A slight adaptation From King Arthur Flour, this uses the "toss off" from your sourdough starter to add a delicious tang and artisan feel to the dough, helped by semolina and a rich, fruity olive oil. Whole wheat flour, garlic and oregano round out the ingredients for a flavour packed pizza night base!

Although Stormtrooper Bruce had promised to never enter another one of Palpatine's lame brained contests, the rumors of a vacation home on an off world resort planet as the grand prize cause STB to go back on his promise.
Everyone says his pizza is the best tasting in the galaxy, so if he can just perfect his mad dough tossing skills to wow the judges, this competion just might be his for the taking. This secret room hidden behind his quarters has never come in so handy.
It seems I'm always in search of the perfect pizza crust. I find and try variations, I make up variations, I declare my latest versions the best I've ever made, then I keep on trying new things. I'll likely try new doughs forever, all with similar declarations...
But this dough, another as I work my way through Peter Reinhart's Crust and Crumb... It's Pizza Dough (number 2). I modified his poolish-style sponge to use firm starter that had been fermenting in my fridge for 2 days. I used the same proportion (8 oz.), and had to add a bit of extra water. I also used my viili yogurt instead of buttermilk.
These "hybrid" doughs that have the sourdough starter and instant yeast have an amazing mix of both qualities. This crust was soft and chewy, probably the most "pizzeria-style" dough I've ever made. I baked it on a stone at 550, even though I had to heat up the kitchen to do so. I couldn't bring myself to stand around outside tinkering with the grill (and it was also looking like rain) - and I knew that our temps (outside) were going to drop 30+ degrees anyway and that the house wouldn't feel hot for long.
(I used the residual oven heat to finish up baking the season on the lid of my new-old cast iron Dutch oven.)

Besides beer, the dough is made with all-purpose, white whole wheat and semolina flours. It's topped with fresh tomato, basil, caramelized onions, garlic and gorgonzola cheese.

we used pepperoni, homemade tomato sauce, cheese and bacon. too easy. SO YUM!

Meet Frank Morale. Frank and his son, Anthony, run Anthony John’s Pizzeria in North Branford, Connecticut. Frank started making pizza when at the ripe age of 13 in Brooklyn, New York and has made every single pizza pie at Anthony John’s since opening in May of 2010. No joke; this is some of the best pizza in Connecticut. Hands down. All you pizza connoisseurs are invited to take a trip to 5 Foxon Road in North Branford and try it for yourself.
On May 5th, Anthony John’s Pizzeria competed alongside five local flavors at the North Branford Senior Center’s third annual Pizza Wars competition. Drawing in more than 400 blind taste testers, Anthony John’s came in with a close second, losing first place to only 8 votes. Nevertheless, pretty damn good for a first year entrant and first year in business.
