There's a very significant size difference between the iPad Simulator and the real thing (especially when you take account of the different ratios of screen to bezel sizes). In this case, the Simulator is running on a 24" (1920x1200) iMac.
The Simulator's screen is physically at least 25% wider, for example. If you've sized your UI to fit your fingers as held up against your Mac's screen, you may well need to make things bigger for the actual device.
Finally managed to get my hands on the iPad Camera Connection Kit. It is seriously smooth and easy to use - just plug in an iPhone or a camera via USB, or use the SD card connector to plug in the memory card from your camera, open the photos app and hit import. Within seconds all your new photos are available to review on the fantastic iPad screen.

This is a test photo converted from a X-Pro1 RAW file using the iPad and the app, PhotoRaw. Having left the B&B I was staying at, I saw this moody scene.
For those of you that know me, you'll be surprised to know I purchased an iPad. It was a total impulse buy because I got a good deal on it. After playing with it for a couple weeks, I realized I had no use for it as it's basically just a gimped-down computer. Thus I sold it to a friend. Maybe in the future when they are more than just a consumer device I'll pick one up again. For now though, it's just a shiny toy.
