After descending from Wiggington to the Grand Union Canal, I followed the towpath towards Tring Station. 'Cow Roast' was originally 'Cow Rest' as the cattle were rested here when the drovers took them into market in London.

Guess its only a matter of time before some militant vegans become offended by the name!

It's Coffee time and my favourite coffee stop off. This was a day that had Santa visiting the town to switch on the lights & Roasted was open ready to refresh visitors & locals like. The roasted girls were lighting up the town with their smiles & waves.

They sure roast a lot here. Like the photo yesterday, this one is about the colours again. This time, green.

 

On my return from Sokcho, I had a couple of hours to spend before my train to Busan left and discovered a nice area right next to the main station.

Who doesn't want hot roasted chestnuts to keep your warm on a cold winters evening...

roast gammon alongside roast vegetables potato, parsnip, tomato and carrot with a serving of brussel sprouts, chilli jam and a small jug of gravy

 

roast gammon sliced and boxed for the freezer to eat as and when

brussel sprouts sliced and cooked for a short time in boiling water

gravy made from the vegetable trivet which was cooking under the roast gammon, scrapings from the roasting tray, oxo and water, all blended using the hand blender

no added salt to the gravy or the overall meal. the gammon was smoked and the oxo cubes have salt in the ingredients

Today’s MM theme is forks, with particular emphasis on tines. This is my alternate choice.

Seared on 450º carbon steel, then oven roasted at 350º conv/fan to 127º and rested to a final internal temperature of 137º. Served with a Cabernet Sauvignon Bordelaise sauce

Recette:

Cut the Brussels sprouts in half lengthwise leaving the base intact. Pull off any wilted leaves. Preheat oven on Convection/Roast to 450º with your sheet pan in the oven to heat. In a bowl, season with sea salt and freshly ground black pepper. Drizzle extra virgin olive oil, balsamic vinegar and a small amount of honey. Toss well to coat.

Once the oven has heated, remove the sheet pan and place alll the sprouts on the pan cut side facing down. Reduce oven temp to 400º and place the pan in oven. Roast for 15-20 minutes, turning the sprouts over about 1/2 way through cooking. Finished when there is nice even caramelization of the sprouts. Serve immediately while still hot.

Street vendor roasting chestnuts somewhere

Another coffee shop, this one is Artisan Roast on Gibson Street in Glasgow. I've been meaning to visit as I've heard nothing but good things about the place, great coffee and atmosphere. I love drawing specialist coffee shops as there are so many different objects almost like an alchemists study with all the beakers measuring tools and filters. This one combines a bright and airy front half to a more mellow hanging out area in the back area.
