La manioca: trasformare il veleno.
La radice della manioca è uno degli alimenti fondamentali dell’Amazzonia e costituisce la base della dieta di molte popolazioni indigene. Tuttavia, nella sua forma naturale contiene sostanze tossiche, come il cianuro, e deve essere sottoposta a un lungo processo di trasformazione prima di poter essere consumata.
Il primo passaggio è la grattugiatura della radice, effettuata con strumenti simili a grattuge, tradizionalmente realizzati con tavole di legno in cui sono inseriti piccoli frammenti di pietra, quarzo o metallo. La polpa ottenuta viene poi spremuta per eliminare il liquido velenoso, quindi setacciata e tostata su grandi piastre di ceramica o metallo.
Da questo processo nasce la farinha de mandioca, una farina granulosa che può essere conservata a lungo. In molte regioni viene inoltre trasformata in sottili focacce croccanti chiamate beiju, diffuse anche nei Caraibi e in altre parti dell’America tropicale.
La lavorazione della manioca non è soltanto una tecnica alimentare: è un processo che trasforma una sostanza pericolosa in nutrimento e, allo stesso tempo, un’attività che coinvolge la vita domestica e sociale delle comunità.
Una radice velenosa diventa cibo.

Cassava: Transforming Poison
Cassava root is one of the staple foods of the Amazon and forms the basis of the diet of many Indigenous populations. However, in its natural state it contains toxic substances, such as cyanide, and must undergo a long process of transformation before it can be consumed.
The first step is grating the root, using tools similar to graters, traditionally made from wooden boards into which small fragments of stone, quartz, or metal are inserted. The resulting pulp is then pressed to remove the poisonous liquid, sieved, and toasted on large ceramic or metal plates.
From this process comes farinha de mandioca, a coarse flour that can be stored for long periods. In many regions it is also transformed into thin, crisp flatbreads known as beiju, found throughout the Caribbean and other parts of tropical America.
The processing of cassava is not merely a food technique: it is a process that transforms a dangerous substance into nourishment and, at the same time, an activity that involves the domestic and social life of the community.
A poisonous root becomes food.
Knowledge makes it safe and allows life to continue.
