(87/365) I sprinkled some mustard seeds on damp paper in a ramekin. A week later this is the result. They make a tasty, nutritious addition to salads & so easy to grow on a kitchen windowsill, just don't let them dry out HGGT!

This was taken from very far, through branches and cropped heavily as well. I believe there's two eaglets in the nest as far as my observations through the binoculars revealed. I got a bit amused while watching the parent trying, yes trying, to feed the pictured young one for it seemed the junior wasn't a fan of rabbit or squirrel or whatever furry animal was on the menu. He wasn't eagerly opening his mouth and kept on turning his head away from the nutritious offerings! Maybe he preferred fish, maybe he wasn't hungry. So, even bald eagle parents have to have patience when raising their children!

4 skinless, boneless chicken breasts

Kosher salt and freshly ground black pepper

1 cup all-purpose flour (for dredging)

2 large eggs

1 tablespoon Dijon mustard

2 cups breadcrumbs or matzo meal

About 1/4 cup canola oil

Chopped parsley

Lemon wedges

 

Place chicken breasts between two pieces of plastic wrap and pound chicken breasts to uniform thickness.

Place flour on a plate and mix in salt and pepper.

Beat eggs and Dijon mustard in a shallow dish.

Place bread crumbs on another plate.

Working with 1 chicken breast at a time, dredge in flour, then dip into egg mixture, turning to coat evenly; carefully coat with crumbs.

−Heat about 4 Tbsp. oil in a large skillet over medium-high heat.

Add chicken breasts to skillet and cook until golden brown on both sides, 8-10 minutes per side (flip only once, it keeps the schnitzel moist.)

Transfer chicken breasts to a paper towel-lined plate.

Add more oil to skillet and repeat with remaining chicken breasts.

Transfer chicken breasts to plates and garnish with lemon wedges.

While both are available throughout the year, lemons are in the peak of their season around May, June and August while limes are at their peak from May through October.

 

Lemons are oval in shape and feature a yellow, texturized outer peel. Like other citrus fruits, their inner flesh is encased in eight to ten segments.

 

Health benefits of lemon

 

Lemons are packed with numerous health benefiting nutrients. The fruit is less in calories, carrying just 29 calories per 100 g, the value being one of the lowest for the citrus fruits group.

 

They contain zero saturated fats or cholesterol. Nonetheless are an excellent source of dietary fiber (7.36% of RDA). Lemon is one of the very low glycemic fruits.

Lemons, like oranges, contain a variety of phytochemicals. Hesperetin, naringin, and naringenin are flavonoid glycosides commonly found in citrus fruits. Naringenin is found to have a bioactive effect on human health as antioxidant, free radical scavenger, anti-inflammatory, and immune system modulator. This substance has also been shown to reduce oxidant injury to DNA in the cells in-vitro studies.

 

Additionally, they also compose a minute levels of vitamin A, and other flavonoid antioxidants such as α, and ß-carotenes, ß-cryptoxanthin, zeaxanthin, and lutein. These compounds are known to have antioxidant properties. Vitamin A also required for maintaining healthy mucosa and skin and is also essential for vision. Consumption of natural fruits rich in flavonoids helps the body to protect from lung and oral cavity cancers.

 

Total ORAC value, which measures the antioxidant strength of 100 g of fresh lemon juice is 1225 µmol TE (Trolox equivalents).

 

The fruit is also a good source of B-complex vitamins such as pantothenic acid, pyridoxine, and folates. These essential in the sense that body requires them from external sources to replenish.

 

Further, they carry a healthy amount of minerals like iron, copper, potassium, and calcium. Potassium in an important component of cell and body fluids helps control heart rate and blood pressure.

 

Citrus fruits, as such, have long been valued for their wholesome nutritious and antioxidant properties. It is a scientific fact that citrus fruits, especially lemons and oranges, by their richness in vitamins and minerals, have many proven health benefits. Australian koalas spend most of the day sleeping because their diet of eucalypt leaves is not very nutritious and is difficult to digest. They have mastered the art of sleeping in impossible positions like this one.

I make pizza, from scratch, 3 times a week. My youngest eats very limited array of food. So, everything is made from scratch and with as much fresh, nutritious ingredients as possible. Sometimes I hate having to do a massive batch of dough one day and then 3 other days make pizza from scratch. Then sometimes kneading dough and tossing pizza into the air are the most relaxing things ever. This week has been one of those weeks.

White Rhino at Ol Pejeta in Kenya. I was privileged to be able to see two of the Northern white rhinos before their extinction. Another image in first comment section.

