From Wikipedia, the free encyclopedia

Khaja is sweet made from Refined wheat flour, sugar and edible oils . It is made and eaten all throughout Indian subcontinent, though it is known by different names.

KHAJA is a sweet which is a favourite of Lord Jagannath of Puri Orissa .The Lord personally came in a dream of a man from Puri and instructed him how to prepare it .Next day the person prepared a basket full of Khajas and offered it to Lord which the Lord happily accepted .

Khaja is a sweet delicacy of Uttar Pradesh, Bihar, Orissa and West Bengal states in eastern India.

It is believed that, even 2000 years before, khajas were prepared in the fertile land on the southern side of the Gangetic Plains of UP-Bihar and in Orissa. These areas which are home to khaja, once comprised the central part of Maurya and Gupta empires.

Presently, khajas are prepared and sold in the city of Unnao, Patna, Gaya, Baharampur and several other places across the states of Bihar and West Bengal, yet Khajas of Silao and Rajgir areas have a distinct superiority over khajas of all other places. Silao and Rajgir are the places where one can get puffy khaja, which melts in the mouth.

From Bihar Khajas have travelled to some other parts of India, including Andhra Pradesh. Khaja of Kakinada, a coastal town of Andhra Pradesh, is famous. Khaja of Tapeswaram is also famous. First, a paste is made out of wheat flour, mawa, and oil. Then it is deep fried until crisp. Then a sugar syrup is made which is known as "Pak". The crisp croissants are then soaked in the sugar syrup until they absorb the sugar syrup. The specialty of Khaja is that it is dry and smooth from the outside and full of sugar, syrup, and spices on the inside and is very juicy. It melts as soon as one puts it in one's mouth.

In South India similar variety of sweet is prepared, it is known as Balusahi or Padushah. The same kindof Sweet when stuffed with stuffing made of dryfruit etc., it is known as Chandrakala (half round) or Suryakala (Full round)

In Kutch, special type of Namkeen Khaja, which are not sweet but salty are made. They also make Sweet Khaja. These variety are famous as Kutchi Khaja.

Enjoy your favourite Haldiram Bhujia Masala for some spicy and Masaledar taste.

This roasted phool makhana recipe is a perfect snack, especially those who are fasting for Navratri vrat, as it has high nutritional values. It is also called as Fox nuts or Lotus seeds, though I have tried this spicy phool makhana recipe numerous times, I didn't have time to share it in my blog. My daughter Shreya, is a big fan of this snack and she would be always insisting me to share here, and now the time has come. It taste neutral, until it is tossed up with spice powders and it taste similar to popcorns .....
