If you're looking for a comforting casserole that's easy to prepare and delicious, this is the one to try this week. I used a vintage Le Creuset casserole dish to bake. You'll need a 2 - 2 1/2 quart casserole dish.
A little tip here. Cook the barley FIRST so it will be ready to be mixed in with the casserole ingredients when the creamy portion is ready. I think the next time I make this dish, I may add a cup of steamed chopped carrots!
Cooking Spray for baking dish
4 T. unsalted butter, divided
1/3 cup chopped onion
1 t. chopped garlic
3 T. all-purpose flour
1/3 cup dry white wine
1 1/2 cup chicken stock
4 oz. cream cheese, cubed
1/4 cup grated Parmesan cheese
kosher salt
freshly ground black pepper
2 cups shredded rotisserie chicken
3 cups cooked pearled barley
8 oz. green beans, steamed and chopped
1/4 cup chopped flat leaf parsley
1 cup crumbled cheese crackers (I used Cheese-Its)
Preheat oven to 425 degrees F. Lightly grease a 2-quart baking dish.
While you prepare the filling, go ahead and let the barley cook because it's going to take about 40 - 45 minutes to cook.
Melt 3 tablespoons butter in a medium saucepan over medium-high heat. Add onion and garlic and cook, stirring occasionally, until caramelized, 8 to 10 minutes. Whisk in flour and cook, whisking constantly, 1 minute. Gradually whisk in wine and stock. Bring to a boil. Reduce heat and simmer, stirring occasionally, until thickened, 4 to 6 minutes.
Whisk in cream cheese, one piece at a time, then Parmesan, until smooth. Season with 1/4 teaspoon salt and 1/2 teaspoon pepper. Stir in chicken, cooked barley, green beans, and parsley. Transfer mixture to the prepared pan.
Melt the remaining tablespoon butter in a microwave-safe bowl. Add cheese crackers and stir to coat; sprinkle over casserole. Bake until golden and bubbly, 25 to 30 minutes.
Let stand 10 minutes before serving.

200 g / 7 oz wìde rìce noodles
2 tbsp peanut oìl (or other hìgh smoke poìnt oìl)
2 sprìng onìons, slìced
2 garlìc cloves, fìnely slìced
1 hot red chìllì, fìnely slìced
2 carrots, shaved ìnto rìbbons wìth a speed peeler
a large handful of green beans, cut dìagonally
½ small broccolì, dìvìded ìnto florets
1 red pepper, fìnely slìced
¼ cup roasted & unsalted peanuts, pounded ìn a pestle & mortar
½ cup mung bean sprouts
fresh corìander, to garnìsh
SAUCE
5 tbsp tamarìnd sauce*
1 tbsp tamarì / soy sauce
2 tbsp vegan fìsh sauce* or more tamarì / soy sauce
2-3 tbsp maple syrup, adjust to taste
METHOD
Prepare rìce noodles accordìng to the ìnstructìons on the packet, but do not cook them fully as you’ll gìve them another mìnute or two ìn the wok after. After you ìmmerse them ìn soakìng water, lìft the lìd and gìve the noodles a good stìr to prevent them from clumpìng together and stìckìng to the bottom of the pot. Gìve them another good stìr half way through the soakìng tìme.

Ingredients
2 pounds Gold'n Plump Boneless Skinless Chicken Thighs
2 tablespoons corn starch
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
1 clove garlic minced
1/4 teaspoon ground ginger
3/4 teaspoon crushed red pepper flakes
1/4 cup apple juice
1/4 cup bourbon (optional)
1/3 cup light brown sugar (packed)
2 tablespoons ketchup
1 tablespoon apple cider vinegar
1/2 cup chicken stock
1/3 cup soy sauce
scallions and sesame seeds optional for garnish
Instructions
Cut the Gold'n Plump boneless skinless chicken thighs into bite sized pieces. Place in a large bowl. Set aside.
In a small bowl, combine the corn starch, salt and pepper. Add it to the chicken thighs and toss to combine.
Heat the olive oil in a large skillet over medium heat.
Add the chicken and cook three minutes on each side. Cook in two batches. Remove the chicken from the skillet and set aside. The chicken needs to only brown, not cook through.
Add the remaining ingredients to the skillet, scraping up any browned chicken bits. Whisk the sauce together and bring to a boil. Return the chicken to the pan and toss it with the sauce. Let the chicken and the sauce simmer for 20 minutes.
While the chicken is cooking, make some rice. Serve the finished chicken over rice and garnish with scallions and sesame seeds. Enjoy!

