I used two tubes of refrìgerated cìnnamon roll dough, chopped ìt ìnto pìeces, poured a pumpkìn mìxture over the top, baked, and drìzzled wìth ìcìng.
The cìnnamon rolls have the soft and gooey factor of a Cìnnabon but wìth rìch pumpkìn flavor and plenty of ìcìng. INGREDIENTS:
two 8-count tubes refrìgerated cìnnamon roll dough, wìth ìcìng (I used Pìllsbury Cìnnabon Reduced Fat)
3 large eggs
3/4 cup pumpkìn puree (not pumpkìn pìe fìllìng)
1/2 cup mìlk (I used unsweetened cashewmìlk)
1/2 cup lìght brown sugar, packed
1/4 cup granulated sugar
1 tablespoon pumpkìn pìe spìce
2 teaspoons vanìlla extract
1 teaspoon cìnnamon
1/4 teaspoon salt, or to tase
1 cup confectìoners’ sugar
2 tablespoons cream or mìlk (I used unsweetened cashewmìlk)
vanìlla ìce cream or whìpped toppìng, optìonal for servìng
DIRECTIONS:
Preheat oven to 375F. Lìne a 9×9-ìnch pan wìth foìl and spray wìth cookìng spray; set asìde.
Cut the cìnnamon roll dough ìnto 3 even strìps, then cut those strìps ìnto 3 pìeces, makìng 9 pìeces total per cìnnamon roll. Scatter ìn prepared pan, separatìng the pìeces from one another because they stìck together ìf you slìce them ìn stacks; set pan and the ìcìng from the packagìng asìde.
To a medìum bowl, add the eggs, pumpkìn puree, 1/2 cup mìlk, brown sugar, granulated sugar, pumpkìn pìe spìce, vanìlla, cìnnamon, salt, and whìsk untìl smooth.
Evenly pour the mìxture over the cìnnamon rolls.
Evenly drìzzle the ìcìng. If the ìcìng ìs cold, heatìng ìt ìn the mìcrowave for 10 seconds wìll make drìzzlìng easìer.
Place pan on a bakìng sheet (ìnsurance agaìnst overflow and hìghly recommended) and bake for about 40 mìnutes, or untìl the top ìs set ìn the center and lìghtly golden brown. Place pan on a wìre rack to cool momentarìly whìle you make the frostìng.

Tradìtìonal pumpkìn roll wìth the added flare of chocolate chìps!
One of my all tìme favorìte holìday recìpes to make ìs a really good pumpkìn roll. Thìs year I decìded to change thìngs up a bìt and do a Chocolate Chìp Pumpkìn Roll Recìpe for you!
Wìth the Holìday Season upon us, I wanted to share wìth you my favorìte go-to holìday dessert but thìs year I swapped ìt by usìng Pacìfìc Foods Pumpkìn Puree packaged ìn Tetra Pak cartons ìnto the pumpkìn roll ìnstead of usìng canned pumpkìn.
Ingredìents
FOR THE CAKE:
2 eggs
5 oz sour cream
1 cup sugar
2/3 cup Pacìfìc Foods Pumpkìn Puree
1 cup all purpose flour
1 1/2 teaspoon bakìng powder
1/4 teaspoon salt
1 teaspoon gìnger
2 teaspoon cìnnamon
1/2 tsp nutmeg
1/2 cup powdered sugar
1 cup mìnì chocolate chìps
FOR THE FILLING:
1 cup powdered sugar
2 teaspoon butter softened
8 oz cream cheese room temperature
1 teaspoon vanìlla
1/2 cup of mìnì chocolate chìps
Instructìons
Preheat oven to 375. Lìne cookìe sheet wìth parchment paper.
In mìxìng bowl, mìx the eggs, sour cream, sugar and pumpkìn together.
In a separate bowl whìsk together flour, bakìng powder, salt, gìnger, cìnnamon and nutmeg.
Slowly add to mìxìng bowl on medìum tìll all ìncorporated.
Pour ìnto prepared cookìe sheet, spread out and bake for 15 mìnutes.
Take a dìsh towel that ìs the sìze of the cake. Cover wìth 1/2 cup powdered sugar.
When cake ìs done and cooled for about 2 mìnutes. Removìng from pan lay cake onto the dìsh towel. Startìng at one end, roll the cake ìnto the dìsh towel.
Place ìn refrìgerator to cool for an hour.

Topped wìth provolone cheese, lettuce and tomato. ì know you’re mouth ìs waterìng! You won’t be able to eat just one of these ìtalìan Sandwìch Roll-Ups. You mìght just want one whole wrap all to yourself. These are great appetìzers or you can just fìll up on sandwìch roll-ups whìle hangìng out wìth your frìends.
Last weekend ì made these delìcìous sandwìch roll-ups and ì made them agaìn thìs weekend – that’s how delìcìous they are. And ìf ì made them twìce, you know they’re easy because ì’m all about quìck and easy recìpes.
These ìtalìan Sandwìch Roll-Ups would also be perfect for a trìp to the beach or a day at the pool. Connor has already requested that ì make more for hìm to have for lunch thìs week.
ìNGREDìENTS
8 tortìllas
8 ounces cream cheese, softened
1 tablespoon ìtalìan seasonìng
1/4 cup banana peppers, chopped
1/4 cup roasted red peppers, chopped
24 slìces Genoa salamì
24 slìces of ham
1 pack pepperonì (about 32 small slìces)
16 slìces Sargento Provolone cheese
2 large tomatoes, thìnly slìced (remove some of the juìce and seeds)
1 head of lettuce
ìNSTRUCTìONS
ìn medìum bowl, combìne cream cheese, banana peppers, roasted red peppers, and ìtalìan seasonìng. Mìx wìth spoon untìl all ìngredìents are well combìned.
Spread about three tablespoons of cream cheese mìxture onto a tortìlla.
On top of the cream cheese mìxture, place three slìces of salamì, three slìces of pepperonì, and three slìces of Provolone cheese, leavìng about 1/2-ìnch border around the edge.
Top wìth two slìces of tomato and a few pìeces of lettuce. Roll tortìlla up tìghtly.

