until just blended, do not crush kiwifruit seeds.
3. Pour kiwifruit mixture over tapioca pearls; serve immediately.
Nutritional Analysis per Serving (12 ounces): 350 Calories, 6g Protein, 78g Carbohydrate, 3g Fiber, 2g Fat, 0g Sat. Fat, 0g Trans Fat, 15mg Cholesterol, 75mg Sodium

Tapioca (Portuguese pronunciation: [tɐpiˈɔkɐ]) is a starch extracted from Manioc (Manihot esculenta). This species is native to the Northeast of Brazil but spread throughout the South American continent. The plant was spread by Portuguese and Spanish explorers to most of the West Indies, Africa and Asia, including the Philippines and Taiwan, being now cultivated worldwide.
Tapioca is widely consumed in the Indian state of Kerala usually as breakfast or in the evening. It is boiled (after skinning and cutting it into large cakes of about 6–8 cm long or into small 2 cm cubes) in water till properly cooked and the water is drained off. Once cooked, it can be mixed with grated coconut, chili, salt, turmeric etc., steamed and mashed into a dry pudding. Tapioca Chips - thinly sliced tapioca wafers, similar to potato chips, are also popular.
