For the nine students who made the 21-day trip in January 2017, the scarcity and simplicity of life in Cuba – from the 1950s cars to the empty supermarket shelves to the limited Internet service - challenged every convention of their lives back home.

 

The study abroad trip combined two classes: Journeys through Latin America: Contemporary Cuba, taught by Murillo, and Health, Culture and Elder Care in Cuba, taught by Kirby Veevers, an adjunct professor of Health Professions who specializes in palliative care, aging and long-term care.

Students and faculty traveled to Ethiopia over spring break for a blend of cultural and academic experiences in the East African nation. There, they visited historic locations and met with high-level officials at the U.S. Embassy, the United Nations Economic Commission for Africa, Oxfam, and the African Union.

During my walk to campus each morning, I would stop by this small street food cart which sells jianbing, 煎饼; a Beijing street food similar to a French crepe, cooked with egg, cilantro, scallions, mustard pickles, hoisin sauce, chili sauce, crispy wonton wrapper, and some lettuce. The street food stand is run by an older woman and her husband, who happens to be sleeping in the back of the photograph, who setup the cart at roughly 4 AM and remain open until about 3 PM, during the weekdays. This was one of the first street food items I tried in Shanghai and one of the first attempts at practicing my Mandarin skills. Their friendliness and delicious jianbing kept me coming back multiple times a week during my year abroad. A jianbing is ¥4 and they are located in a tiny parking garage called Zhifang Building Parking Lot at Guokang Rd, Yangpu Qu, Shanghai Shi, China, 200433.

 

Street food in Shanghai is tied to its success and growth as a city. It came to fruition during the expansive migrations of rural Chinese to the city, in search of work, who needed to be fed fast and cheaply. Street food carts were easily transported to and from locations and provided fast meals for the poor populations of migrants. It served sustenance for decades to the hardworking laborers who built and transformed the city from the ground up. It has since come under fire and has dwindled to a limited number of carts around the city. It is a constant battle between law enforcement and diligent vendors like the ones pictured. Now street food in Shanghai pops up randomly during the late hours of the night or early morning, outside the hours of strict law enforcement, scrounging to hand out costly tickets for sanitation quality. It is very sad to see a rich variety of street food carts being shut down, many small family businesses, I am glad I was able to experience one of the best and hope they endure the test of time.