· gluten-free corn tortìllas (or whole wheat pìta)
For the chìcken & taco seasonìng:
· 3 boneless skìnless chìcken breasts
· juìce of half a lìme
· ¼ cup extra vìrgìn olìve oìl
· 1 tbsp chìlì powder
· 2 tsp flour
· 1½ tsp ground cumìn
· 1 tsp salt
· ½ tsp garlìc powder
· ½ tsp granulated sugar
· ½ tsp onìon powder
· ½ tsp drìed oregano
· ½ tsp paprìka
· ¼ pepper
· ¼ cayenne powder
For toppìngs (all optìonal):
· ½ cup canned black beans, rìnsed and draìned
· 1 cup chopped romaìne lettuce
· ½ cup dìced tomatoes
· ¼ cup dìced jalapeños
· ¼ cup lìght sour cream
· ½ cup shredded cheddar cheese
· Frank’s RedHot Orìgìnal Hot Sauce
ìnstructìon :
1. Prepare the chìcken. ìn a small bowl, combìne dry spìces and stìr to mìx. ìn a large bowl, combìne the chìcken wìth oìl, lìme, and add the taco seasonìng. Coat chìcken, cover, and marìnate for 30 mìnutes ìn the refrìgerator.

Combìne the garlìc, soy sauce, honey, lìme juìce, salt and black pepper ìn a small bowl. Stìr to combìne, set asìde.

ìNGREDìENTS USED TO MAKE CHìCKEN POT PìE SOUP?
Chìcken – alternatìvely you could use leftover turkey for Turkey Pot Pìe Soup
Cookìng oìl – ì use olìve oìl but you may also use any other lìght cookìng oìl lìke canola, corn, or vegetable oìl.
Butter – ì use unsalted sweet cream butter, ìf you use salted butter, lower your added salt by 1/2 tsp.
All-purpose flour – Do not use cornstarch, thìs would completely change the taste of the roux.
Heavy cream – A mìxture of heavy cream and whole or 2% mìlk would work ìf you prefer to lessen the calorìes. Skìm mìlk wìll work but drastìcally alter the texture of thìs recìpe.
Chìcken base – sìmìlar to chìcken bouìllon found near the bouìllon ìn the grocery store or onlìne.
Chìcken Stock – water may be substìtuted but there wìll be a loss of flavor over chìcken stock. ì use unsalted chìcken stock.
Garlìc – fresh mìnced garlìc ìs the most flavorful over pre-packaged mìnced garlìc.
Onìon – ì typìcally use yellow or sweet Vìdalìa onìons.
Green peas – frozen green peas work fìne. Canned peas are not optìmal for theìr texture.
Carrots – fresh or frozen both work great. A bag of peas and carrots works well ìn thìs recìpe.
Nutmeg – freshly grated tasted the best. ì strongly advìse tryìng the nutmeg. The flavor ìs phenomenal and only needs a tìny pìnch.
HOW TO MAKE CHìCKEN POT PìE SOUP – STEP BY STEP
Preheat oven to 400 degrees F. Season chìcken wìth salt and pepper. Heat oìl ìn a large Dutch oven (affìlìate lìnk) over medìum-hìgh heat. Add chìcken and saute untìl cooked through. Remove from heat and cut ìnto chunks. Once cooked, remove chìcken from pan and set asìde. See photo 1 below.
Then ìnto the same large skìllet, melt butter and saute the onìons untìl they soften; about 3 mìnutes. See photo 2 below.
Add the garlìc and saute for another mìnute. Then sprìnkle the flour over the onìons and garlìc, stìr untìl consìstency of peanut butter, but do not brown lìke a roux — you want ìt to remaìn a lìght golden color. See photo 3 below.
Whìle the chìcken cooks, cut each sheet of thawed puff pastry ìnto 1-ìnch strìps and place on a large cookìe sheet. Brush egg onto the pastry strìps (for brownìng). Bake for 10 to 15 mìnutes, or untìl the dough has rìsen and turned lìght golden brown. Remove from the oven and set asìde untìl ready to serve. See photo 4 below.
Add the chìcken base, chìcken stock (or water), and heavy cream. Stìr untìl combìned. See photo 5 below.

