Yuba has long been acknowledged as one of the most nutritious foods of the Orient.
When soymilk is gently heated in shallow, open pans at 80-90*C, a cream-yellow, bland-flavored, concentrated protein-lipid surface film (called yuba) gradually forms. The films are successively removed from the soymilk surface using a long skewer, hung to air dry, and marked as fresh or dried sheets, sticks, or chips, or made into a variety of meatlike textured protein products
When you make tofu at home you manage to get one yuba skin. It is delicious.

8 August 2019, Njoben, Central River Region in The Gambia. Farmer, Mariama Surr, 55 years old, stands for a portrait holding mint grown in the garden where she is one of the veretan farmers. She explained how her work here for the past 14 years has generated an important income for her because it allows her to send her children to school and buy the materials they need for their studies. Furthemermore she can now cook them more nutritious meals using all the varieties grown in the garden. The FAO has been helping to expand the Farmer Field School in Njoben (Central River Region -CRR) since 2014, with funding from the EU. The field has been extended from one hectare to five hectares. Today, the various crops grown here: tomatoes, orange fleshed sweet potato, herbs, peppers, cassava, cabbage, okra, rice and many other nutritious foods are grown and consumed by more than 200 women and 14 men, and their families, from the local community. The surplus is sold, and this allows many of the families to improve their livelihoods and send their children to school. Another noteworthy improvement is the comprehensive borehole and water distribution system that has been established, thereby relieving almost 500 women farmers from the hardship of drawing water from the wells.
The community has been trained on gardening and helped agricultural extension workers to introduce more varieties of vegetables and apply climate smart agriculture. Similar support has been expanded to seven other community gardens throughout the country. This component is part of the “Post-crisis response to food and nutritious insecurity in The Gambia” (Project code: GM/FED/38780)
A nutritious porridge is made from locally available products. Women are learning how to make the porridge during a session led by a health extension worker at the Kihen Health Post in Kilte Awlaelo Woreda.
Kihen Health Post implements Health, Nutrition, Hygiene and Sanitation programmes with UNICEF’s support targeted at building the capacity of the health system.

Due to the effect of El Nino driven shortage of rainfall, Tigray Region has been affected by severe shortage of drinking water for both people and livestock. The effect was manifested through declining of groundwater levels, drying of water wells and increased malfunctioning of water supply schemes. It's Meatless Monday again! Here's an easy and nutritious lunch.
Start with a bag of kale slaw. (I don't particularly like kale but I have become "addicted" to this veggie mix.)..Toss it with some seasoned rice vinegar. Be sure it says "seasoned" as it has a bit of sweetness to it, and can be found in the Asian section of your supermarket. If desired, you can add a drizzle of olive oil. Add some chopped apples and sliced scallions. If you like cilantro... add a bit of that too. Serve topped with a scoop of cottage cheese that has been mixed with some pineapple tidbits. Enjoy a toasted bagel or some cheese and crackers on the side and you have a meal!

Policies can promote better nutrition and agriculture. The Indian government recently called for all states to include millet in the school feeding scheme as these are more nutritious than the wheat or rice based meals. However, nutrient rich food needs to be tasty as well for children to eat them.

A single-serving box of raisins is a practical, satisfying, nutritious snack. The dehydration process depletes grapes of some nutrients, leaving them low in vitamin content, but they contain antioxidant flavonoids, pigments that give plants their color, that offer health benefits. Although colorful fruits are often richer in antioxidants because they contain more flavonoids, golden raisins have more of some flavonoids than regular raisins, so choose your raisin type based on your health goals.
Vitamins and Minerals
Golden and regular raisins are nearly identical in terms of most nutrients and daily value. A 1.5-ounce, single-serving box of either provides about 130 calories, 1.7 grams of fiber, 1.5 grams of protein and 25.5 grams of natural sugar. Each gives you less than 5 percent of your recommended daily intake for calcium, iron, magnesium and most B vitamins. Each provides 5 to 10 percent of the potassium and phosphorus you need each day.
Cancer and Heart Disease Prevention
Kaempferol is a flavonoid that may reduce your risk of developing cancer and cardiovascular disease. According to authors of a 2012 "Mini-Reviews in Medicinal Chemistry" review paper, kaempferol acts as an antioxidant, anti-inflammatory and antimicrobial agent, and it may help prevent nerve disorders, diabetes and osteoporosis. Golden raisins have 1.69 milligrams of kaempferol per 100 milligrams of weight, providing 169 times more kaempferol than regular raisins, which contain .001 milligrams of kaempferol per 100 milligrams.
Antihistamine and Anti-Inflammatory Benefits
Golden raisins may benefit people with allergies. Quercetin, a flavonoid in grapes, has antihistamine and anti-inflammatory properties and may help prevent heart disease and cancer, according to the University of Maryland Medical Center. Although red and green raw grapes each have a little over 1 milligram per 100 milligrams of food weight, the drying process causes red grapes to lose quercetin and green grapes to gain it. A 1.5-ounce box of golden raisins has 881.5 milligrams of quercetin, nearly 10 times the amount of quercetin in the same serving size of regular raisins.
Improved Brain Function
Regular raisins are richer in catechins, a powerful antioxidant phytonutrient that may also help you oxidize fat, according to the University of California's Center for Health and Nutrition Research. Catechins in raisins may also improve your cognitive function, according to researchers from a "Journal of Neuroscience" study published in 2012. They gave a grape-derived preparation to mice and concluded that the catechins in it improved the mice's learning and memory capabilities. They suggest that catechins may help people with Alzheimer's disease. Each 100 milligrams of regular seedless raisins contains .42 milligrams of catechins, while golden raisins are not a significant source of that phytonutrient.

It's Meatless Monday! You can do this!
I am cooking for one and therefore, I like easy and nutritious. I no longer cook a pound of pasta at a time but rather cook maybe 1/3 of the box.
Look for Bird's Eye Southwest Style Protein Blends in the freezer section of your grocery store. It combines whole grains, black beans, corn, lentils and red peppers with a zesty sauce. Put the entire bag in the microwave and cook for a few minutes according to instructions.
Cook pasta according to package directions. I use thin whole wheat spaghetti and break it in half and use a smaller saucepan of boiling water.
While the pasta is cooking, saute some chopped onions in a bit of olive oil. When onions are nearly done, toss in a handful of fresh spinach and cook until wilted.
Add the drained pasta to the onions and spinach and add the cooked protein blend and toss together.
(You may want to save a bit of the protein blend for another meal. It is good in an omelet or in a taco.)
If desired, add some halved cherry tomatoes.
Sprinkle with Parmesan cheese and enjoy!

Women receive beans, rice, and a nutritious soy mix at a parish center in northern Kenya. The food is funded by Caritas.
In summer 2011, after years of poor rains, this area of Kenya was devastated by drought. Wells dried up, huge numbers of livestock died, and people killed each other over vanishing grazing land and water. People grew weak from hunger and at least three children in this area died.
During the worst of the drought, Caritas worked with the diocese to distribute food, truck in water, and bring hay for animals that remained alive.
Women receive Caritas-funded beans, rice, and unimix (a nutritious powder made from soy and other foods) at a parish center near Marsabit, northern Kenya.
