Spicy mutton mince. Cocooned in the embrace of a warm crepe. Rolled in breadcrumbs. And fried to a sinful golden. Redolent of the Raj. Of lazy afternoons and hedonistic tea rituals. If this is not festive indulgence, what is ?
Strange as there is a Mutton Cove back home. Couldn't be more different!

Only took this as a snap on a reckie for an upcoming photo shoot.
The basic concept of Mutton Biryani is that the curry and the rice are finally brought together and layered, resulting in a dish with contrasting flavors of flavored rice (which is to be cooked separately with spices) and intensely flavored sauce and halal-cutmeat or vegetables.
A full small bowl of Yang Rou Pao Mo. "Yang Rou" could mean lamb or mutton, and it's hard trying to explain the difference to some teachers and students. You eat it with bingzi and chopsticks.. and I eat it way too often.

1.2kg of boned and rolled shoulder of mutton with some garlic and rosemary poked it to it. I've just put it in the oven now and I really can't wait to eat it. We bought it online from www.graigfarm.co.uk along with a forerib of beef and some other bits and pieces before Christmas. It's all organic and well hung so it was worth a go. After we placed the order they rang to see if we could take delivery a day early which was handy for us and nice that they rang and the lady was friendly (I'd expect that but some peoples ideas of service are different). I'm certain we'll be placing another order because the forerib was excellent. Fingers crossed this will be too.

Lunch at the "Golden Myanmar" Teahouse at Bagan.
The buffet offered an assortment of dishes, mainly from the predominant Burmese style (of which the country was named after during colonial times), and is probably the best way to sample a little bit of everything!
The curry offered in mutton. I thought highly of this dish - the mutton was cooked until tender, almost melting on my tongue, and had very little animalic off-taste.

Quick Dinner with Mutton Ribs
Marinate the mutton ribs with
Ribs -6
Honey 2 TBSP
Fresh Pepper corns- 1 TBS
Garlic -10 pods
Ginger- 2 inch
Soya sauce- 3 TBSP
Salt -To taste
Coarsely grind together Garlic/Ginger/Pepper with salt and add to honey , soya sauce and marinate the ribs for 6 hours or marinate overnight....pressure cook for 1/2 whistle and pan fry upside down or pan grill with out pressure cooking, serve with fried potato wedges and garlic loaf bread.