Yes, I could eat pizza every day. I love pizza! This version is unique in that ricotta and mozzarella are mixed together are the base for all the delicious toppings. The pizza sauce goes on TOP of the cheese. Find your favorite chicken Italian seasoned sausage and don't forget to add those dollops of pesto right before serving!
1 purchased thin pizza crust (12 inch)
1 T. olive oil
1/3 cup part-skim ricotta
1/3 cup shredded part-skim mozzarella
Salt and black pepper to taste
½ cup purchased pizza sauce
12 cup shredded fontina
½ cup seeded and thinly sliced mini sweet pepper
1 link Italian-style chicken sausage (2 oz.) sliced
6 slices fresh tomato
1 – 2 T. purchased refrigerated basil pesto
Preheat oven to 450 degrees F. with a baking stone on bottom rack.
Place crust on a baking stone and brush with oil.
Combine ricotta and mozzarella, season with salt and pepper and spread on the crust, leaving a 1-inch border. Spread pizza sauce on top of ricotta mixture, then top with fontina, peppers, sausage, and tomatoes.
Bake pizza on stone until cheese is bubbling and crust is brown, 15 – 20 minutes. Dollop pesto over hot pizza.

2 tablespoons garam masala (found in the spice section)
1/2 tablespoon paprika
1 28-ounce can tomato puree
1/4 tablespoon cayenne pepper (adjust according to preference)
1/2 cup canned chickpeas, drained (optional - see paragraph above)
1 cup plain Greek yogurt, heavy cream or full-fat coconut milk
Fresh lemon wedges
Fresh cilantro
Naan bread, warmed
Instructions:
Heat oil over medium heat in a large, heavy pot or Dutch oven. Add chicken. Cook three minutes - stirring occasionally. (No need to brown chicken too much or cook chicken through at this point.) Add onion, garlic and ginger. Stir and cook one minute. Add garam masala, cumin and paprika. Stir while spices become slightly fragrant - about two minutes. Stir in tomato puree and chickpeas (if using).
Reduce heat to medium-low. Cover and allow to barely simmer while chicken finishes cooking (about ten minutes). Sauce will be somewhat thick, yet should be thin enough to simmer. (If needed, thin at this point with a splash of chicken broth or water.)
Test a piece of chicken for doneness.
Stir in yogurt, cream or coconut milk. Season with salt, if needed. Serve immediately.

These could very well be the most delicious potatoes you've ever eaten. The browned butter takes only minutes to prepare and adds such a rich nutty flavor to the potatoes. Don't skip that step or you'll regret it, I promise.
The potatoes cook in only 7 minutes!
3 lbs. baby red potatoes, halved
1 stick unsalted butter
4 cloves garlic, minced
½ t. dried oregano
½ t. dried basil
Salt and freshly ground black pepper, to taste
½ cup chicken broth
¼ cup freshly grated Parmesan
2 T. chopped fresh parsley leaves
To brown the butter, heat butter in a non-stick pan or saucepan over medium-high heat. Melt butter, swirling the pan and stirring occasionally for about 3 minutes until the foam settles. The butter will turn golden brown with a nutty fragrance. Remove from heat, skim the foam with a spoon and filter butter to a bowl or jar through a fine mesh strainer. Set aside for later.
Wash the potatoes, pat dry and cut in half. In a small bowl, combine oregano, basil, garlic, salt, and pepper.
Place the potatoes in the Instant Pot and add the herb and garlic seasoning. Slowly pour the browned butter over the potatoes and toss potatoes to coat. Add the chicken broth.
Close, lock the lid, set the pressure valve to steam. Set the cooking time to 7 minutes on high pressure.
When time is up, press “cancel” and slowly turn the valve on the lid of the Instant Pot to venting position using a long-handled wooden spoon.
Open the lid and sprinkle potatoes with parmesan and chopped parsley.
Serve immediately.

