HAPPY NEW ENGLAND FALL EVERYONE!
Colored Leaves, Crinkling Cornstalks, Apple Cider, Johnnycake
"I love to study the many things that grow below the corn stalks and bring them back to the studio to study the color. If one could only catch that true color of nature – the very thought of it drives me mad."

Around midnight on August 25th, 2023 an EF1 tornado touched down west of Dartmoor Rd. off of Mentor Ave. It traveled through numerous residential streets before hitting the Erie Commons Plaza and Great Lakes Mall. It continued to travel past the mall and go through numerous residential roads and neighborhoods before lifting near the Donald E. Kruger Park. There were no injuries or deaths. The tornado went on for 3.28 miles, had a max width of 150 yards and max windspeeds of 110mph. This was one of nine tornadoes that night, as part of a strong storm traveling through Michigan and Ohio.

Pizza/Pasta Pocket
Ingredients:
Bread
2 1/2 cups bread flour
1 1/4 cups water
2 tsp yeast
1 tbsp butter (softened)
1 tsp sugar (if using active dry yeast)
1 tbsp kosher salt
1 egg white
mozzarella cheese
Parmesan cheese
pasta/pizza toppings
tomato sauce
Stir yeast in to 1/4 cup water, heated to 100-110 F. Stir in sugar, and let it proof for 10 minutes. Add flour, 1 cup water, yeast mixture, butter, and salt to mixing bowl. Using the dough hook, knead for 10-15 minutes. When its done, place the dough in an oiled bowl and cover with plastic wrap. Let the dough rise for about an hour, it should nearly double in size. Cut dough into quarters and roughly roll the pieces out.
Preheat the oven to 450 F. Let whatever you will be cooking the bread on heat up with the oven. I used a cast iron skillet. Let the cheese be the bottom layer, next add the pasta, sauce, and basil leaves. Leave about 1/2 inch around the edge of the dough. Fold the dough over on itself and seal. Poke some holes in the top side with a fork or knife. Brush the top with the egg white mixture and cook for about 10-12 minutes. Brush the egg mixture on top again and cook for another 5 minutes. Remove, sprinkle with grated Parmesan cheese, and let cool.
i know that this picture is blurry and out of focus, but i love it. these friends have rebuilt me this summer. i had some old friends who tore me down and made me feel self conscious and weak and unloved. and these people picked me up this summer and made me feel worthwhile, hanging out on sketchy roads, breaking glass bottles, going to the beach and camping out at barnes and nobles. from left to right its JakeyBoy and JohnnyCakes, new brothers of mine, and my sister Rachel and I. i love you guys and all of our adventures.
its been the best summer in years.

Yummy! This was the resort's "St. Lucian Breakfast," which we ate every day (okay, I had the "English Breakfast" the first day). Coffee (DELISH - best I've ever tasted), fried Accras (saltfish, which is boiled to remove the salt) with spicy catsup, Johnnycakes, scrambled eggs, pickled cucumber salad, a tomato, and freshly squeezed fruit juice. I think I was having tamarind this day, but they also had mango, fruit punch, and OJ. It was a splendid breakfast, very tasty and filling. We only ate lunch twice, I think.
Also, I don't get people who go to other countries and eat their own native foods (read: Americans who had waffles every morning). While I understand the comfort of familiar foods, and I'm not worldly by any means - you're really missing out by not tasting the native goodies.
Then throw them in the oil.

My students always 'translate' the name for Japanese foods such as that pictured above (お好み焼き) using their phonetization, "okonomi yaki," which might just as well be kowwash firdight for all the meaning it would impart to the average anglophone. This is I think because people hate meaninglessness (Heine, Proulx, & Vohs, 2006) so if at least one word in Japanese is included in any sentence the sender knows that at least that one word will be meaningful in a Japanese context, and that their conversation partner will have some idea of what they are talking about. The reasons for this is anatta or no self. The self is just a representation (story or image): something with a meaning. The lack of meaning is self-annihilation, and English conversation practice almost deadly. I need to be nicer to my students, investigate Japanese hospice praxis, while insisting that students use translations.

I helped my mom at a craft show and then made dinner later... I love making johnny cakes! (cornbread pancakes)
Dad took this photo as I was getting out--you would be shocked how cold that water was! I was expecting it to be warm like the water of South Fl--but it was icy cold! It was so clear and calm I had to go in--I could see little fish swimming around me while I was just floating around--this is one of the top 10 rated beaches of the world--you will see why from the rest of the pics! Located on the North (Atlantic) side of the island, Magens Bay is a well-protected white sand beach stretching for nearly a mile. It is one of the most popular tourist destinations on the island. Entrance fee to the beach is four dollars per person as of Jan. 2008. The open air Taxi was $9 each. SInce I have a bad back, I asked the driver if I could sit up front with him and he allowed me to. I got to learn a lot about the culture...main staple food Johnnycakes, chopped up fish or chicken mixed wth island spices and cornmeal that is deep fried. All meat is imported so they only eat fish, brown rice, and veggies there. The main religions are Christian based. Most people who live and work there are in the tourisim trade. There is a lot of corruption in the govenment, lots of money in but no improvement for the place or people who live there. The island is still reeling from residual problems from Hurricane that hit 3 years ago. Out of the tourist areas people are very poor. Many Islanders have left and moved to Miami to make money to send back to help support their families. It is like that pretty much everywhere. Even on this ship, the people who work onboard make about $26 a week plus tips if they are lucky. Some make out good. One woman from S.Africa said the American dollar is worth $8.00 back home so she is doing well. Other's from the Philippines, are not as lucky, but the money is still a lot more than what they can make at home. It is a real eye opener to travel and really see first hand what we have to be grateful for here in the USA.

sorghum grain & molasses, green vegetables, benne seed "Johnny cakes."
This unctuous course was our final savoury course. Here fatty pork jowl from Snake River Farms was seared, braised then stored the palm-sized protein in sorghum grain & molasses. At service the dark nugget was covered with sorghum puffs, and served with sauteed collard greens and fried benne seed (sesame seed like) Johnny cakes (little puffed pucks that were meant to soaked up the plate's sorghum molasses sauce). Of all the elements, I enjoyed the collard greens (crisp tender) and the braised jowl (tender, albeit it 65% fat!) the most; even more lovely, the molasses coating paired especially well with the beer. But as much as this plate had highlights, I found the sorghum puffs superfluous, preferring a crisp thin grainy crust like that found on the fried green tomato from my favourite course. The Johnny cakes also fell a little flat (the unfortunate consequence when there are 42 plates, each outfitted with a trio of fried puffs and a small countertop fryer), but I forgive you Chef Blondin.

Wow... this was completely and totally awesome. The johnnycakes (cornmeal pancakes) went perfectly with the silky smoothness of the perfectly smoked salmon and Creme Fraiche.

Part 3: St. Thomas
We wound up our trip with a lovely day in St. Thomas and its capital Charlotte Amalie. This island had a more mercantile economy as opposed to slave economies and sugarcane plantations for St. John and St. Croix. Government Hill has beautiful houses, and Coki Beach was amazing too. We really enjoyed the entire trip!
