When summer comes the men, who wouldn't find the frying pan in their kitchen, become the masters of the grill. They are the ones who know how to make the perfect stakes in their outdoor kitchens. In our house it has to be the traditional charcoal grill, it gives to the food the right aroma of smoke and lighter fluid :-)

I am grilling beef tenderloins almost two inches thick (5 cm) on a hot summer day during the 4th of July weekend. This is only our second grilled steak experiment. Leslie Anne didn't just get a nice sirloin or Porterhouse steak; she decided to try an expensive cut of tenderloin. She also researched the best way to cook this cut of meat.

 

I seared the THICK steak right over the hottest part of her grill for two minutes on each side to brown it and seal in the juices. Then I moved the steaks away from the hot spot and grilled them for another six minutes on each side. She had an electric thermocouple probe to check the internal temperature. We wanted them to be rare to medium rare. To avoid overcooking, we decided to use the minimum cooking interval for the 2" thickness and add to it a minute or two until the temperature was right. Then I cut them open to see if they looked right. Remember, that it is easier to add cooking time as needed but impossible to undo it after the fact. I'll show you the results next time.

Don't even bother trying to find a definition for a sazae, you'll only end up reading through countless articles on "Sazae-san", a classic Japanese family cartoon. What this guy is grilling is a giant turbo shell, sometimes referred to as a turban shell, which is quite popular in Japan.

I enjoy cooking fish as long as they are very fresh .Fresh mackerel are a delicacy and under the grill for a short while they make the perfect treat .Capturing those on the kayak is fun .They are easy to catch once you find the shoal .some olive oil ,rock salt a little shop chillies ,lemon juice ,under the grill voila ..A few new boiled potatoes and some butter to finish the treat .This can be eaten in seconds ..

The interweb tells me that this kind of grill came on Ford pickups during the 1951 and 1952 model years. My source shows a 1952 model with the distinctive structure between the headlights chrome plated, while the 1951 model they show is painted like this one. On the other hand, the '52 model has the chevron above the lettering on the hood, like this one does.

 

last weekend there was a festival going on downtown, an annual thing the boys and I always look forward to. the 'must have' for the day were grilled oysters with lots of butter, garlic and hot sauce...just thinking about them makes my mouth water. seriously.

 

it's a good thing they had that little fence up in front of the grill. :)

Fire up Those Grills!

 

Simplicity at its best! Grilled steak. For juicy meat and a great crust, have your steaks cut a little thicker. While taking a little more time to grill to a medium rare in the inside, a thicker steak will also have time to develop a nice crusty sear on the outside. Mmmmmm!