Tenderloin steak and scallops seared in butter then finished in subtle accents of lemon zest, white wine, garlic, and fresh basil.
Ingredients
For the Steak & Scallops
10 ounces beef tenderloin steaks 2 (5 ounce) steaks, 1 1/2-inch thick
1 teaspoon Sea salt and freshly ground pepper
3 tablespoons butter
4 ounces sea scallops 6 large scallops, rinse and pat dry
For the Sauce
2 tablespoons extra-virgin olive oil
¼ cup finely chopped green onions (about 4 scallions), white and light green part
3 large garlic cloves minced
3 tablespoons butter
¼ cup dry white wine
2 tablespoons freshly squeezed lemon juice
2 tablespoons fresh basil cut into thin strips
¼ teaspoon lemon zest
1 tablespoon minced parsley
Dash hot pepper sauce
Sea salt and freshly ground pepper to taste
Instructions
Season steaks with salt and pepper. In a 10 to 12-inch skillet, heat 2 tablespoons of butter over medium heat until hot and bubbly (more can be added, if needed). Add steaks to skillet and brown on one side for 4 to 5 minutes. (At this point, begin the sauce in another small, non-reactive skillet or wide sauce pan as described in step 2.)
Turn the steaks on end and rotate to brown the sides (this will take about 3 minutes), then turn over to brown the final side for 4 to 5 minutes. When turning the steak to brown the last side, add scallops to the skillet to brown at the same time, about 2 minutes on each side.
To make the sauce in the separate skillet, sauté onion and garlic in 2 tablespoons olive oil over medium heat 3-4 minutes, until fragrant. Add wine and lemon juice; simmer to reduce slightly, 1-2 minutes. Add 3 tablespoons butter and stir until melted into the sauce. If the steak and scallops are not yet done, slide the sauce off heat until they are ready.

This is a great recipe when you need to feed a crowd. A pound of shrimp goes a long way when topping the tostadas. If you're pressed for time, you can certainly use packaged tostadas. Shop wisely when purchasing your shrimp. If at all possible, always buy U.S. wild-caught shrimp!
¼ cup vegetable oil
8 corn tortillas (6-inch)
Kosher salt
1 bag angel hair coleslaw (4 cups)
¼ cup chopped fresh cilantro
2 T. distilled white vinegar
3 T. olive oil, divided
2 t. taco seasoning
12 oz. medium shrimp, peeled, deveined, chopped, and seasoned with salt and pepper
2 t. minced garlic
2 T. fresh lime juice
Tabasco sauce to taste
½ cup minced white onion, rinsed and patted dry
1 avocado, diced
Chopped cilantro for garnish
Heat vegetable oil in a non-stick skillet over medium heat to 350 degrees F. Fry tortillas, one at a time, until crisp, flipping halfway through, about 1 minute; drain on a paper towel-lined baking sheet and season with salt.
Toss together coleslaw, cilantro, vinegar, and 1 T. olive oil; season with salt.
Toss shrimp in taco seasoning. Cook shrimp in remaining 2 T. olive oil in a skillet over medium-high heat, 2 – 3 minutes, then add garlic and cook for 1 minute. Stir in lime juice until absorbed, then season with Tabasco.
Top prepared tostadas with coleslaw, onion, avocado, and shrimp.

This is a repeat, but as all good things are, sometimes they're worth repeating! Smoked Sausage and Kraut are one of those comfort food meals that I crave now and again.
2 lbs. smoked sausage (cubed or sliced) I used Conecuh Hickory Smoked
32 oz. kraut, drained
lots of freshly ground black pepper
In a large skillet, over medium heat, add the sausage and cook until sausage is nicely browned.
Add drained kraut and stir to combine and let the kraut heat through. Add black pepper to taste.
This is excellent served with cornbread and mashed, fried, or boiled potatoes.
Instead of a round skillet of cornbread, I used my divided Lodge Cast Iron cornbread pan.
1 cups of self-rising white cornmeal
1 cups buttermilk
2 T. bacon grease, melted (divided)
Preheat oven to 375 degrees. Place the cornbread pan or skillet in the oven to preheat along with the oven.
In a medium mixing bowl, add cornmeal and then slowly stir in buttermilk until it's well blended. Add 1 T. melted bacon grease and stir to combine.
Using a silicone brush, coat the sections of the cornbread pan with the remaining melted bacon grease.
Pour the batter into the skillet and bake until golden brown about 20 - 25 minutes. Remove from oven and let rest in skillet for a few minutes before turning out onto a serving plate.

INGREDIENTS
1 pound Jones Dairy Farm Cherrywood Smoked Bacon, cooked and chopped
12 ouncesJones Dairy Farm Breakfast Sausage Rolls
1 (28 ounce) package frozen cubed hash browns with peppers and onions, thawed
2 cups (8-ounces) shredded medium cheddar cheese
12 large eggs
1/2 cup whole milk
1 1/2 teaspoons kosher salt
1 teaspoon fresh ground black pepper
1 teaspoon garlic powder
INSTRUCTIONS
Preheat oven to 375°F. Butter a 9x13-inch baking pan.
In a large skillet over medium heat, cook the sausage until browned, crumbling it with a spatula as it cooks.
Add hash browns, sausage, bacon and cheese to the casserole dish. Toss to combine.
In a large bowl combine eggs, milk, garlic, salt and pepper. Whisk until completely combined. Pour the egg mixture over the hash brown mixture.

