At low tide, a Fried egg jellyfish (Phacellophora camtschatica) sits surrounded by numerous sea urchins (Strongylocentrotus fransiscanus) that are destroying the kelp that helped to make Burnaby Narrows such a famously diverse marine environment, Haida Gwaii, BC.

When one egg is not enough.

wonder how to impress the merchant to get some free fries and a hamburger , shaking boobies did not help..... maybe showing how skillfully i can walk on the high heels .... any idea's ?

The Doll House is a roadhouse that's been a part of the Jo'burg landscape since just after the great Exodus from Egypt. Now, as is so often the case, the establishment is closing down, a victim of modernity and conformity. Tonight the Doll House hosted a sort of farewell party which, at the time I was there a little earlier, was very well attended. There was Jazz on the PA system, pics from Jo'burg's past projected onto a largie screen, stalls of one description or another, and a long queue of people waiting to order a farewell meal. For such a sad occasion the atmosphere was quite festive.

amazing I know for me to ave a meal that does not include anthing that isn't either grilled, smoked or otherwise BBQd.

As it was Midsummer, the longest day (and shortest night) of the year, and the earlier rain had cleared away, I went for a late evening walk, and of course I took some pics. This was a chip shop near the canal, about twenty to eleven by this point, a good forty minutes after the late summer sunset, but it was still an extended twilight (the sky just doesn't go fully dark here around midsummer)

Southern Fried Chicken – classic Southern chicken recipe that is crunchy and crusty on the outside and juicy and flavorful on the inside; infused with spices and seasonings and soaked in buttermilk to amp its flavor

 

Tips and Notes:

 

1. After you flour coat and dip your chicken in buttermilk, let it rest first before frying it. This will allow your chicken to form a crust and warm to room temperature which will help it cook through evenly.

2. When frying, make sure that your oil is at the right preheated temperature. If it’s too hot, the outside of your chicken will get burned, if it’s cold, the chicken will get soggy and greasy.

3. Do not ever use extra virgin olive oil on fried chicken as it’ll result to a bitter-tasting meat. Go for a neutral-tasting oil like canola, vegetable or, most preferably, peanut oil.

4. Do not over crowd your pan with chicken as this will lower down the oil’s temperature and hasten up the cooking time.

5. Do it in small batches instead.

6. Cast iron pan is a must for a perfectly cooked fried chicken as it holds the temperature well and heat evenly which also results to a perfectly cooked chicken.

7. Rather than deep frying or submerging your chicken entirely into the pan or deep fryer, only 3/4 of the chicken should be covered in hot oil. The weight of the chicken will cause it to sit just almost above the surface of the oil which will create a crispy crust without burning.

8. Don’t let anything fried sit on a paper towel too long as it’ll start to steam and make it soggy. Instead, drain your chicken using a wire rack over a baking sheet. They’ll cool crisp and dry off all at once easily.

Belgian, not French fries, thank you.