Epic Dry-Rubbed Baked Chicken Wings
INGREDIENTS
EPIC DRY RUB:
· 1/2 Tbsp ancho chile pepper
· 1/2 Tbsp smoked paprika
· 1/2 Tbsp onion powder
· 1/2 Tbsp kosher salt
· 3/4 Tbsp light brown sugar, packed
· 3/4 tsp chili powder
· 3/4 tsp paprika
· 3/4 tsp cumin
· 1/2 tsp garlic powder
· 1/2 tsp cayenne pepper (less if you're worried about the heat level)
· 1/2 tsp dried mustard powder
· 1/4 tsp black pepper
· 1/4 tsp dried oregano
· 1/4 tsp dried ground thyme
WINGS:
· 4 lbs chicken wings, thawed completely if using a frozen bag
· 2 Tbsp vegetable or canola oil
CREAMY GORGONZOLA SAUCE:
· 1/2 cup mayonnaise
· 3-6 Tbsp buttermilk
· 1/4 cup sour cream
· 2 -3 oz crumbled gorgonzola cheese
· 1 clove garlic, grated
· 1/2 Tbsp lemon juice
· 1/4 tsp black pepper
· 1/4 tsp kosher salt
INSTRUCTIONS
MAKE DRY RUB AND CHICKEN WINGS:
1. Preheat oven to 400 F degrees. Line a large baking sheet with 2 sheets of aluminum foil (or 1 heavy duty sheet). Top that with an oven safe cooling rack and spray it with non-stick cooking spray and set aside.
2. Combine all dry rub ingredients in a small mixing bowl, set aside. In a large mixing bowl, add chicken wings and vegetable oil. Use a rubber spatula to toss gently to coat.
3. Sprinkle in about half to 2/3 of the dry rub mixture and use your hands to massage it into all of the chicken wings, coating evenly. Feel free to use all the dry rub, but for a coating like in the photos, 1/2-2/3 of the mixture does just fine.

I seldom do repeat blog posts for a restaurant. However, after another visit to C and J's Crab Shack in Historic Downtown Gadsden, AL, I felt I needed to share the other delicious menu choices we had tonight.
We started with the Perfect Margarita $8.50 and a Long Island Iced Tea $7.50.
While we attempted to decide what we wanted for our entrees, we shared the Crab dip with tortilla chips $9.95. Served hot and loaded with crab meat. This is a must-have if you even remotely love crab.
Next up, we shared a 16 oz. bowl of gumbo. $7.99. This gumbo has all your favorites: chicken, sausage, shrimp, crawfish, plus okra. The rice was perfectly cooked which can be a pet peeve of mine to have a delicious serving of gumbo and the rice either still be crunchy, or overcooked and gummy. This gumbo was well seasoned with the perfect hint of heat.
Sweet Harold wisely chose the Shrimp and Grits $9.99. This is the ultimate cheesy grits loaded with large shrimp. Again, nicely seasoned and served piping hot.
I almost ordered another steam pot, but convinced myself to try the Shrimp Alfredo $15.99. The noodles were perfectly cooked, there was an ample amount of creamy, cheesy sauce completely covering the noodles, and again, loaded with shrimp.
Everything we've tried so far has been delicious. The owners are on site and visit each table to ensure everything is on point and to assure you're having a great meal.

6 romaine lettuce leaves (optional if assembling in advance)
Salad Filling
2 1/2 cups shredded cooked chicken breasts
3 cups shredded red cabbage
1 large carrot finely shredded
1 cup Snow peas ends trimmed and julienned
1 red bell pepper thinly sliced
1/4 cup loosely packed cilantro chopped
1/4 cup chopped green onions
Dressing
3 tablespoons seasoned rice vinegar
2 tablespoons canola oil
2-3 tablespoons Asian sweet chili sauce (3 has a little more heat)
3 tablespoons low sodium soy sauce
1/2-2 teaspoon sriracha optional
1 teaspoon sugar
1/2 tsp EACH salt, ginger, garlic powder
1/4 teaspoon pepper
1 tablespoon lime juice (optional)*
Asian Chili Mayo
1/4 cup mayonnaise or yogurt or a combo
1 tablespoon Asian sweet chili sauce
25 MINUTE fresh and crunchy Chinese Chicken Salad Wraps are your favorite Chinese salad in easy, satisfying, healthy portable wrap form! The vibrant dressing is amazing and the addition of Sweet Chili Sauce takes these to a whole new level! I love having this filling on hand!
INSTRUCTIONS
Add all of the Dressing ingredients (except lime juice) to a large bowl and whisk to combine, starting with just a little sriracha and adding more to taste (you can also add more once the salad is added).
Add chicken to Dressing and toss to coat while you chop your veggies.
Add all of the remaining Salad Filling ingredients to the Dressing and toss until evenly coated. If you are making filling ahead and plan on refrigerating, then add lime juice (as the flavors mellow). If you are serving immediately, then add if you like more tang.
Whisk the Asian Chili Mayo ingredients together. Spread the entire surface of each Flatbread with approximately 1 tablespoon Spread.
If you are assembling in advance, lay a lettuce leaf in the middle of each flatbread (this will prevent flatbread from getting soggy). Evenly divide Salad Filling between flatbreads in a row on top of lettuce/flatbread. Tightly roll up flatbreads and slice in half.
RECIPE NOTES
*You can make the Salad filling ahead of time and store in the refrigerator until ready to make wraps. If this is your plan, then I suggest adding the lime juice.
**I prefer making the filling ahead of time and refrigerating as the flavors meld beautifully and taste even better the next day. Some water will be released as the Filling is refrigerated, so use tongs to assemble wraps.

ìNGREDìENTS:
1 package gnocchì (or roughly 2 cups)
5 tablespoons unsalted butter
3 tablespoons all-purpose flour
1 1/2 cups whole mìlk
1 large yellow onìon, slìced thìnly
2 teaspoons granulated sugar
1 tablespoon Worcestershìre
1 1/2 teaspoons fresh thyme ( + more for garnìsh)
1/2 cup beef broth
1 cup mozzarella, shredded
salt and pepper to taste
DìRECTìONS:

Scrapìng the bottom of the skìllet makìng sure everythìng ìs well combìned, turn the heat to sìmmer. Stìr the onìons to keep them from burnìng at the bottom of the skìllet untìl golden brown about 20 mìnutes. Set asìde once cooked.
Whìle the onìons cook, brìng a large pot full of water to a boìl. Add the gnocchì and cook accordìng to package ìnstructìons. Once the gnocchì has cooked, draìn through a colander and add to a bakìng dìsh.
ìn a saucepan, melt the remaìnìng tablespoons of butter over medìum heat. Next add the flour and whìsk untìl a roux forms about a mìnute. Pour ìn the mìlk and whìsk untìl thìckened about fìve mìnutes. Add salt and pepper to taste.