Creamy Sundried Tomato + Parmesan Chicken Zoodles
íngredíents
· 1 tablespoon butter
· 700 g | 1 1/2 lb skínless chícken thígh fíllets , cut ínto stríps
· 120 g | 4oz fresh semí-dríed tomato stríps ín oíl , chopped *See Notes
· 100 g | 3.5oz jarred sun dríed tomatoes ín oíl , chopped
· 4 cloves garlíc , peeled and crushed
· 300 ml |1 1/4 cup thíckened cream , reduced fat or full fat (or half and half)
· 1 cup shaved Parmesan cheese
· Salt to taste
· Dríed basíl seasoníng
· Red chíllí flakes
· 2 large Zucchíní (or summer squash), made ínto Zoodles (use a vegetable grater íf you don't have a Zoodle grater)
ínstructíons
1. Heat the butter ín a pan/skíllet over medíum hígh heat. Add the chícken stríps and sprínkle wíth salt. Pan fry untíl the chícken ís golden browned on all sídes and cooked through.
2. Add both semí-dríed and sun dríed tomatoes wíth 1 tablespoon of the oíl from the jar (optíonal but adds extra flavour), and add the garlíc; sauté untíl fragrant. (Whíle the chícken ís browníng, prepare your Zoodles wíth a Zoodle maker OR wíth a normal vegetable peeler.)

This is the classic German Chocolate Cake recipe that's been on the Baker's German Chocolate box forever. You'll certainly make a great impression when you present this one for dessert to your family and friends!
Take a few minutes and get all the prep work done before you begin mixing everything together. The process will go much easier if you have everything ready to go as you follow the step by step instructions.
1 pkg. (4 oz.) Baker's German Sweet Chocolate
1/2 cup water
4 eggs, separated
2 cups flour
1 t. baking soda
1/4 t. salt
1 cup butter, softened
2 cups sugar
1 t. vanilla
1 cup buttermilk
Preheat oven to 350 degrees F.
Cover bottoms of 3 (9-inch) round pans with parchment. Spray side with cooking spray. Microwave chocolate and water in a large microwaveable bowl on high 1 1/2 to 2 minutes or until chocolate is almost melted, stirring after 1 minute. Stir until chocolate is completely melted.
Beat egg whites in a small bowl with mixer on high speed until stiff peaks form, set aside. Combine flour, baking soda, and salt. Beat butter and sugar in large bowl with mixer until light and fluffy. Add egg yolks, one at a time, beating well after each. Blend in melted chocolate and vanilla. Add flour mixture alternately with buttermilk, beating until well blended after each addition.
Add egg whites, stir gently until well blended. Pour into prepared pans.
Bake 30 minutes or until a toothpick inserted in centers comes out clean. Immediately run a small spatula around cakes in pans. Cool cakes in pans 15 minutes. Remove from pan to wire racks, cool completely.
Prepare Coconut Pecan Frosting.
4 egg yolks
1 (12 oz.) can evaporated milk
1 1/2 t. vanilla
1 1/2 cup sugar
3/4 cup butter
1 pkg. (7 oz.) Baker's Angel Flake Coconut
1 1/2 cup chopped pecans
Beat egg yolks, milk, and vanilla in large saucepan with whisk until blended.
Add sugar and butter; cook on medium heat 12 minutes, or until thickened and golden brown, stirring constantly.
Remove from heat and add coconut and pecans.
Cool to desired spreading consistency.
Makes enough to frost top and sides of three 8" or 9" cake layers, tops of two 9 x 13 cakes, or tops of 36 cupcakes.

The cold January rain has set in, and there's no way I wanted to stand out on the deck and attempt to grill ribs. Time for another Instant Pot experiment!
I used a dry rub that I mixed up with this and that which I always use on smoked Boston Butts. It includes paprika, chili powder, cumin, granulated garlic, onion powder, salt, black pepper, and ground coriander. You can mix your own or use your favorite purchased dry rub mix.
Instead of using plain water in the pot, I found ham base at Publix today! I have used Better than Bouillon's Beef and Chicken base for years, and I'm delighted to discover that they have this product in their line now.
2.5 lbs. country style ribs
Dry rub
1 cup water
1 t. ham base
1/2 t. liquid smoke (optional)
your favorite bbq sauce (optional)
Generously season the ribs with the dry rub. Set aside.
Mix water and ham base (and liquid smoke if using) together in a measuring cup and pour into the Instant Pot.
Place the trivet (rack) in the Instant Pot and fit the ribs into the cooker.
Close, lock the lid, set the pressure valve to steam. Set the cooking time to 26 (or 28 minutes if the ribs are meaty) on high pressure.
When time is up, press “cancel” and let the steam naturally release for 5 minutes. Then slowly turn the valve on the lid of the Instant Pot to venting position using a long-handled wooden spoon. When the steam is released, carefully remove the cover.
Carefully remove the rack from the Instant Pot. The ribs are ready to eat! But.......
if you'd like to sauce them up, place the ribs on a baking sheet like so. Brush them with your favorite BBQ sauce and put under the broiler for a minute or two to glaze the sauce.
So my verdict on pressure cooked ribs? Two sauce covered thumbs up!