 

On December 20th, 2009, four of the world’s last remaining seven northern white rhinos arrived at Ol Pejeta. Najin, Fatu, Sudan and Suni had been living in Dvur Kralove Zoo in the Czech Republic. All previous breeding attempts in the Zoo had been futile, and the hope was that the climate and rich grasslands of Ol Pejeta, a native habitat for the animals, would provide them with more favourable breeding conditions.

 

To keep the northern white rhinos safe and in good health, Ol Pejeta dedicated 24hr armed security, a 700-acre enclosure, and a nutritious diet supplemented with fresh vegetables. Expectations were raised when Suni was seen mating with Najin in 2012, but as the gestation period of 16 months wore on, it was clear that Najin was not pregnant. With so few northern whites remaining, it was decided that a southern white male would be introduced to Fatu and Najin in the hope of producing offspring that would at least preserve some of the northern white genes. Again, this proved unsuccessful.

 

In October 2014, we were devastated with the loss of Suni, who died of natural causes in his enclosure. His death left Sudan as the only northern white male in the world capable of breeding. In early 2015, checks by vets from the Czech Republic dealt us another blow – neither of the females is capable of natural reproduction, and Sudan’s sperm count was disappointingly low (but not surprising given his age). In July 2015, Dvur Kralove Zoo in the Czech Republic lost Nabire, and in November 2015, San Diego Zoo lost Nola - leaving just three northern white rhino left on the planet.

 

On the 19th of March, 2018, Sudan died. He had been suffering from age-related health issues and from a series of infections. Once his condition worsened significantly and he was unable to stand up and evidently, suffered a great deal, the decision to euthanise him was made by his veterinary team.

Watermelon (Citrullus lanatus) belongs to the Cucurbitaceae family . A scrambling and trailing vine-like plant, it was originally domesticated in Africa. Now it is a highly cultivated fruit worldwide, with more than 1,000 varieties.

These little red squirrels sure look cute, and very colorful too when they're sitting on the cold white snow. Also called the pine squirrel, these frisky small mammals spend the fall season caching food just like gray jays and chickadees. They clip ripe conifer cones from the trees and put them in a few large piles called middens, which may be several feet across and a couple feet deep! They'll extract and eat the seeds inside those cones throughout the winter season, digging right down through deep snow to reach that nutritious bounty.

I decided to try my hand at growing some, as they are unavailable locally in our new city. But they seem to lack enough pollinators (only a very small percentage of the flowers got pollinated and set the fruit), so I will have to get them online.

 

These beans are also ancestors of Pinto Beans, a type that should be very familiar to North Americans. But pintos have had all the flavor bred out of them, Anasazi Beans are much better, having a slightly sweet, nutty flavor. They also take less time to cook and don't have that same gaseous quality.

I have to admit that normally I'd reach for something sweet when wanting a quick snack but for this week's theme I've gone with savoury: creamy Lancashire cheese on German rye bread with sunflower seeds.

If ever there was an example set for how to use and reuse resources it is the forest. Nothing goes to waste.

 

Trees play a huge role in forest recycling. Here on the tree stump, the moist earth worms, beetles, microorganisms, and fungus invade it and begin to loosen up its wood. Moss blankets it and ferns and mushrooms root in it. Maybe a squirrel breaking apart a pine cone for its nutritious seeds perches on top to watch for predators. It loses a seed into the moss and next spring a baby tree will sprout. The seedling pushes up into the sunlight left when the tree fell leaving a hole in the canopy. It’s roots take up the nutrients of the old tree, pushing deep into the softening wood.

 

Irruption of crossbill provided an opportunity for American lifer in #561. they move in a group and stay few minutes on a tree, then move on. bad light but not bed for my record shot.

I was surprised when this almost adult Zebra started drinking from one of the females... More surprised that the female allowed it to happen...

Maybe it is because of the poor rains and the lack of nutritious grazing that is evident at the moment...

Love it or hate it, there's no doubt it's one nutritional powerhouse of a leaf.

For the Through the Lens Week 3 theme of "Looking Through". Not only was this young (I think) Red Wattlebird looking through the detritus of someone's breakfast and scoffing something I would barely call nutritious, but I was looking through the Rotunda towards the beach where many families were enjoying the overcast but still warm weather.

I was saddened to see this detritus and hope that the litterers came back to pick it all up.

Fortunately most of this wide long beach was quite clean as was the water.

I am making pepper soup with diced tomatoes, leeks, and okra. It's a country French thing. I like mine spicy. Delicious and nutritious. Il est merveilleux servi avec des tranches épaisses de pain brun.

Our second bear encounter near the Hidden Falls Fish Hatchery was this adolescent male. Likely not yet a skilled fisher-bear, he was taking advantage of the large amounts of spawned salmon that had returned to the hatchery area and died. While not as nutritious as fresh salmon, it is still a good source of fat and protein and in great abundance.