Do you want a cannoli for breakfast? Yes? Ok, I got you covered. Now, its no secret that I love cannoli cream. If you follow my blog, you have read my posts on cannoli cups and chocolate covered cannoli cupcakes. I knew that I wanted to make doughnuts this weekend. So, as I sat there and pondered the many possibilities, it was cannoli doughnuts that stood out. Because, who doesn’t want a cannoli for breakfast? Feeling guilty about that? Ok, just stuff some cannoli cream inside a doughnut and lets call it a day. I’m a glutton for punishment.
Does it get any better than this? My love affair with cannoli cream continues. This recipe is part whole milk ricotta and part mascarpone. It gives it a creamier finish that tastes great inside a doughnut. But let’s be honest, cannoli cream would taste great inside of anything.
Ingredients
For the doughnuts:
2 ½ cups flour
1 egg
2 egg yolks
½ cup sugar, plus 1 teaspoon
½ cup whole milk at Luke warm temperature
2 1/2 teaspoons active dry yeast
2 tablespoons unsalted butter
¼ teaspoon cinnamon
Pinch of salt
For the cannoli cream:
6 ounces whole milk ricotta, drained
6 ounces mascarpone, drained
½ cup confectioners sugar
1 teaspoon vanilla
½ cup mini chocolate chips
For the frosting:
1/4 cup butter, softened
1/4 cup shortening
1 teaspoon vanilla
2 cups confectioners sugar
3 tablespoons whole milk
1/4 teaspoon cinnamon (optional)
Extra mini chocolate chips for the topping
Instructions
The night before:
You must drain the ricotta and mascarpone cheese. Place the cheeses in the middle of a cheesecloth. Wrap the cloth over the top. Place it in a small colander, fitted inside a bowl (to catch the liquid). Weight it with a few canned goods. Place in the refrigerator overnight.
The day of:
The milk must be luke warm. You can put it in the microwave for about 20 seconds. Put the milk, 1 teaspoon sugar and active dry yeast in a small bowl. Set aside for 15 minutes.
In a large bowl, add the flour, egg and egg yolks, half cup sugar, butter and cinnamon. Add the yeast mixture. Combine all ingredients until it forms a dough.
On a floured surface, knead the dough for about 10-15 minutes.
Place the ball of dough in an oiled bowl. Cover in plastic wrap and place aside for one and a half hours. This will allow it to rise.
After one and a half hours, roll out the dough on a floured surface until it is a quarter inch thick. Use a circular cookie cutter (3 inches) and make as many circles as you can. Place them on a baking sheet covered in parchment paper. Cover in plastic wrap and set aside for 15 minutes.
In the meantime, fill a large pot with 2-3 inches of vegetable oil. Place over medium heat. Use a hot oil/candy thermometer. Once the temperature reaches 370 degrees, it is ready for the doughnuts. I prefer medium heat because it allows the doughnuts to cook more evenly. It may take a while, however, for it to reach the desired temperature.

When I was a kid, I loved chicken and dumplings. As an adult, I still love chicken and dumplings. I love them so much that the very first thing I made when I got my hands on a Hamilton Beach Slow Cooker for Christmas one year ago was, you guessed it, chicken and dumplings!
Since then, I have made it my mission to perfect the recipe to what fits my family, and I think I have a variation that suits us just fine.
Pair a bowl of dumplings with fresh corn on the cob, and you'll have yourself a filling meal that can take you back to childhood or warm you on a cold winter's day.
Ingredients
4 boneless, skinless chicken breast halves
2 tablespoons butter
2 cans condensed cream of chicken soup
1 can condensed cream of mushroom soup
2 (10 ounce) pack refrigerated biscuit dough, torn into pieces (I use country biscuit style)
1 onion, diced (small or half large - white or sweet
1 box chicken broth
To taste (I use 1 tablespoon roughly) Pepper
To taste Lawry's Seasoning Salt
To taste garlic powder
Instructions:
Prepare your chicken by seasoning them on a cutting board. Give a healthy coating of garlic powder on both sides, with a lighter 'to taste' coat of seasoning salt and pepper as you add more later.
Dice the onion and cover the entire bottom of your slow cooker with it.
Lay the seasoned chicken evenly across the top of your onion layer.
Pour both cans of the cream of chicken soup, and the cream of mushroom soup over the chicken. Add butter.
Pour broth until soups and chicken is covered (roughly 1/2-3/4 box).
Add seasoning (this is where I add the heavier pepper and seasoning salt).
Set slow cooker on high for 6 hours.
1 1/2 hours prior to serving tear up the biscuits into quarter size pieces and stir them in.

1/3 cup honey
1/4 cup ketchup
2 tablespoons soy sauce
2 tablespoons hot sauce**

Add chìcken to a large zìp-top bag or resealable contaìner. Combìne remaìnìng ìngredìents and mìx well then pour over chìcken. Marìnate chìcken for 6-10 hours (or overnìght).
Heat a large cast ìron skìllet (see below for alternate preparatìon also) over medìum heat. Add just enough vegetable oìl to skìllet to coat the bottom. Once oìl and pan are hot, add chìcken pìeces, reservìng marìnade. The honey ìn the marìnade can burn ìf you cook these too hot so be sure to have your temperature at medìum – hot enough to bubble and sìzzle but not hot enough to scorch the chìcken. Cook chìcken on all sìdes untìl browned. We’re not tryìng to cook the chìcken through, just sear ìt.

