The chicken was a drumstick cut into a couple of pieces. The meat was marinated in soy sauce and I got extra soy sauce when served. A bit disappointed that for this dish the restaurant did not use free range or free run chicken!
I wasn't planning to post any food photos today.... until.. I had my lunch made with left-overs as usual. But the noodles tasted so good, I have to share with you all :P
I made Soy Chicken last night and had 2 broken pieces left (as seen in the photo).
Recipe for the chicken:
4 big chicken legs
2 Tbsp light soy sauce
2 Tbsp dark soy sauce
2 Tbsp sugar
1 tsp salt
2 big slices ginger
2 spring onions
1 tsp five spice powder
Boiling water - enough to just cover the chicken
dash sesame oil
Boil water in pan, add everything. Bring it to boiling and lower heat to medium, not too low. Cook legs until tender and make sure the sauce doesn't dry up.
The sauce initially would taste bland, but as it cooks with chicken, taste will intensify. Season the sauce to taste with salt, sugar and soy sauce when the chicken is tender. Add a dash of sesame oil at the end.
For the noodles:
Cook some egg noodles according to the instructions on its packet. Use the sauce from the chicken as soup base, add about 1 portion of sauce and 1 portion of boiling water. Season with black pepper, soy sauce, salt and sugar.
Voila!! I added juilienne ginger and spring onion on top for extra taste. I also roasted some dry whole chillies and crushed them with the back of a wooden spoon. THAT tastes MARVELLOUS!!!

PS: the soup tasted a bit like taiwan beef noodles soup!!! must be the 5 spice and chilli flakes!! :P
PS2: you can make the chicken ahead of time. Like any stew, it tastes better a day or 2 after :p when the chicken soaks in the sauce to cool, it absorbs all the goodness. Heat it up the next day and cook for 30 mins. Makes it more tender and tasty :P...

2 cups flour
1/2 tsp. salt
Egg Replacer for 1 egg
1/2 cup cold water
Sift flour and salt into a large bowl, add egg replacer and water. Mix until ingredients can be gathered into a ball. Knead just enough to make dough smooth but still soft. Do not over knead Divide into 2 balls and roll out each ball on a lightly floured surface into a square 14 inches by 1/16 inch thick. Cut with a sharp knife into 3 1/2 inch squares. Cover with a damp cloth if dough must sit a while.
I marinated the following overnight in tamari and lemon juice-
1 cup soy chicken
3 tsp scallions
2 tsp diced bell pepper
6 tsp pinto beans
2 tsp minced parsley
Stuff wontons and fry, Drain.
Feeds 4 plus
Tonight I made soy chicken for dinner. Didn't have any veggies so I decided to satay some onions. Made an egg too just because I like them :) haha. Here's the recipe for all you foodies!
Ingredients:
Chicken Thighs (up to you how many you wanna make, I used 4 chicken thighs, can also use whole chicken but it'll take longer, I deboned mine so that cook time will be quicker)
Light Soy Sauce
Dark Soy Sauce
1 whole finely minced ginger
~2 sugar cane blocks (yeh they come in blocks... Just go to C-Town and you'll find's)
2 teaspoons of chopped red pepper
Instructions:
Throw your chicken in a pot, and fill the pot with just enough soy sauce to cover the chicken (80% Light Soy Sauce and 20% Dark Soy Sauce - eyeball it). Sorry no exact measurements because everyone's pot is different and amount of chicken will vary. Now remove the chicken from pot and place in a separate bowl. Throw in your minced ginger (ginger will give you a bit of a spicy kick to your chicken), sugar cane blocks and chopped red peppers. Heat up the pot until sauce is boiling, make sure to stir once in a while to help the blocks dissolve quicker. Once your sauce is completely heated and bubbling, toss in your chicken with skin facing down. Wait till the sauce boils again while the chicken is in. Once it boils up, turn your heat down to 2 (LOW). Cover and let it poach in the sauce for about 15 min. After that remove your chicken from the pot and let it sit for about 10 minutes to cool down. Then serve :) Do not throw out the sauce! That stuff you can either have with rice or re-use for making soy chicken again another time! Just refrigerate and it can last about 2 weeks max. That's it. Really simple to make. If you find that the sauce is too salty, add more sugar cane to offset the saltiness, and vice versa if its too sweet. Try it first, then change it up for future.

1. Saute 1 cup reconstituted soy curls with 1/4 cup sliced red onion, parsley, 1 clove minced garlic,Bragg's Aminos
2. Spoon onto Wheat tortilla
3. Add Brown Rice
4.Add Grilled plantains
5. Add Roasted red bell peppers
6. Add Black beans
7. Add Avocado
8. Roll and fold, wrap in foil and heat in 280 degree oven 10 minutes
9. Cut in half
10. Enjoy with salsas

Yung Kee was out of their famous roast goose (yes, seriously!!!) and they don't serve duck (ohhh the pretension :) so we went for a mixed plate of soy chicken, char siew and jelly fish.

Mix the tags and eat!
1 cup shredded white cabbage
1/4 cup shredded red cabbage
1/4 cup shredded carrot
1 cup cooked lo mein noodle
1/4 cup soy curls, reconstituted
1 tsp poultry seasoning
3 scallions, chopped
1/8 cup EVOO
1/4 cup rice vinegar
1/2 tsp minced ginger
3 tsp agave
1 clove garlic
Salt and pepper
1/4 tsp wasabi powder
Mix the poultry seasoning with the soy curls. Heat a little sesame oil in a skillet and stir fry the curls. Set aside.
Combine the cabbage, scallion, carrot, noodles.
Mix the dressing- combine the EVOO and vinegar, add the wasabi, ginger, garlic. Salt and pepper then add the agave. Shake well and pour over the cabbage and noodles mixture. Add the curls.
Enjoy. Feeds 4.

2 cups buckwheat noodle (make your own or purchase)
2 tsp sesame oil
5 tbsp rice vinegar
1/2 tsp minced ginger
1/4 cup minced roasted red pepper
1/4 cup baby spinach
1/2 cup shredded cabbage
6 tbsp minced chives
1 tsp tamari
2 tbsp mirin
1 tsp agave syrup
1 cup chopped soy chicken
4 tbsp chopped peanuts
Combine all ingredients- serve hot or cold.
Serves 4, generously.
