This was the first background fro a photo shoot I made and it did look nice but then I felt it made the outfit look too circus and the red curtains ate away all the colour from the jacket.

Well, I'm not so sure that growth really is optional, but I do know there have been times when I didn't feel particularly delighted that it was time to grow again. Thankfully, this is not one of those times. :-)

Found this wonderful souvenir booklet detailing the glories of "The Beautiful Caverns of Luray, Virginia" with a 1957 postmark. This 5x7 treasure contains all color photographs, maps and features several exquisitely attired "families" enjoying the natural splendors of the caverns.
This is both a time capsule of fashion and typefaces, as well as a snapshot of how we viewed natural wonders in the mid-century. I don't have a current booklet to compare, but you can learn more about the caverns at the official website: luraycaverns.com/discover/caverns

Portions of the Caverns are open to the public and have long been electrically lighted. The registered number of visitors in 1906 was 18,000, but now, about 500,000 guests visit each year. In 1974, the National Park Service and the Department of the Interior designated Luray Caverns as a National Natural Landmark.[3] Luray Caverns is home to a commercial hedge maze. The maze contains 1500 Dark American Arborvitae which create a half-mile path for visitors.[4]

Jessica Seinfeld. Loved her hubby on TV, love her kid-oriented cookbook even more! My (Caroline) mother-in-law gave me a copy of her book Deceptively Delicious for Christmas one year.
This was pre-baby and so I thought "oh, that looks nice" and then added it to my pretty cookbook collection thinking I surely wouldn't need it for years until kids came along. Well, fast forward about one year and I starting reading that book cover to cover. I now have a 16 month old, who went from being my champion eater, to being my "hit or miss" eater who hates all things green.
The premise of the book is all about finding ways to add veggies into foods your family will eat and basically sneaking them in "under the radar" so that they cant really even taste them. Sign me up!! The meals are fairly simple, and use lots of puree's- which I have come to love. Yes, its one more step in the process, but it is SO easy to make lots and freeze several small portions to use down the road when you don't have the time to blend yourself some goodness on the spot. I have tried several things so far from the book and I would give all of them four stars!
I mentioned in my first Foodie post that I have burned spaghetti. This is true, but I have improved so much since then!! We do eat lots of spaghetti, and since everyone does it differently and has their own slant on a recipe I figured I would just tell you the Deceptive "twist" on the meal. I lightly steamed and then pureed one large squash and one large zucchini and added it right into our "usual" sauce. The texture because more creamy (ie yummy) but other than that my food critics (husband and child... and sometimes dog) didn't even notice the difference! Hurray for adding two more veggies we wouldn't have eaten that day!
The next recipe that I tried was one that I was a little more afraid of at first. Chicken nuggets. I mean, we all love them, but me + skillet + really hot oil = disaster? But no, it turned out great!! I will include that recipe below and will highly recommend you check out her book. Its not just for babies and mamas! Everyone needs more veggies in their diet!
Chicken Nuggets:
Serves-4
Prep Time- 10 Min Total Time- 20 Min
Ingredients: 1 Cup whole wheat, white or panko bread crumbs
1/2 cup flaxseed meal (optional!)
1 Tb. grated Parmesan
1/2 tsp. paprika
1/2 tsp. garlic powder
1/2 tsp. onion powder
1 cup broccoli or spinach or sweet potato puree (I used the sweet potato!!)
1 large egg, lightly beaten
1 pound boneless, skinless chicken breast or tenders (rinsed, dried, and cut into small chunks)
1/2 tsp. salt
Non-stick cooking spray
1 Tb. olive oil
Directions:
-In a bowl, combine the breadcrumbs, flaxseed meal, parm, paprika, garlic, and onion powder on wax paper and mix well with your fingers.
-In a shallow bowl, mix the vegetable puree and egg with a fork and set bowl next to breadcrumb mixture.
-Sprinkle chicken chunks with salt. Dip the chunks into the egg mixture and then toss them in the breadcrumbs until completely coated.
-Coat a large nonstick skillet with cooking spray and set over med-high heat. When the skillet is hot, add the oil. Place nuggets in skillet in a single layer, being creful not to crowd the pan, and cook until crisp and golden on one side, 3 to 4 min. Then turn and cook until the chicken is cooked through, golden brown and crisp all over, 4 to 5 minutes longer. (Cut one piece to check inside is cooked). Serve warm.

With the LOGISYS brand, you can plug in two different lights into one inverter box. I think using this brand exclusively for now is a good idea for me. That way everything is interchangable, and theoretically, if anything breaks i can just plug a new one in and be good to go.
