MIss Flighty mixes it up with twist on the classic collins. The collins is made with 2 oz of the distilled spirit of your choice, fresh lemon, simple syrup, and served with ice in a tall glass topped with seltzer. The recipe uses the delicate rich orange vanilla flavor of Tuaca and fresh blood orange and zesty tangelos.
* 1 eggwhite
* 2 oz Pisco
* 1 oz Lemon Juice
* 1/2 oz Simple Syrup
Emulsify the eggwhite, add the rest of the ingredients, shake, strain and granish with Angostura Bitters
Vanilla sponge cake with rosemary simple syrup between the layers (so good!) and just a simple whipped cream topping and fresh rosemary. This cake was so light when you picked it up--fantastic!

1 or 1and a half ounces of Canton ginger liquor; 1 ounce of wasabi vodka; 1 shot of simple syrup and 1 splash of sparkling sake.
I was given this glass boot as a gift from Erin's friend Makenzie. Makenzie said it was the Perfect gift for me when she saw it in the store. That's scarey that she knows me that well, although I think she was thinking I would put flowers in it. I think not! This has quickly become the Bootini glass. We had drinks tonight at Vessel in Downtown Seattle. They have a rum punch drink where they bring you the ingredients and you make it yourself - so yummy!
Pistasha is, or was, a pistachio liqueur that featured heavily in both The Cake Bible and The Pie and Pastry Bible by Rose Levy Beranbaum. The bad news is that the company that makes it stopped making it 20 years ago. The good news is that it's a doddle to make your own. (Granted, you do need 6-8 weeks to make it, but you don't really need to do much to it in those 6-8 weeks.)

2 oz white rum
2 oz fresh lemon juice
1 oz simple syrup (more or less to taste)
3 - 4 oz sparkling water or club soda
Combine ⅓C water, ¼C sugar, 12 pineapple sage leaves. Bring to boil. Simmer 5mins. Cool & strain.
½ lime
6 pineapple sage leaves
2 oz rum
tonic water
ice
Muddle quarter lime w/ 3-4 pineapple sage leaves. Add ice. Squeeze quarter lime over ice. Add 1½ oz simple syrup. Add rum. Stir. Top w/ tonic water.
