We started celebrating the Christmas season this weekend with a quest for the perfect gingerbread cookie!
Postcard for Christmas 2020 with a COVID-19 related message. Sent by a Postcrossing member in Germany.
I bought this gingerbread man cookie during lunch and thought it was adorable! I decided I wanted to take a picture of it when I got back to the office. Of course, when I got to the office I realized I forgot my smaller point and shoot camera (WHICH I ALWAYS HAVE WITH ME!). Because of this I was unable to take a picture AND I couldn't eat the cookie until I arrived home from work! Gah! The delicious smell of gingerbread was attacking my office desk and the drive home was even worse. Finally, after dinner, I devoured him!

INGREDIENTS:
Gingerbread Simple Syrup
1 cup sugar
1 cup water
2 tablespoons mild-flavor molasses
1-inch piece fresh gingerroot, peeled, sliced
2 cinnamon sticks
1 teaspoon whole cloves
Gingerbread Cookie Cocktail
Orange wedge
Brown sugar
1 oz Gingerbread Simple Syrup (2 tablespoons)
1 oz vanilla vodka (2 tablespoons)
1 oz half-and-half (2 tablespoons)
1/2 oz coffee liqueur (1 tablespoon)
DIRECTIONS:
1. To make Gingerbread Simple Syrup, mix sugar, water, molasses, gingerroot, cinnamon sticks and cloves in 1-quart saucepan. Heat to boiling over medium-high heat, stirring until sugar is dissolved. Remove from heat; set aside 1 hour to cool. Strain syrup into glass jar; discard spices. Cover jar, and refrigerate until needed. Makes about 1 1/2 cups.
2. To prepare cocktail, moisten rim of chilled martini glass with orange wedge. Sprinkle brown sugar onto small plate, and dip moistened rim into the sugar to coat lightly. Fill cocktail shaker with ice. Add 1 ounce gingerbread simple syrup, vodka, half-and-half and coffee liqueur; cover and shake. Strain into martini glass.
Tip: If you can't find mild-flavor molasses you can use full-flavor molasses but reduce the amount by 1 tablespoon.

Pig-shaped gingerbread cookie, purchased this morning at Golden Crown Panaderia, during a bike ride down to Old Town. Tasty!
My dog Pooter, not shown, was stealing my gingerbread peeps off of the tree. I tried to catch her but she is too sneaky. I hung this little guy out on a limb and brought Pooter close by--she just looked at me like "I'm not gonna touch that cookie! You will yell at me and chase me away." I tried several of the dogs and only Beaner stepped up and at least took a taste--but her eyes are on me--waiting for me to scold her. I left the cookie where it was and in just a little while I looked over and it was gone and so was Pooter. Arrrghhh!

Finally the last of my Christmas baking. I made these for my eldest sons Christmas breakup party and also for the Cake Angels. I've just dropped them into Ronald McDonald House here in Melbourne. Nothing like spreading the sugary love!!!

while cleaning out my kitchen cupboards [which is SHOCKING], I found my great grandma's dish. i LOVE it & didn't even know I missed it. So i put it to good use & piled some yummy gingerbread cookies on it. YUM!

I made these cookie bear door hangers over the weekend. Although I think the one in the background ended up looking more like a mouse. heh Anyway, I'm incredibly happy with how the bear in the foreground turned out; it was actually my third try. Creating separate pattern pieces instead of one solid pattern was definitely the way to go.
