the first roast using the mini counter top oven.

i'll replace the freestanding cooker another day too much hassle at the moment. the hob still works fine and is safe - i've had it checked by a qualified electrical engineer

plenty of room for improvement but at least the chicken is moist. i used far too much oil so the vegetables didn't crisp. i cut the potatoes and parsnips so small that they soaked up the oil. never mind it's all edible and roast is at last now on the menu!

Braised Slow Roasted in Wine . Cooking & Photo by Son Jeff

on the hottest day, i decided to roast in the oven. why?

 

- potatoes are with salt, pepper, thyme, goose fat instead of olive oil mmmm

 

- peppers are with salt and paprika

 

- chicken was marinated in:

1tbsp mysterious jar of hoisin-like sauce i had in fridge

2 tbsp soy sauce

juice 1/2 lemon

several small minced garlic cloves

1 large tsp minced ginger

1/2 c water

1 tsp sambal olek but should have doubled or tripled that

 

everything roasted for about 50 mins at 400 degrees F.

roasted for 6 hours in a low oven.

 

Continuing and welcome tomato glut from the polytunnel.

 

these are going to be processed into pasta sauce for freezing.

 

olives, garlic, roast onions are added with some black pepper and olive oil and it is then blitzed in batches and frozen away in chinese containers. So simple but so delicious especially in the dark depths of winter!

Fire roasted Corn, Indian Style

An ongoing series titled "Roast Beef Face".

I have been trying to eat right… Key word: “trying”… I was one of those lucky people that could eat anything under the sun and never gain weight… but, the older I got and the fact that I stopped smoking… I gained over 25bls…. But, I swore to myself that I wouldn’t think about my weight gain and only concentrate on quitting smoking for one year… Well, this Feb was my 1 year anniversary of my no smoking… and now I have to concentrate on my weight… hence the roasted vegetables… I’ll tell you this much, these roasted vegetables are no hamburgers… and yes, I am considering on smoking again… just kidding :o)

Leftovers dinner in the making - I just threw together a bunch of veggies (diced potatoes with the skin left on, broccoli florets, carrots sticks, snap peas, petit pois, sweetcorn, cherry tomatoes), some sunflower seeds, a little olive oil, salt and rosemary from my balcony. Baked for 30-40 mins. Yummy!

Tonights dinner recipe ~ January 6, 2008

 

~Balsamic Roasted Asparagus~

 

1 pound asparagus

1 tablespoon olive oil

1 tablespoon balsamic vinegar

1/2 teaspoon kosher salt

1 tablespoon garlic & herb seasoning

1/4 teaspoon freshly ground black pepper

 

Preheat oven to 375

 

Prepare asparagus by snapping off the tough ends. Set asaparagus in a baking dish. Drizzle with olive oil and vinegar. Add salt, garlic & herb seasoning, and pepper, tossing well to coat. Bake 10-15 minutes, turning once.

milk, onions and cloves brought to the boil then heat turned down to a low simmer for the milk to become flavoursome

finally poured the flavoured milk and ingredients through a sieve into a large bowl

mixed into the sieved milk broken pieces of bread until happy with the consistency

bread sauce spooned into a jug

the remainder in boxes for the freezer to be eaten as and when

 

gravy made from water mixed with the roasted vegetable trivet, and leftovers in the roasting pan of chicken juices and oil, the onion from the bread sauce and two chicken oxo cubes, all heated, blended, vigorously stirred through a sieve for a smooth gravy and finally poured into a jug

main vegetables have been tossed in extra virgin olive oil

throughout the cooking the lamb rests on top of a trivet of vegetables, each vegetable is cut very small. these vegetable pieces soak up any meat juices. they were added to the stock with oxo and blended using the handblender

with thyme, basil, couple of sundried tomatoes

 

4 tablespoons olive oil

~2 pounds tomatoes, halved

1 onion, sliced

4 garlic cloves, halved

1 teaspoon sugar

4 cups vegetable broth

3 sun-dried tomatoes, or 2 sun-dried tomatoes and 1 tablespoon BBQ sauce

Salt, ground balck pepper

Basil leaves, thyme

 

Preheat oven to 425F/220C.

Put all vegetablesan thyme, except sun-dried -tomatoes in a roasting pan. Add salt, pepper, olive oil, and mix with your hands throughly.

Roast vegetables for 25-30 minutes, turning once. Add basil leaves in the end of the roasting.

Bring broth to a boil in a large pot. Add roasted vegetables , discarding thyme sprigs before.

 

Add sun-dried tomatoes and cook soup for 5 minutes. Cool slightly and blend soup in a blender, then pour soup back to the pot and bring to boil again..

It is a roast beef bowl of a nearby cafe. There is rice under the egg. It was delicious.

It was a happy Sunday. Actually it was less than a thousand yen (about ten dollars).

The only change I would make to the tomato soup was to also roast garlic instead of just mincing it in the soup. Also the roasted tomatoes would do well with some balsamic vinegar. Perfection.

Sunday Roast at Bell Inn Monkleigh Devon

i had this for dinner tonight and made sure to save some for lunch tomorrow.. simply delicious..

 

roasted broccoli, kalamata olives, walnuts and roasted red peppers with whole wheat penne in a roasted garlic and lemon dressing..

Just-roasted chestnuts and a just-picked chrysanthemum blossom...somewhat fancifully displayed.

Roasted Chestnuts

 

PROCEDURE

1) Wash chestnuts, discarding any damaged or cracked ones.

 

2) Submerge in a bowl of clean water for 30 minutes to soften the outer shell.

 

3) Remove from the water. For each, cut the outer hard shell and just into the thin inner skin, scoring a long 'X' into the top (rounded) side of each chestnut.

 

4) Again, soak the chestnuts, now scored, in a bowl of clean water but for 2 hours, or better yet, overnight.

 

5) Arrange chestnuts on a baking sheet, with the cut sides facing up.

 

6) Roast, uncovered, in an oven at 400 °F (204 °C) for 20-40 minutes. After 20 minutes, begin to check often for doneness (when the shell has become slightly pliable). Do not burn!

 

7) Remove from oven; cover with a slightly damp tea towel; let cool for 10 minutes, making the shell even more pliable.

 

8) Peel when still slightly warm. Press on both ends of the shell until the chestnut pops out of both the outer shell and inner husk. Use a knife if necessary. (See: here.)

 

9) Enjoy immediately...or store in the refrigerator for up to 3 days or in the freezer for up to 3 months. (Uncooked chestnuts will, of course, keep for longer.)