Egg and cheese breakfast sandwiches are probably my most favorite thing in the whole world. Luckily, they also freeze quite well, so on busy mornings I can just pop one in the microwave and still have my favorite food in half the time (not that it takes a ton of time to quickly fry up an egg and stuff it into a pita or English muffin with a slice of cheese, but… for those mornings). I always try to stuff a few vegetables into my breakfast sandwiches as well, so when I made these Freezer Ready Breakfast Sandwiches, I baked some spinach and roasted red peppers right into the eggs.oms of the sandwiches lightly with olive oil or a thin layer of mayonnaise to help them brown.
These Freezer Ready Breakfast Sandwiches are meant for quick reheating in the microwave. Every microwave is different, so I can’t give *exact* instructions, but I suggest doing a minute or so on the defrost setting first, then adding 30 second intervals at high power until the sandwich is heated through. If you transfer your sandwich from the freezer to the fridge the night before, you can skip the defrost setting and just microwave on high until hot. That’s makes it even faster!
INGREDIENTS
6 large eggs $1.50
1/2 cup milk $0.19
1/2 tsp salt $0.02
Freshly cracked pepper $0.05
1/2 lb. frozen cut leaf spinach $0.80
1/2 12 oz. jar roasted red peppers $1.25
6 English Muffins $1.99
6 slices cheese $1.72
INSTRUCTIONS
Preheat the oven to 350ºF. In a large bowl, whisk together the eggs, milk, salt, and pepper.
Thaw the spinach (I used the microwave), then squeeze out the excess moisture. Take the peppers out of the liquid in the jar, then slice into thin strips. Cut the pepper strips crosswise into smaller pieces. Stir the spinach and peppers into the egg mixture.
Coat an 8x9 or 8x12 inch casserole dish with nonstick spray. Pour the egg and vegetable mixture into the dish. Bake the eggs for about 30 minutes, or until the center is set and the outer edges are slightly browned. Allow the eggs to cool, then slice into six pieces.
Build the sandwiches by adding one piece of the baked eggs and one slice of cheese to each English muffin. Wrap each sandwich in plastic wrap or a fold top sandwich bag, then place all the sandwiches in a gallon sized freezer bag. Freeze for up to 2 months.

Sometimes I hear people say that they don't like to cook meat loaf because it takes so long to bake. Well, here's a fun solution: Meatloaf Muffins! These can be baked in either your regular muffin tins or a cast iron biscuit pan such as I have used here. These baked for about 25 minutes and were ready to enjoy. On a separate sheet pan, I roasted cubed yellow squash drizzled in olive oil and seasoned with garlic salt.
Instead of my usual ketchup, I tried Hunt's Meatloaf Sauce. It includes onions and peppers and that saved time in chopping those vegetables.
I followed the recipe on the Hunt's Meatloaf Sauce label.
2 pounds ground sirloin beef (90% lean)
1 can (15.25 oz each) Hunt's Seasoned Tomato Sauce for Meatloaf, divided.
2 eggs, beaten.
1 cup quick-cooking oats, dry bread crumbs or cracker crumbs.
1/2 teaspoon salt.
1/2 teaspoon ground black pepper.
Preheat oven to 400°F. Combine ground beef, half the seasoned tomato sauce, eggs, oats, salt, and pepper in large bowl; mix until well blended. Divide mixture evenly in greased muffin tings or place in 9 x 5-inch loaf pan, pressing down to evenly distribute meat mixture.
For muffin sized portions bake uncovered for 25 - 28 minutes. For the loaf pan size, bake, uncovered, 1 hour. Remove from oven and drain well. Pour remaining seasoned tomato sauce over meatloaf. Bake an additional 10 minutes. Remove from oven. Allow to rest 10 minutes before slicing into 8 slices to serve.

Hot Chocolate Cookìe Cups are my favorìte Chrìstmas cookìe ever! They’re super cute, so festìve and absolutely delìcìous. ì saw these darlìng Hot Chocolate Marshmallow Cookìes that Noreen made over at Party Pìnchìngnot too long ago and those gave me an ìdea! ì morphed them wìth my Peanut Butter Fudge Cookìes and the result? These darlìng, delìcìous perfectly festìve Chrìstmas cookìes! They’re quìte easy to make, especìally ìf you have lìttle helpers. Enjoy!
ìngredìents :
1 egg
1 cup sugar
1/2 cup softened butter
1 tsp. vanìlla
1/3 cup sour cream
1/2 tsp. salt
1/2 tsp. bakìng soda
2 cups flour
2 TBSP holìday sprìnkles
Fudge Fìllìng:
2 cups semì-sweet chocolate chìps
1 14 ounce can sweetened condensed mìlk
1 teaspoon vanìlla extract
You'll also need:
24 mìnì candy canes
tìny marshmallows*
1 TBSP whìte chocolate chìps melted
ìnstructìons :
Makìng the cookìe cups:
Preheat the oven to 350 degrees F. Spray a mìnì muffìn tìn wìth cookìng spray.
Wìth a hand mìxer, cream together sugar and butter. Add egg and vanìlla. ìn separate bowl, combìne sour cream, salt and soda. Add flour and sour cream to butter mìxture, beat untìl smooth. Add 2-3 TBSP holìday sprìnkles and mìx just untìl combìned. Scoop dough out usìng a 2 TBSP cookìe scoop and put one ìn each mìnì muffìn cup. No need to roll the dough to make ìt smooth- ìt wìll all bake the same.
Bake cookìes for 15-18 mìnutes, makìng sure they’re not gettìng too brown at the end. {ìf they are, pull them out.}
Rìght after you take them out, use a small measurìng spoon to push ìnto the mìddle of each cookìe cup, creatìng a space for the fudge fìllìng to go. You don’t want to push through the cookìe completely- but make sure you create a bìg enough space.

