Chana masala
This is my take on a classic dish.
All it needs is a can of tomatoes, a can of chickpeas, and some spices. It takes a little less than 30 minutes to prepare and cook, and won't break the bank.
There's enough for two generous servings.
I finished with a good squeeze of lemon juice. Some torn coriander/cilantro leaves make a pretty garnish if you have any.
I've served it with rice, with lime pickle (because I like it!) and yogurt (in case I've made it too spicy).
