It's that time of year again,anyone for pumpkin pie ? An assortment of pumpkins and squash ready for Halloween.

Had to make 56 pies for the store for the holiday,
most of them are gifts for costumers and some for the workers, no I get no thank you from anyone:-)
I made 4 for our dinner today, besides these 2 also Pecan and Coconut custard.

Pumpkin pie made by my daughter! She was attending her boyfriend's family dinner and was responsible to bring a pumpkin pie. This is her creation, and it was a hit.

Making a pumpkin pie... which pumpkin should I use?
OK. So I slightly lied. I am making a pumpkin pie, but these aren't my pumpkins and so won't be used in my pie. The shot was taken at Wisley during the Tastes of Autumn festival but I didn't get round to processing them before Hallowe'en. So they're now being re-purposed to celebrate Thanksgiving in the US. (Really hoping that the association between pumpkin pie and Thanksgiving is real and not some cliche that I've latched on to.)
[After running a cubs session about Thanksgiving on Tuesday, I'm full of wikipedia facts about the celebration, but I'll leave you to wikipedia it yourself, if you're interested.]
Anyway: we have an affinity with America for some reason, so this year, I'm preparing a scaled back Thanksgiving dinner, hence making the pumpkin pie. Mine will be made with (slightly out of date) tinned pumpkin puree and ready made pastry. #streamlinedpiemaking
Ironically, my christmas cake is currently cooking today, too. All sorts of festive cuisine going on. No idea what's got into me.

Exactly a year ago, I took this photo, and here I am, waiting for another dang pie to finish baking in the middle of the night... before Thanksgiving.
It's nice to know that some things never change.... except for everything else.
Different house.
More independence.

home on a winding tropical river.
It's 4:AM right now so I'm not going
to the temple even tho everything
is packed & ready to go, except me.

Ingredients
4 cups Cooled Cooked Pumpkin
1 cup Sugar
1 cup Packed Brown Sugar
2 12 oz. cans Evaporated Milk
4 Eggs
1 TBSP Vanilla Extract
1 TSP Ground Cloves
1 TSP Nutmeg
2 TSP Allspice
2TBSP Ground Cinnamon
Mix all ingredients thoroughly in a large mixing bowl on high speed for 30 seconds. (Should make enough pie filling for three 9" pie crusts.) Fill unbaked 9" pie crust with filling up to edge of pan. Place on a cookie sheet and bake @ 425 degrees for 15 minutes, then reduce heat and bake for another 45-60 minutes or until it does not stick to an inserted knife.
