I've met this old man selling his Masala Chai in his old tea room on wheels, in Amritsar, Punjab. The contrasts of the colors and the whites of the teacups and the his beard, were so vivid that I had to ask him to pose for me.

Ok, I admit it, this was a rush job as the grindstone is calling, I wanted to use hi-res handheld mode on the Olympus Em1 but it went totally out of my single useful brain cell… I just needed a little more thyme 😉

Garam Masala spices in their un-ground state

This is my take on a classic dish.

 

All it needs is a can of tomatoes, a can of chickpeas, and some spices. It takes a little less than 30 minutes to prepare and cook, and won't break the bank.

 

There's enough for two generous servings.

 

I finished with a good squeeze of lemon juice. Some torn coriander/cilantro leaves make a pretty garnish if you have any.

 

I've served it with rice, with lime pickle (because I like it!) and yogurt (in case I've made it too spicy).

In hindi la parola chai significa semplicemente tè (la base utilizzata è solitamente un tè nero molto concentrato come Assam o Celyon), mentre il masala è un mix di spezie tra le quali spiccano cannella, cardamomo, zenzero, anice stellato, chiodi di garofano e pepe nero. In India questa bevanda viene consumata a colazione spesso accompagnata da frittelle salate e saporite, poi al bisogno si gusta durante tutta la giornata (un po’ come il nostro espresso).

 

Questa delizia aromatica è sempre preparata con l’aggiunta di zucchero e latte. Il chai caldo caldo, servito dai chaiwala (venditori di tè) più esperti, viene versato a cascata da una tazza all’altra per creare una deliziosa schiumina che lo rende ancora più invitante.

In Hindi the word chai simply means tea (the base used is usually a very concentrated black tea such as Assam or Celyon), while masala is a mix of spices among which cinnamon, cardamom, ginger, star anise, cloves and black pepper. In India, this drink is consumed for breakfast often accompanied by savory and savory pancakes, then when needed it can be enjoyed throughout the day (a bit like our espresso).

 

This aromatic delight is always prepared with the addition of sugar and milk. Warm hot chai, served by the most experienced chaiwala (tea vendors), is cascaded from cup to cup to create a delicious foam that makes it even more inviting.

Indian Restaurant & Bar

Zutaten:

 

1 Liter Wasser

1/4 TL Zimtpulver

1/2 TL Vanillezucker

2 Kardamomkapseln, zerstoßen bzw. 1/4 TL Kardamompulver

2 Pfefferkörner, zerstoßen

1/2 TL Ingwerpulver

2 Nelken zerstoßen

1 TL brauner Zucker

 

Zubereitung:

 

Alle Zutaten 10 Minuten in einem Liter Wasser kochen lassen. Dann 3 Teebeutel (Ceylon-Assam) dazu geben und mindestens 3-5 Minuten ziehen lassen.

Durch einen feinen Sieb den Tee abgießen.

Fertig!

With peas (cos I like them), yogurt and chopped parsley.

The cauliflower was al dente, and you could still taste the vegetable, as well as the spices.

I've cobbled this together for an upcoming competition. The brief is 'Still Life' and it has to tell a story.

 

I do enjoy a good curry and especially if it's made from scratch. I can happily spend an afternoon in the kitchen making up batches of curry gravy to freeze up then add all manner of spices to when I'm ready. I also make my own Garam Masala. When the aromatic spices are combined it smells heavenly. I'd almost compare the sensation to nuzzling the neck of a bedewed lady! But I'm digressing!!

 

My image is part of the process from whole spice, the milling process then onto the amalgamation. I have obviously embellished some of the ingredients for the sake of art :)

 

My own critique tells me the centre panel isn't quite right. The perspective is wrong and it just looks out of place. I have redone it 3 times now and I've had enough of it!