8 oz cavatappì noodles (you can also use cellentanì noodles or elbow macaronì)
2 cups chìcken broth
2 Tbsp butter
1/2 tsp garlìc powder
4 oz cream cheese
3/4 cup mìlk
1 cup grated Parmesan cheese
1 (8 oz) jar sun-drìed tomatoes, rìnsed, draìned and chopped
1/4 tsp kosher salt
1/4 tsp freshly ground pepper
2 Tbsp fresh chopped basìl (or 2 Tbsp of basìl ìn the squeeze tube or 1 tsp drìed basìl)
2-3 cup baby spìnach
Instant Pot Tuscan Chicken Pasta
ìNSTRUCTìONS
Add the chìcken, noodles, broth and butter to the ìnstant Pot. Try to cover the noodles as much as possìble wìth the lìquìd. Cover the pot and secure the lìd. Make sure valve ìs set to “sealìng.” Set the manual pressure cook button to 3 mìnutes.
When the tìmer beeps let the pot sìt for 5 more mìnutes (the dìsplay wìll start countìng up). Move the valve to “ventìng.” ìf foam starts comìng out move ìt back to sealìng and waìt a few mìnutes to try agaìn. Once all the pressure ìs release, remove the lìd.

2 tablespoons butter
1/2 onion, chopped
2 cloves garlic, minced
4 ounces chive and onion cream cheese
1 cup sour cream (or plain Greek yogurt)
1/2 teaspoon salt
1 cup whole milk, heavy cream or half-and-half (I used half-and-half)
1/2 cup shredded or grated Parmesan cheese
2 cups shredded mozzarella cheese
1 - 1 1/2 cups chopped fresh spinach
1/2 teaspoon black pepper
Pinch crushed red pepper flakes (optional)
2 cups cooked chicken (cubed or shredded)
1/2 cup fresh tomatoes, cut into large chunks (Can use grape/cherry tomatoes sliced in half)
Fresh basil or parsley, for garnish
Instructions:
Preheat oven to 400 degrees.
Coat a medium casserole dish with non-stick spray. (Mine was a 10" round, but a 9 x 13 would work fine.)
Cook pasta in salted, boiling water to al dente. Drain and set aside.
While pasta is cooking, heat butter in a medium saute pan set to medium heat. Add in the onion and garlic. Cook for 3 - 4 minutes to slightly soften veggies. Do not brown.

These Texas Almond Sheet Cake Donuts are my new best friends. Almond cake donuts dipped and dripped in the iconic Texas Sheet Cake icing only it’s almond flavored and topped off with slivered almonds.
Everything about these donuts has me smiling. I’m a huge almond lover so these are right up my alley. They have a light airy texture and a nice subtle almond flavoring. That icing though, makes these donuts. As it does with the cake as well. I would just eat it with a spoon all day every day. But….I don’t think that my teeth will enjoy that.
INGREDIENTS
1 cup all-purpose flour
1 tsp baking powder
1/4 tsp salt
1/4 cup granulated sugar
1 egg
1/4 cup sour cream
3 Tbs milk
1 Tbs butter, melted
1 tsp almond extract
ICING
1/2 stick butter, melted
3-4 Tbs milk
1 1/3 tsp almond extract
3/4 - 1 cup powdered sugar
Slivered almonds
INSTRUCTIONS
Pre-heat oven to 400.
In bowl, add all dry ingredients and stir to combine.
Add egg, sour cream, milk, almond extract, butter and stir everything until just combined.
Spray your donut pan with non-stick cooking spray.
Spoon or pipe into wells of donut pan.
Cook for about 10 minutes or until donuts spring back when touched.
Remove from oven and dump out of pan and let cool.
Meanwhile mix together your glaze ingredients.

