Dessert Choice Often Determines Success of Meal

The surest way to finish a meal successfully is to have a knockout dessert. It’s the case of a last impression leaving the favorable smile, so it isn’t such bad reasoning to plan the whole meal backwards, from the dessert to the soup.

Rhubarb is splendid for a tart touch and a pit often hits the spot.

Rhubarb Meringue Pie

1 C. diced rhubarb

3/4 C. sugar

1 C. milk

2 egg yolks

1/4 C. sugar

1 tbsp. flour.

1/4 tsp. salt

1 tsp. lemon juice

1/4 tsp. vanilla

2 egg whites

4 tbsp. sugar

Stew the rhubarb and 3/4 cup sugar until soft. Cool and add the milk and beaten egg-yolks with 1/4 cup cup sugar, flour, vanilla and salt. Add lemon juice. Pour into a 9-inch pie plate lined with pastry and bake as directed for pies with custard fillings. The pie shell may be baked for 10 minutes before adding the filing, at a temperature of 450 degrees. With the filling in, bake 35 to 50 minutes at 350 degrees, Cover with a meringue made of the 2 egg whites and 4 tbsp. sugar, and bake in a slow oven (300 degrees) until the meringue is a delicate brown. If the meringue is sprinkled with sugar, the browning will make a crisp top.

 

Cracker Crust

We refer to the cracker method of making pie, a method so failure-proof that even a child can manage to make a pie that will be flaky and tasty. And by using flavored crackers, even the crust can be given a flavor all its own, vanilla, ginger, chocolate, lemon, are only some of the delectable pie flavors.

It’s easy to crumble the crackers. Just put the biscuits in a paper bag, twist the top tightly and apply the rolling pin. The second step is to mix the crumbs with a little softened butter and sugar, then press the mixture firmly against the sides and bottom of a buttered pie plate.

 

Pineapple Filling

Here is probably the simplest pie in captivity, but it’s simply scrumptious. It’s made of ingredients that you are likely to have on the shelf and it bakes in 15 minutes. Crumble a dozen graham crackers and mix with third cup softened butter and one tablespoon sugar and press in even layer against sides and bottom of buttered pit plate. Cut small quarter pound of marshmallows, combine with two cups canned crushed pineapple and one beaten egg and pour in cracker lined plate. Bake in moderate oven for 15 minutes.

 

you have the exact amount. For 1/2 cup shortening fill 1/2 full of water and do the same as for the 1/3 cup.

I have a small salon and don’t have the space for retail. Any suggestions?

 

It’s more important to consider what you will do with your limited space. Often a metre wide will be enough! The important thing is to think about the environment you are creating- it is far more beneficial to have a small one metre retail area that works for you than a large area that doesn’t shift stock.

 

A custom built unit is obviously best. Olymp do some stunning retail units that can be made to measure, or if you’re on a budget and want to use an existing unit then think about how you can make a feature of the area through lighting. LED lights are inexpensive now and make a big difference to retail units- they really give the space its own identity.