 

For anyone interested in how I lit this then:

I used my 24" softbox equipped with a Yongnuo YN560IV speedlight 1/8 @ 24mm. This was placed to the rear of the spices, pointing down at a 60° angle. No more than 18" away from the worktop. I placed an A1 piece of white foamboard directly in front of the spices, just out of frame to bounce some light back into the frame. Shot handheld from above whilst balanced on a chair...

Just added sambar masala. Tasting good. I like!

She is enjoying her Masala Chai, a flavored tea beverage made by brewing black tea with a mixture of aromatic spices and herbs.

 

Originating in the Indian subcontinent, the beverage has gained worldwide popularity, becoming a feature in many coffee and tea houses.

Butter Paneer Masala is a North Indian delicacy that is made by cooking Indian cottage cheese in a rich and creamy onion-tomato-cashew sauce. It is also listed as Paneer Makhani, or Shahi paneer.

Tea tonight. This will make two good servings, and is the work of just a few minutes. Just the thing after a busy day.

Since this is my most popular image I wanted to add that I no longer have these birds sadly. :( Masala tragically passed away and when I moved from America to the UK I had to rehome Mishri. :( I really miss them.

L’abbreviazione chai sta per masala chai, letteralmente tè speziato, il modo in cui gli indiani cominciarono a bere il tè, durante la dominazione inglese. Nel masala chai sono presenti tè nero, latte intero, zucchero o miele e spezie. I modi di preparalo sono diversi, così come le spezie usate a seconda delle regioni dell’India, ma il sapore è complesso, dolce e morbido

 

Chai in Hindi means tea, it reads "ciai" but throughout the rest of the world (including Starbucks) means a tea flavored with milk, sugar and spices. The abbreviation chai stands for masala chai, literally spiced tea, the way the Indians began to drink tea during English rule. In the masala chai there are black tea, whole milk, sugar or honey and spices. The ways of preparing it are different, as are the spices used depending on the regions of India, but the taste is complex, sweet and soft.

Another weekend, another "experimental" batch of ice cream (although I had a pretty good idea of how this one was going to turn out.)

 

Photography-wise, I decided to stage the scene with at least some of the spices used in the base. Shot outdoors in natural light, Nikon D750 w/Nikkor Micro 105mm, 0.4s @ ƒ/22, ISO100. Crop and color finishing in Adobe Lightroom Classic.

  

Ingredients

 

2 c. heavy cream

1 c. whole milk

6 large egg yolks

3/4 c. granulated sugar

2 tbl honey

pinch kosher salt

1 vanilla bean, split

1 stick cinnamon (about 3"), broken

2 star anise pods

1 tsp allspice berries, cracked

1 tsp black peppercorns, cracked

8-10 green cardamom pods, cracked

1 tsp whole cloves

1 tsp fresh minced ginger

1/4 tsp nutmeg

pinch blade mace

2 tsp loose black tea leaves (I used a Darjeeling)

  

Directions

 

Combine the milk and cream in a medium saucepan. Add all of the spices except for the tea, scraping the vanilla seeds from the split pod into the dairy. Bring just to a boil, stir in the tea, cover, and remove from the heat. Let steep for an hour.

 

Strain the spices out of the dairy and return it to the saucepan, and bring it back to a bare simmer.

 

In a large bowl, combine the egg yolks, sugar, salt, and honey and whisk until smooth.

 

Temper the egg yolks by slowly whisking in about half of the hot dairy, then pour the egg-dairy mixture into the saucepan with the rest of the dairy. Return to medium heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon (if you drag your finger through the coating, it should leave a track.)

 

Strain the mixture through a mesh strainer, cover with plastic wrap (pressing the wrap into the surface of the liquid), and refrigerate until cold.

 

Churn in your ice cream maker according to the manufacturer's directions, then freeze until solid, at least a few hours, before serving.

 

Makes about a quart of ice cream.

 

Masala Vadas are made of coarsely ground soaked Bengal Gram Dal. Then spices, onions & herbs are added to the dough. This dough is then shaped to small disc or patties & deep fried.

Chaat Masala - Different kind of spices are mixed with some fried items.