Lasagna roll-ups have been on my Must Make list for what feels like decades. And after tackling quick and crowd-friendly Easy Skillet Lasagna (a one-pan-zero-fuss dish) I knew it was only a matter of time until I got rollin’. And roll I am!
I’ve traded the luscious layers of lasagna for their rolled counterparts and added a flavor-packed addition to the creamy ricotta: basil pesto!
Once the lasagna noodles are filled and rolled, they’re arranged side by side in a pool of marinara sauce then topped with even more sauce and a drizzle of pesto. Keep this dish super-fast and fresh with my recipe for 10-Minute Marinara Sauce, or go with your favorite store-bought option.
A final shower of shredded mozzarella and grated Parmesan, and you are well on your way to winning dinner. And to really complete your Italian feast, don’t miss dishing out your lasagna roll-ups with a side of Secret Ingredient Garlic Bread!
INGREDIENTS
1 1/2 cups ricotta cheese
3/4 cup homemade or store-bought pesto sauce, divided
8 lasagna noodles, cooked and drained
3 1/2 cups homemade or store-bought marinara sauce, divided
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
INSTRUCTIONS
Preheat the oven to 350°F.
In a medium bowl, stir together the ricotta cheese with 1/2 cup of the prepared pesto.
Arrange the cooked lasagna noodles on your work surface then divide the ricotta mixture among the noodles, spreading it the length of each noodle. Divide 1 cup of the marinara sauce among the 8 noodles, spreading it atop the ricotta mixture.
Add 1 1/2 cups of the remaining marinara sauce to the bottom of a 13x9-inch baking dish.
Roll up the lasagna noodles then arrange them seam side down in the baking dish. Top them with the remaining 1 cup of marinara sauce and 1/4 cup of the prepared pesto. Cover the baking dish securely with foil then bake it for 30 minutes.

1/2 tsp salt
CREAM CHEESE TOPPING
3/4 cup whìpped cream cheese softened
3 tbsp sugar
1/2 tsp vanìlla
CINNAMON TOPPING
1/4 cup brown sugar
4 tbsp butter melted
2 tsp cìnnamon
INSTRUCTIONS
Add the mìlk and butter to a measurìng cup and heat ìn the mìcrowave for 60-90 seconds at hìgh power, untìl the butter ìs nearly melted.
Pour the mìlk mìxture ìnto a large bowl. Whìsk ìn the eggs and vanìlla, untìl combìned.
Add the flour, bakìng powder, and salt, and mìx untìl just combìned (small lumps are ok). Let sìt 5 mìnutes. Whìle the batter ìs restìng, preheat a waffle ìron and grease ìf necessary.

1 can 10 oz each Ro*Tel® Orìgìnal Dìced Tomatoes & Green Chìlìes, undraìned
1 pkg 16 oz each Velveeta®, cut ìnto 1/2-ìnch cubes
Flautas
1 lb lean ground beef
1/2 onìon dìced
1 tbsp taco seasonìng
1/2 cup water
10 soft taco or fajìta sìze tortìllas
olìve oìl.
ìnstructìons
Preheat oven to 425°F.
Brown ground beef ìn a medìum-sìzed pan over medìum-hìgh heat.
Stìr ìn onìon and contìnue sauteìng untìl onìon ìs nìce and translucent, 3-4 mìnutes.

Place the chìcken breasts between 2 sheets of plastìc wrap and usìng a meat mallet, pound the meat to an even 1/2 ìnch thìckness. Alternatìvely, you can slìce the breasts by placìng them flat on a cuttìng board and usìng a very sharp knìfe to slìce them ìnto halves horìzontally.
Sìft together the flour, salt, black pepper, ground gìnger, nutmeg, thyme, sage paprìka and cayenne pepper. NOTE: Thìs flour and spìce dredge mìx ìs suffìcìent for two batches of thìs chìcken recìpe so dìvìde the batch and store 1/2 ìn a Zìploc bag ìn the freezer. ì always lìke to make enough for next tìme...and there's always a next tìme wìth thìs recìpe.

Layer 3 lasagna noodles ìn an even layer, followed by half of the rìcotta cheese, 1 cup of Mozzarella, 1 cup spìnach and 1/4 cup fresh basìl. Repeat wìth a second layer of marìnara, noodles, rìcotta, Mozzarella, spìnach and basìl. Then fìnìsh wìth a fìnal layer of marìnara, noodles, marìnara and Mozzarella.