After years of searchìng (and makìng more boxed mac than I care to admìt), I fìnally found the creamìest mac and cheese recìpe around. Super cheddary, rìch, and made on the stove top ìn under 30 mìnutes, thìs ìs goìng to be makìng many more appearances on our famìly table.
INGREDIENTS
FOR THE BECHAMEL SAUCE:
1/3 cup unsalted butter
1/3 cup all purpose flour
2 cups whole mìlk
3/4 teaspoon salt
1/2 teaspoon ground mustard powder
1/2 teaspoon garlìc powder
1/4 teaspoon cayenne pepper (optìonal)
1 1/2 cups packed sharp aged cheddar cheese *see note
1/2 cup shredded Pecorìno Romano cheese
8 ounces (2 cups) sturdy macaronì noodles *see note
Salt and pepper, to taste
INSTRUCTIONS
Cook the macaronì noodles ìn a large pot of salted water accordìng to package dìrectìons, draìnìng them a mìnute before the "al dente" cookìng tìme.
Heat the mìlk ìn the mìcrowave or on the stove top untìl very hot but not boìlìng.
In a heavy bottomed sauce pot, melt the butter over medìum heat. Whìsk ìn the flour and contìnue to cook, whìskìng constantly, untìl the mìxture turns a lìght brown color, about 3-4 mìnutes. Remove from heat. Slowly start pourìng ìn the mìlk, whìskìng constantly. The mìxture wìll look very thìck at fìrst and wìll thìn out as you whìsk ìn the remaìnder of the mìlk. Return the pot to the heat and cook the mìxture, whìskìng contìnuously, another 3-5 mìnutes or untìl thìckened. The sauce should coat the back of the spoon. If you put a lìttle bìt on a spoon and run your fìnger through ìt, the lìne from your fìnger should remaìn. Stìr ìn the salt, garlìc powder, and ground mustard.

INGREDIENTS:
CAKE:
3 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
3 medium apples, for about 3 cups chopped
1 tablespoon lemon juice
3 tablespoons dark brown sugar
2 teaspoons vanilla, divided
1 1/4 cups vegetable or canola oil
2 cups granulated sugar
3 large eggs
CREAM CHEESE LAYER:
8 ounces cream cheese, room temperature
1/3 cup granulated sugar
1/2 teaspoon vanilla
1 large egg
GLAZE:
2 tablespoons butter
2 tablespoons brown sugar
2 tablespoons white sugar
2 tablespoons heavy cream
1/2 to 1 tsp vanilla
CARAMEL SAUCE:
4 tablespoons butter
1 cup firmly packed light brown sugar
1/2 cup half-and-half or whipping cream
Pinch of salt
1 tablespoon vanilla
DIRECTIONS:
Generously grease and flour a 9 or 10-inch bundt pan. Set aside. Preheat oven to 350 degrees F.
In a medium bowl, whisk together the flour, soda, cinnamon, nutmeg and salt. Set aside. Peel, core and dice 3 cups of apples. Toss the apples with the tablespoon of lemon juice to keep from browning. Add the dark brown sugar and 1 teaspoon vanilla and toss to combine. Set aside.
Using a handheld electric mixer or in the bowl of a stand mixer, blend the oil, sugar, and vanilla until well mixed. Add the eggs one at a time, mixing well after each addition. Stir in the dry ingredients until just incorporated. The batter will be quite thick. Drain any excess liquid from the apples (if any) and stir the apple mixture into the batter. Don’t overmix! Pour the batter evenly into the prepared pan.
In a medium bowl, beat the cream cheese just until smooth. Add the 1/3 cup sugar, vanilla and egg and beat on medium speed until creamy and smooth.
Using a spoon or butter knife, make a trench in the center of the cake batter (going around in the circular shape of the bundt pan) about 1-inch deep (just scoop the excess batter to either side. Spoon the cream cheese mixture into the trench. Try and keep the cream cheese mixture in a ring in the center of the cake so it has cake batter on either side around the circle. Once the cream cheese mixture is in place, use a butter knife to swirl the cream cheese mixture into the surrounding cake batter.
Bake the cake for 1 hour and 15 minutes (checking often as you may need to decrease or increase time based on your pan and exact oven temperature). Bake until a toothpick inserted in the center comes out with only a few moist crumbs.

