When cooked correctly, cod has the most astonishing texture. However, unlike its cousins the hake and haddock, cod lacks umami so what better way to eat it than by serving the fish with a delicious sauce made from the liquor of freshly shucked oysters. I paired the dish with the oft-posted rosé because I bought two cases of this moreish wine. Cheers!

Ingredients for meat ragù (forgot to include the canned tomatoes).

The meat mix should always be 50/50 pork sausage meat/veal or beef mince. The whole slow simmering process should take two hours or more. I make enough sauce so that the rest can be stored in the freezer as quick food when I go back to work.

Another nagworthy thing is always finish cooking the pasta with the sauce and never plonk the latter on the freshly boiled former, because it’s simply incorrect and inferior tasting.

We shared a Château Grillet* 2014 and Chambolle Musigny "Les Charmes" Perrot Minot 2013.

*This wine was sold at well below retail. And to put things in perspective, Brompton produces more than 70000 bikes a year whereas Grillet's yield is only 5000 bottles a year.
