Roasted East Coast Halibut:

Well executed, solid dish - I got this as a replacement for "Scallop Salad -hazelnut crust, endive, mâche, pickled beetroot, cabernet sauvignon viaigrette", which I could not have because of the hazelnuts.
A huge Pacific halibut, estimated at over 200 pounds, rises alongside a Langara Island Lodge guide boat. The fish was released.

This is a classic French inspired (& technique) product except it finished nothing French ! Cabbage wrap that is but with Halibut filet and dressed with a source base on bonito+kelp+shoyu. Korean red pepper and black pepper added the kick. It's fun & compliment w/ Sancerre!
We spied these two Pacific Halibut (Hippoglossus stenolepis) hiding beneath the sediment trap next to Barkley Benthic Pod 2, 16 May 2010.
The sediment trap is held upright by 3 heavy weights positioned around the circular base frame. In this photo, the halibut are hiding behind one of the weights. Canadian Tire hockey pucks are used to create grip handles for ROPOS to lift and move the weights under water.
Pan seared Halibut served on top of broccolini and raw thin slices of onion and radish (both lightly marinated in sherry vinegar) and a honey mustard tartar sauce.

Halibut topped with crispy tempura calamari. The filet is accompanied with butter-poached shrimp, fennel confit covered in a strip of pernod gelee, and more tempura calamari. Brilliant green dots of basil coulis and a warm pool of creamy fennel soup complete the dish.
Notes: I don't know what I liked better - the shrimp, which had been lovingly poached in butter, OR the fried calamari, which were exceedingly tender with a light crispy outside.
Oh, and yes, the halibut was great - meaty, yet tender and moist on the inside.
I also loved the creativity of the pernod gelee layered over confit of fennel. The whole side show was wonderful - a worthy distraction from the halibut. I also loved the fennel "soup" - which was a nice flavor pairing with the slightly anise-flavored pernod.
Overall, this dish was a real winner - the pernod gelee, shrimp and calamari party being the main attraction.