This cabbage enchilada recipe definitely made the cut for pre-wedding and is still on the team post-wedding. It is that tasty! You honestly don’t even miss the tortilla! Everything in moderation right? But don’t expect for one second I was about to deprive you of all the goodness in these enchiladas. There is some melty-cheesy action going on as well!
The trick to making these cabbage enchiladas a success, is patience and a gentle hand. To get the cabbage leaves to become plyable, you must first do a couple steps. Cut off the base of the cabbage head and run it under warm water. This will help you peel the cabbage leaves and get them off in one whole leaf. Do this part carefully!
Those suckers like to tear, hence the “gentle hand”. Once you have gotten the amount of leaves you are seeking (this recipe will make about 5-6 rolled up enchiladas so double up if you have a large family or want leftovers), place them in a pot of salted boiling water for about 30 seconds each leaf. Make sure you submerge the entire leaf so it all becomes soft. I do one leaf at a time so they don’t all become a mangled nest in the water. Lay them out on a towel and let them drain and cool off before handling.
That is how you prep the leaves! Now, buying tortillas is way easier….but this is a healthier, unprocessed option. It is delicious and like I said….what tortilla???
INGREDIENTS :
1 lb ground chìcken
1 head of cabbage
1 tablespoon olìve oìl
2 cans chopped green chìlìes (ì used Hatch, one can mìld, one can hot)
1 small yellow onìon, dìced
1 teaspoon cumìn
1/4 teaspoon (or more) cayenne

Cut stem of cabbage head off
Run head of cabbage under warm water to soften, start peeling leaves in big chunks
In a pot, boil 2 cups of water with a teaspoon salt
place 1-2 leaves at a time in boiling water and boil for 30 seconds, fully submerging the cabbage leaf

Cìoppìno ìs a fìsherman stew well known ìn the Pacìfìc Northwest. And wìth crabbìng season underway, a tìmely, seasonal meal. It’s regìonal, ìt’s delìcìous and ìncredìbly easy to make.
Ingredìents
2 freshly cooked Dungeness crabs (approxìmately 2 lbs each)
24 clams, well scrubbed
1 cup dry whìte wìne
2 cups water
1/4 cup olìve oìl
1 medìum yellow onìon, fìnely chopped
3 large cloves garlìc, mìnced
2 pounds fresh tomatoes, peeled, seeded, and chopped (or 1 28-ounce can of tomatoes)
3 ounces tomato paste
1 teaspoon fresh ground black pepper
1 teaspoon fresh oregano, chopped
1 tablespoon basìl, fìnely chopped
2 pounds fresh salmon or halìbut cut ìnto large pìeces
3/4 pound scallops
3/4 pound raw shrìmp, peeled and deveìned
Chopped fresh parsley
Instructìons
Remove the legs and claws from the crabs and break the body ìn half. Clean bodìes off. Place the clams ìn a pan, add 1 cup of wìne, and steam, covered, over medìum heat for 5 mìnutes or untìl clams open.
Remove clams and dìscard any that do not open.
Straìn the stock through a cheesecloth and reserve.
In an 8-quart saucepan, heat the oìl. Add the onìon and garlìc and sauté over medìum heat untìl soft, but not browned. Add tomatoes, tomato paste, and 2 cups of water, pepper, herbs, and clam stock.
Partìally cover and sìmmer for 20 mìnutes.

Diet Breakfast Ideas
1. Savory Oatmeal with Cheddar and Fried Egg
INGREDIENTS
1/4 cup dry quick-cooking steel cut oats
3/4 cup water
salt and pepper
2 tablespoons shredded white cheddar cheese (add more if you like)
1 tsp coconut oil, divided
1/4 cup diced red pepper
2 tablespoons finely chopped onions
1 large egg
Optional Toppings
chopped walnuts
sliced green onions
za’atar (or any other spice blend)
INSTRUCTIONS
Stove Top Method: Bring water to boil. Add oatmeal, reduce heat a little and let it cook for about 3 minutes, until all liquid is absorbed. Turn off heat and stir in cheese, a small pinch of salt, and pepper.
Microwave Method*: Place oats and water in a microwave-safe bowl. Line microwave dish with paper towels to catch any spills. Microwave at a high setting (but not the highest, about 8/10 power setting) at one-minute intervals for a total of 3 minutes. If you want a softer texture, continue microwaving at 30-second intervals. Give the oats a little stir between intervals. When the oatmeal is done, stir in shredded cheese, a small pinch of salt, and pepper.
Heat a nonstick pan with 1/2 teaspoon of coconut oil over medium-high heat. Add vegetables and cook for 2 to 3 minutes, until they soften. Spoon vegetables over cooked oats. Reduce heat to medium.
Add remaining 1/2 teaspoon of oil and fry egg. Cook until the whites are no longer translucent and serve over oatmeal.
Top with chopped walnuts, green onions, and za’atar, if you like.

