Oh yum. I'm so happy to have another batch of homemade tomato paste for winter cooking. I use it in soups and stews, but it's also the most rich, delicious pizza base sauce, hence the name (so, so, so much better than commercial brands). There is never enough to last the year, but it takes 20 lbs of toms to process down into this small batch and at this point, that's the max amount of toms I'm willing to sacrifice for paste. Salsa and pasta sauce take priority. (I really wanted to do ketchup too this year, but didn't have enough toms).
Last time I made this, with the exact same ingredients, the sauce came out a completely different color.
Chicken Stew with Rosemary Dumplings
From Slow Cooking Magazine Vol. XVIII, No 1. 2008
1/2 c flour
1 tsp salt
1/2 tsp pepper
1 whole chicken (about 3 lb) OR 3 boneless skinless chicken breasts, cut into pieces.
4 large carrots, peeled and sliced 1in thick (I used precut carrot sticks)
2 stalks celery, sliced 1/2 in thick
1 onion thinly sliced
1 tsp dried rosemary
2 cups (one can) chicken broth
Dumplings:
1 c flour
2 tsp baking powder
1/2 tsp dried rosemary
1/2 tsp salt
1/2 c milk
1 egg
1. Chicken: Combine flour, salt and pepper in a bowl or food storage bag. In batches, add chicken pieces to flour micture and toss to coat. Transfer to a plate. heat oil in a large non stick skillet, over medium high heat. Add chicken pieces and cook 8 to 10 minutes or until brown on all sides. set aside.
2. Add the carrots, celery onion and rodemary to 5-6qt slow cooker. Place chicken pieces over vegetables. Pour 1/2 cup broth into the skillet and cook over medium high heat, scraping up brown bits from bottom of pan. Pour pan juices into slow cooker along with remaining stock or broth.
3. Cover and cook on High 4 to 6 hour or low 8 to 10 hours, until vegetables are tender and stew is bubbling.
4. Dumplings: Whisk flour, baking powder, dried rosemary and salt in a bowl. combine milk and egg in a measuring cup, mix well then add to flour mixture. Stir with a fork to make a lumpy dough (do not overmix- lumps are fine). Drop dumpling mixture over chicken pieces. Cover and cook on high for 25 to 30 minutes or until tester inserted into center of dumpling comes out clean.

Slow cooked the sauce all day.. I'm frying the meatballs there in the background and popping them into the sauce to go a few more hours.
We had a good, but very yellow dinner tonight, made in the slow cooker. The main ingredients were corn, potatoes chicken, skim milk, and various Indian/curry spices. I intended to add some jalapenos but forgot. We should have garnished it with something red or green!
You can call it cajeta or dulce de leche or arequipe. To me, this is simply caramel heaven in a jar.
Cajeta made entirely from scratch by reducing organic goat milk, sugar, cinnamon, salt, baking soda from 2L to 600mL. I had a head start using slow cooker to handle much of the reduction (hands off) before finishing off the last hour of cooking on the stove to achieve thick caramel perfection.

Lovley for a cold winters evening
1 small aubergine (egg plant)
3 tablespoons of olive oil
2 sliced red onions
2 cloves garlic crushed
2lb of chunck steak
1 teaspoon ground coriander
1/2 teaspoon allspice
1/2 teaspoon paprika
6 ripe tomatoes,chopped
1 cup of red wine
3 cups of beef stock
2 tablespoons tomato paste
8oz of new potatos halved
8oz of halved mushrooms
2 sticks of celery ,sliced
3 chopped, carrots
2 bay leaves
1/4 cup of fresh parsley,chopped
8hrs in a slow cooker on low

1.5lbs of Pork Tenderloin
3 strips of thick cut bacon cut into 1” pieces
Salt
Pepper
1 tbs dried oregano
1/2 tbs cumin
1 tbs flour
1 onion rough chopped
1 bay leaf
3 carrots cut into 1” pieces
About 3 c of small fingerling potatoes
1 c crimini mushrooms
1 head of garlic, peeled and lightly smashed
3 roma tomatoes cut in 1” pieces
1 jalapeño pepper minced
2 limes juiced
1 c chicken broth
1/2 cup of dry white wine
Sauce
1 tbs butter
Fresh parsley and thyme
1 lime if needed
Season tenderloin with salt and pepper and herbs (except bay leaf). Sprinkle with a bit of flour and set aside.
In a heavy pan, cook bacon until crisp. Move bacon to a spare plate and cover and store for garnish.
In same pan, brown all sides of the tenderloin. Move meat back to plate. Saute onions in same pan.
If your pan is the insert from your slow cooker, you can place all the remaining ingredients in the pot and put the meat on top. Otherwise, deglaze pan with wine and pour into base of slow cooker. Place remaining ingredients in cooker and put the meat on top.
Set the cooker for low and allow to cook for 9 hours.
Move meat to broiler safe pan, sprinkle bacon around it and place under broiler for about 5 minutes to get a nice crust and warm the bacon.
At the same time, move veggies to serving bowl, and move all remaining liquid into a sauce pan. Add butter and cook until reduced by about half. Taste and add more lime juice if desired. Season as needed with salt and pepper. No need to strain the sauce.
Cut meat across the grain, as much as possible, plate and drizzle with sauce and serve alongside veggies. Garnish with fresh herbs rough chopped.

Elena and her friend Candice came to visit for two days before they go on a cruise in the Caribbean. For dinner I made a pork roast in the slow-cooker that came out well with the thermometer. And since Candice is a vegetarian, I had a good reason to use my steam cooker to steam lots of good vegetables.
This was the first time I ever used a slow cooker. When I realized that the meat I bought (chuck tender steak) would be tough if I just stir fried it, I had to figure out another way, and man it so payed off. The slow cooker made this meat so tender! I seasoned the beef with garlic, garlic powder, onions, onion powder, soy sauce, fish sauce, sugar, sesame oil, salt and pepper. Once the meat got tender, I added the baby corn, mushrooms and broccoli, and let those cook for about another 45 mins. (the beef was on for about 3 hrs prior) and lastly, served over a bed of rice. SOOO GOOOD!
This is stewing meat from truely freerange cows. It's from this big cattle, grazing in some of our national parcs in the Netherlands. Even though it was exceptionally lean meat it wasn't tough or dry. I was really surpised.

Ik was zeer tevreden. Dit waren de zogenaamde wildernisvlees stooflappen. Ik sneed ze in stukken voor een Sichuanees stoofpotje en hield mijn hart vast want het leek me wel heel erg mager. Maar dat bleek geen enkel probleem, het vlees was na 6 uur in de slowcooker zacht en mals. Beter dan de magere runderlappen van appie. En de hachee die ik laatst maakte van hun "hacheevlees" was ook al helemaal prima. Echt prima kwaliteit vlees! Bestellen en vooral het ophalen is een beetje "raar", maar dan heb je ook wat. :)

I scaled out all the ingredients in easy to carry containers before I left home this morning. The cooking vessel (slow cooker) is already lined with foil and greased.
It's all about being prepared!
