this is my favorite soup bowl right now! a thrift store find!!
for the group for the LOVE of COLOR week
1 1/4 pound lean ground turkey
1 can chili beans
1 can kidney beans, drained and rinsed
1 can corn
1 can Rotel or similar product
1 can diced tomatoes
1 large yellow onion
1 packet taco seasoning
1 packet ranch dressing mix
2-3 cups chicken broth, depending on how thick you want the soup (more like
chili)
Brown the onion and turkey meat in a nonstick pan sprayed with cooking spray.
When meat is browned, add the taco seasoning and ranch seasoning. Cook for a few
more minutes. In a large stock pot, combine the beans, corn, tomatoes, and
broth. Add the turkey mixture. Cook on low for 45 minutes, stirring
occasionally.
Top with fat free cheese or fat free sour cream. Delish!
I don't know how many cups this makes, probably around 10. It's Core and about
2-3 points per cup.

Nettle Soup.
Only the very new fresh tender leaves of stinging nettles are suitable for cooking with, so nettle season is really over by the middle of May. Whole plants can be used of the first small shoots from the ground in March/April, otherwise use only the top two or three leaves. If you use older leaves they are furry in texture and also a bit gritty. Remove any course stems.
There are many recipes for nettle soup, some of which contain nutmeg which I'll try sometime as that sounds yummy! This one is a plain soup and is very satisfying:
- Wash and drain the nettles (half a carrier bag full makes enough for 2-3 people)
- Steam the nettles for 3-4 mins in a covered pan in just the water that clings to them from washing
- add a generous knob of butter, salt and pepper, and mash the nettles until fluffy
- In a seperate pan make a roux, by melting a knob of butter and stirring in a tablespoon or so of plain flour
- Cook for a 30 seconds or so on a gentle heat while stirring to take the 'raw' flavour off the flour
- Then stir in some milk, pouring gently and stirring all the time. If you add too much milk in one go it will go lumpy - this is an art, but easy to achieve with practise.
- Keep adding milk and stirring until its the sort of consistency you want your soup to be,
- Then stir in the nettle mash and some salt and pepper and gently heat for a further few minutes, still stirring, until just brought to the boil.
Then eat!
I put garlic and herb croutons on it from the co-op and it was yummy :-p

For 121 Pictures in 2021 #72 "Pop art style", this is meant to evoke Andy Warhol's 1961-62 paintings of 32 cans of Cambell's Soup. He painted each of the 32 varieties available back then on its own 16x20 inch canvas. The label has changed a bit over the years, and the old cans did not have the pull tab to open like this one does. But this is as close as we can come now. I think the tomato is the most well known - in fact until I started looking into it, I thought that was the only one he did. This version is a photo of the can solarized down to 16 colors, then adjusted the contrast a bit.