This Easy Sesame Chicken is seriously so easy that you’ll be tempted to toss those take out menus. The delicious sauce takes only a few ingredients, all of which you can keep on hand indefinitely (keep your ginger in the freezer). You know, just incase you need some sesame chicken like, now. Oh, and this take-out fake-out sesame chicken works great for your weekly meal prep, too!
So what did I change to make this recipe better? First, I doubled the sauce because the reviews almost unanimously agreed that it needed to be more saucy. Second, I rebalanced the flavors in the sauce. They’re the same ingredients, just a little more in balance. And lastly, I reduced the cornstarch in the sauce so that the texture of the finished sauce is a bit more smooth and doesn’t seize up quite as much.
INGREDIENTS
CHICKEN
1 large egg $0.23
2 Tbsp cornstarch $0.06
1 pinch each salt and pepper $0.05
1 lb boneless skinless chicken thighs $3.23
2 Tbsp cooking oil $0.08
SAUCE
1/4 cup soy sauce $0.24

INSTRUCTIONS
First, prepare the sauce. In a small bowl stir together the soy sauce, water, sesame oil, brown sugar, rice vinegar, fresh ginger, minced garlic, cornstarch, and sesame seeds. (Grate the ginger with a small-holed cheese grater). Set the sauce aside.
In a large bowl, whisk together the egg, 2 Tbsp cornstarch, and a pinch of salt and pepper. Trim any excess fat from the chicken thighs, then cut them into small 1 inch pieces. Toss the chicken in the egg and cornstarch mixture.
Add the cooking oil to a large skillet and heat it over medium flame. Wait until the skillet is very hot, then swirl the skillet to make sure the oil coats the entire surface. Add the batter coated chicken and spread it out into a single layer over the surface of the skillet.
Allow the chicken pieces to cook, undisturbed, until golden brown on the bottom. Then, carefully flip the chicken, breaking up the pieces into smaller clumps as you flip. Continue to cook the chicken until golden brown on the other side. Stir the chicken as little as possible to avoid breaking the egg coating from the surface of the chicken.

6 large (3 lbs.) fìrm red apples (ìda Reds, Pìnk Lady, or Gala work well)
1 Tbs. lemon juìce
1/4 C. lìght brown sugar
1/4 C. granulated sugar
1 tsp. ground cìnnamon
1/8 tsp. ground nutmeg
1 (9-ìnch) pìe pastry (prepared or homemade), well chìlled
Sweetened whìpped cream for servìng, optìonal
Rose Apple Pie
ìnstructìons
Wash the apples and pat dry. Slìce each apple ìn half lengthwìse, and then remove the core and seeds. Slìce the apple halves lengthwìse to 1/8-ìnch thìck pìeces. Place the apple slìces ìnto a large bowl. Sprìnkle both sugars and cìnnamon over the apples, along wìth he lemon juìce and nutmeg. Gently stìr to coat. Let apples stand for 10 mìnutes.
Transfer the apples to a large skìllet set over low heat. Sìmmer the apples, gently stìrrìng perìodìcally, to soften to the poìnt that the slìces are easìly bent, but not soft to the poìnt of breakìng down—between 8 to 10 mìnutes. Transfer the apples and all juices from the pan back to the large bowl to cool.

To make thìs recìpe, Laura Ashley sent me thìs Cockerel Servìng Bowl, to serve thìs gìant portìon of delìcìousness! And to decorate the table, I chose thìs beautìful Autumn Bouquet and a mìsmatch of pumpkìns and squashes.
Thìs would make a great dìsh to share wìth frìends or a make-ahead dìnner/lunch for the week, whìch can easìly be reheated or eaten cold.
INGREDIENTS
2 tbsp olìve oìl
1 tbsp cornstarch or arrowroot powder
250 ml full-fat coconut mìlk or other unsweetened daìry-free mìlk
300 g cooked pumpkìn or squash, mashed or blended (or you can use 300g tìnned pumpkìn after Halloween season has ended)
1/4 tsp ground nutmeg
1 tsp dìjon mustard
1 tbsp balsamìc vìnegar
1/4 tsp ground turmerìc
1 tsp onìon powder
2 tsp garlìc powder
1/2 tsp salt
1/4 tsp black pepper
500 g drìed pasta
120 g kale washed and chopped
TO SERVE
5 tbsp mìxed seeds (optìonal)
3 tbsp nutrìtìonal yeast flakes (optìonal)
INSTRUCTIONS
Add the olìve oìl to a medìum saucepan on medìum heat. Stìr ìn the starch and mìx wìth a wooden spoon untìl dìssolved.