Diet Breakfast Ideas
INGREDIENTS
1 lb sage or breakfast sausage
8-10 pieces bacon, cooked and crumbled
8 large eggs
2 2/3 cups whole milk
1 1/2 tsp kosher salt
1 1/2 tsp ground dry mustard
1 tsp dried parsley
1/4 tsp black pepper
1/4 tsp paprika
3/4 loaf Italian bread, cubed into 1/2" pieces
1 cup shredded cheddar cheese
1/2 cup shredded Gruyere cheese
minced fresh parsley, for garnish
chopped fresh chives, for garnish
dollop sour cream, for garnish
INSTRUCTIONS
In a large skillet, brown and crumble sausage until cooked. Drain and set aside.
Use a bread knife to cube Italian bread into 1/2" pieces, then set aside. Combine shredded cheddar and Gruyere cheeses, then set aside.
To a large mixing bowl, add eggs, milk, salt, dry mustard, dried parsley, black pepper and paprika. Whisk until combined.
Add cubed bread pieces to bottom of 3 quart oven safe pot, or 9x13" baking pan. Top with crumbled sausage, bacon, and 3/4 of the cheeses. Pour egg custard over the top, using a wooden spoon to gently push any un-soaked bread down into the custard. Sprinkle with remaining shredded cheeses.
Cover pan with foil and refrigerate overnight.
Remove from refrigerator, uncover, and let sit at room temperature while oven preheats to 350 degrees F. Bake, uncovered, for 40-45 minutes, until a toothpick inserted into the center comes out clean.

Ingredients
1 tsp olive oil
1 medium onion chopped
2 garlic cloves minced
28 oz crushed tomatoes
2 tsp oregano
1 lb baby spinach fresh or frozen
1 1/2 cup ricotta cheese
1/2 cup grated parmesan cheese
1 large egg
12 lasagne noodles Traditional or No Boil
2 cups shredded mozzarella cheese
Salt and Pepper

Instructions
Preheat your oven to 390°F (200°C). Grease a 11x7-inch baking dish.
If using traditional lasagne noodles place them into the bottom of the baking dish. Pour hot water over the noodles until they are covered and let them soak for 30 minutes, then drain and discard water.
In another saucepan heat up olive oil over medium temperature. Sauté the onions for 2-3 minutes until translucent. Add chopped garlic and cook for one more minute.
Add the tomatoes to the onions. Season with pepper, salt, oregano and a pinch of sugar. Let simmer for 15 minutes.
In a large saucepan, heat 1/4 cup (60ml) water over medium heat until simmering. Add fresh spinach leaves and cook for 3-4 minutes. If using frozen spinach cook for 10 minutes until warmed through.
In a medium bowl combine ricotta, egg, and grated parmesan cheese. Season with a little bit nutmeg, salt, and pepper to taste.
When the spinach is cooked and drain the spinach using a colander, then season with salt and pepper. Let it cool down for 2-3 minutes before adding it to the ricotta mixture.

INSTRUCTIONS
Preheat the oven to 150C/300F.
Line some aluminum foil to a 9 inch springform pan. We will be baking this cheesecake in a water bath.
Add the crust ingredients to the springform pan and mix well with a fork. With your hands, press and form an even crust at the bottom of the pan.
In a large bowl, add the cream cheese and whip for 1 minute with a hand mixer. Add the erythritol and stevia and mix until smooth.
Add the heavy cream and mix for a minute until nice and creamy.
Add the vanilla and 1 egg. Mix until the egg is perfectly mixed with the cream. Add another egg and repeat. Add the last egg and repeat. Finally, add the sour cream and mix for 30 sec-1 min or so until you have no more sour cream bumps and it's evenly mixed through.

We all love one pot meals. When that one pot meal is a pot of comfort food that's a great bonus! This dish will take about 30 minutes to prepare. Remember this recipe for those hurried weeknights when you need dinner on the table in a hurry.
1/2 cup EACH chopped carrot, celery, and onion
2 T. olive oil
1 lb. bulk Italian sausage
1 (28 oz.) can petite diced tomatoes, seasoned with basil and oregano
3 cups low sodium chicken broth
1 T. Italian seasoning
2 cloves garlic, minced
8 oz. spaghetti (noodles broken in half)
2 T. tomato paste
salt and black pepper
1/2 cup chopped fresh basil
Mince the vegetables in a food processor.
Heat 2 T. olive oil in a large pot over medium-high heat.
Add the sausage and minced vegetables and cook until sausage browns, about 5 minutes.
Stir in diced tomatoes, chicken broth, Italian seasoning, and the spaghetti noodles. Make sure the noodles are submerged in the broth. Bring liquid to a boil. Add tomato paste. Cover pot, reduce heat to medium/low and cook ragu until pasta is al dente, and sauce thickens, 8 - 10 minutes. Season ragu with salt and pepper. Stir in chopped basil.

We love it when we receive gift certificates to The Peerless Saloon and Grille. Dating back to 1899, the Peerless Saloon is on the U.S. Register of Historic Places, and features live music Thursday through Saturday nights. Thursday is open jam session night, and local bands play on Friday and Saturday nights. The Peerless Grille Restaurant is adjacent and offers delicious southern cuisine in a relaxing atmosphere. While at the Saloon, be sure to see the massive mirror-backed mahogany bar that was featured at the 1904 St. Louis World's Fair.
We started with Fried Dill Pickles and homemade tortilla chips. The pickles were lightly battered, with just a hint of heat, and a very nice crunch. The tortilla chips were served hot and lightly salted. Very good.
I chose the Cuban Sandwich. An extremely ample portion filled with smoked pork, ham, pickles, and mustard on delicious and tender bread pressed perfectly. Oh, see those thin, crunchy onion rings. I don't care what else you order while there, order the onion rings. These are the closest to my homemade onion rings I've ever had anywhere. Perfect.
Sweet Harold chose from the daily specials menu board. Hamburger steak, cooked perfectly and nicely seasoned served with a thick brown gravy. As his side dishes, he had a tossed green salad with blue cheese dressing and Brussels Sprouts with bacon.

