Honestly, this ended up being overkill, but what I've got here are two disposable pie tins with holes punched in the bottom for drainage, sitting on a perforated half-sheet (which I love for broiling bacon, fish, and other fatty meats) which is in turn on top of a regular commercial half-sheet. Every surface is lightly coated in nonstick cooking spray.
