N-acetyl L-carnosine supplements provide L-carnosine, an anti-oxidant dipeptide molecule and amino acid produced naturally in the body from the covalent bonding of the amino acids histidine and alanine via the enzyme carnosine synthetase. L-carnosine is found in relatively high concentrations in several body tissues, including the skeletal muscle, skin, kidneys, stomach, heart muscle, nerve tissue and brain.
N-acetyl L-carnosine and L-carnosine are taken as dietary supplements due to the ability of these dipeptides to scavenge reactive oxygen species and supporting cellular structural components from oxidative stress.

This is the methanol extract from the solid phase extraction. Most of the polar substances which were in the supernatant (volume = 160 ml) are now concentrated in ca. 500 µl methanol. To analyze the substances the extract will be subjected to HPLC.
