sometimes you just have to take up a challenge and try new flavors and combinations.

no matter how weird and untraditional they may seem - a genuine risk pays off once in a while.

 

let's consider pizza. an italian staple once again back in my pantry when happened I was needing something comforting and home-y tasting.

if I mention to any lad out there just the mere word "pizza", he'll immediately picture in his mind the image of a pizza margherita - a floury, soft border of white and good smelling dough surrounding the red velvety tomato sauce, which stands as a rich bed for a melting hot, oozing mozzarella decadence. plus a generous spinkle of oregano and a couple of freshly picked, bight green basil leaves.

 

well, forget that.

it's mainstream.

I swear the thin wholewheat crust, if allowed to rise properly, results as soft and tasty as the real deal. and acts like a perfect base for a generous sprinkle of ricotta flakes, garlicky sautèed spinach, fresh tomato slices, some pecorino romano and, finally, a dust of oregano to finish it off.

 

would you ever believe that all this goodness can be eaten in one sitting and is actually completely healthy and freakin' good for you?

October's Daring Bakers challenge was to make pizza dough!

 

This is a picture of my pizza, which I topped with mushrooms and olives. Mmm! My favorite!

Tonight we baked a Cheesesteak Stromboli for dinner. I sautéed up White button mushrooms, a White onion and Green bell pepper in our Bäkken nonstick pan.

Then I cooked up the Shaved beef in the same pan. My wife and I stretched out the Trader Joe's Garlic & Herb pizza dough on our Nordic Ware baking pan (with some olive oil on the pan, under the dough ).

I spread the veggies across the middle of the rectangular dough, then placed a layer of the Shaved beef on top. Next I sprinkled Italian blend grated cheese and finally placed Sliced Havarti cheese on top. Then we brought the dough up from all four sides and crimped it close.

We baked it in the oven at 425℉ for about 17 minutes. We each had two portions each with one portion leftover.

Recipe to follow:

 

1 package yeast

5 cups flour

2 tsp sea salt + 1 tsp

Bloom yeast then combine yeast and 2 ½ cups flour with 2 cups water. Let rest 15 minutes.

 

Add the rest of the flour and the salt- combine well. Turn out and kneed 10 minutes. Dough will be wet and tacky. Transfer into an oiled bowl and place in a warm place in the room, covered – about 4 hours, until doubled in size.

 

Oil a cookie sheet and press the dough evenly into the sheet- let it rise again 1 hour.

Score the sheet into 6 strips.

 

Preheat the oven to 500 degrees. Place some sliced red onion and shredded Vegan Gourmet Mozzarella or your favorite soy cheeze over the dough. Place 1/3 seitan mushroom sausage in each dough middle and roll up. (Previous post) Drizzle with some vegetable margarine and cumin, salt and pepper and bake 15 to 30 minutes until golden brown.

 

Reserve half the dough for another pizza crust or make more stuffed pizzas - 1/2 of this dough recipe will feed 6 plus if very hungry!

 

Today's action shot was another quickie, but that doesn't mean it's not a goodie! I've been wanting to get this one for a while since my brother-in-law works at Mellow Mushroom. I'd been saying we'd go up there on a Saturday so I could shoot and luckily I had my camera with me when we decided to eat there for lunch. I motioned to him to ask if I could get a shot while he was throwing the dough and he nodded yes. So, after eating I got my camera out and fired off a few. This was pretty easy and straight-forward. I used my speedlite with the kicker card and didn't have any lighting problems. He had to show off by clapping while it was in the air and this was the only good shot I got of the clap and his face. (The other shots had his hands too high in front of his face). I also really enjoy the motion blur in the dough itself. It is one of my favorite things... kneading dough. It is beyond relaxing and you can just feel the difference of the dough after you put in the work. Tomorrow we get to taste it.

Pizza guy making our pizza dough . . . he loved having his picture taken. Friday night on our stopover in Concord, NH enroute to Salem, Mass.

we made home made pizza tonight :)

It's interesting the things the pandemic brought us. Homemade Pizza is one of them for me - or at least really good Homemade Pizza is. When the kids were little I would buy pre-made pizza dough, or Pita's and we'd do family pizza night which was good at the time. Later we took to ordering from local places but at some point the price for 1 extra large Pizza delivered rose to over $50 plus tip - crazy!!! It was early 2021 when I found this dough recipe specifically for the kitchenaid mixer, and I've been using it ever since. I love that I don't have to start it early in the day, there's no kneading, one rise for about an hour, and 8 minutes in the mixer. I can start at 4:30 and eat at 6:00 😀 Bread/dough to me is kind of like a miracle - 4 simple ingredients and you can make food!

I'm back for a second year of Picture of the Day (or Project 365 or Year in Photos or whatever else you might call it) after a little bit of time off. Only 11 days off actually...it seems like longer as I really did miss forcing myself to take a picture everyday!

 

Today's picture? Homemade foccacia made with garlic, rosemary, parsley and Parmesan cheese. Mmm. Want to make it yourself? Use pizza dough and add whatever you want to the dough and/or the top.

Funktified Food #14 - Monster Cookie Style! Cocoa-infused pizza dough, dark and milk chocolate, peanut butter m&ms, marshmallow cream, shaved white chocolate, walnuts, crushed cinnamon graham crackers... Rawr!

I sure did...and when it came out of the oven, I had to take a shot, it looked too good not to.

 

Pesto, chicken, red onion, mushroom never tasted so good. I cooked up the chicken yesterday and sauteed up some onions. This is the product of that.

 

The recipe for the pizza dough is here. The only thing I do differently is I make the dough a day ahead, stick each ball in a separate plastic bag. The next day, brush a small glass bowl with olive oil, stick one dough ball in the bowl and roll it around to coat. Cover the bowl with plastic wrap and let rise for about 2-3 hours prior. The dough turns out much better.

 

That dough is so simple to make. If you have never played with yeast but always wanted to try...this is the best place to start!