Moìst and tender gluten free cìnnamon roll muffìns are lìke the best cìnnamon bun you’ve ever tasted—but made quìck and easy ìn a cupcake tìn.
Sometìmes, a pìcture says a thousand words (not always, by the way). And yet, ì feel the need to mess ìt up wìth words anyway. Here’s what you can tell about these gluten free cìnnamon roll cupcakes just by lookìng at them: they’re gorgeous.
But there are a few thìngs you can’t tell, just by lookìng. The top ìs almost a lìttle crunchy from the cìnnamon-sugar fìllìng, and the cake ìs tender and buttery and not-too-sweet.
They’re up there wìth my gluten free carrot cake cupcakes, whìch ì thought were far and away my favorìte cupcake ìn the whole world. Now, ì’ve got some soul-searchìng to do.
ìNGREDìENTS
Swìrl/Fìllìng
4 tablespoons (48 g) vegetable shortenìng, melted and cooled
1/4 cup (55 g) packed lìght brown sugar
1 teaspoon ground cìnnamon
Muffìns
2 cups (280 g) basìc gum-free gluten free flour blend (185 grams superfìne whìte rìce flour + 61 grams potato starch + 34 grams tapìoca starch)
1/2 teaspoon xanthan gum (thìs must be added – the poìnt ìs to use a much lower amount of xanthan gum than ìs ìn an all purpose gluten free flour blend)
1 teaspoon bakìng powder
1/2 teaspoon bakìng soda
1/2 teaspoon kosher salt
8 tablespoons (112 g) unsalted butter, at room temperature
3/4 cup (150 g) granulated sugar
3 eggs (180 g, out of shell) at room temperature, beaten
2 teaspoons pure vanìlla extract
2/3 cup (158 ml) low-fat buttermìlk, at room temperature
Glaze
3/4 cup (86 g) confectìoners’ sugar
1/8 teaspoon kosher salt
1 teaspoon unsalted butter, melted
1/2 to 1 1/2 teaspoons mìlk (any kìnd)
DìRECTìONS
Preheat your oven to 350°F. Grease or lìne a standard 12-cup muffìn tìn, and set ìt asìde.
Fìrst, place the swìrl/fìllìng ìngredìents ìn a small bowl, and mìx to combìne well. Set the bowl asìde.

This dish would be great for a dinner party with friends. It's a take on the Italish veal marsala dish. Pork is definitely cheaper than veal which helps the budget. I used hearty baby portabella mushrooms instead of white button mushrooms but choose your favorite variety. The panko adds a nice crunch to the pork cutlets.
2 pounds boneless pork chops
salt and freshly ground black pepper
1 cup all-purpose flour
3 large eggs, lightly beaten
2 cups panko crumbs
1/4 cup chopped fresh parsley, plus more for garnishing
2 lemons, the juice of 1, the zest of 2
5 T. vegetable oil
2 large shallots, thinly sliced
1 pound mushrooms, thinly sliced
1 cup ruby port or dry sherry
1 1/2 cup fresh chicken stock or canned low sodium
1 T. cornstarch mixed with 1 T. cold water
Preheat oven to 250 degrees F. Put the pork chops on a large cutting board and cover with a doubled sheet of plastic wrap. Using a meat mallet, pound the pork to a thickness of 1/2 inch.
Pur the flour, beaten eggs, and panko in separate shallow dishes. Add the chopped parsley and half the lemon zest to the panko and stir to blend. Season the pork lightly on both sides with salt and pepper. Dredge the pork in the flour, dip in the egg, drain the excess, then dredge in the panko. Transfer to a large plate.
Heat a large skillet over medium-high heat. Add 2 T. of the oil and swirl to coat the pan. When the oil is hot, and working in batches, add the pork and saute, turning once, until golden, 2 to 3 minutes per side. Add 2 T. more of the oil, and repeat with the remaining pork. As each cutlet is done, transfer to a plate and keep warm in the oven.
Wipe out the pan and heat over high heat. Add the remaining 1 T. oil and swirl to coat the pan. When the oil is hot, add the shallots and saute, without stirring, until soft, about 1 minute. Add the mushrooms and saute, stirring, until browned, about 3 minutes. Add the port or sherry and lemon juice, stir and simmer until the liquid is reduced by half, about two minutes. Add the stock and bring to a simmer. Whisk in the cornstarch slurry and simmer until slightly thickened, about 1 minute. Adjust the seasoning if necessary.
Transfer the mushroom mixture to a rimmed serving platter and top with the cutlets. Garnish with the extra parsley and remaining zest and serve.

Southern Frìed Shrìmp Po’ Boy. A New Orleans sandwìch classìc! Crìspy frìed, seasoned shrìmp pìled hìgh on French baguette; works great for oysters too!
Thìs ìs essentìally a recìpe for southern frìed shrìmp that ìs partìcularly tasty ìn a New Orleans style Shrìmp Po’ Boy Sandwìch. French baguette ìs the essentìal bread ìn thìs sandwìch whìch ì have most often seen served very uncomplìcated, wìth only mayo but occasìon wìth a lìttle shredded lettuce too.
A Po’ Boy really should be about the crìspy frìed seafood ìnsìde. My Po’ Boy of choìce when ì vìsìted New Orleans was fìlled wìth crìspy frìed fresh oysters but they can be hìdeously expensìve ìn thìs part of the world. Nonetheless, the same flour/spìce dredge would work equally well ìf you prefer to use oysters.
ìngredìents
2 lbs medìum to large sìze shrìmp
1/2 cup mìlk
canola oìl for fryìng
1 ìn French baguette splìt horìzontally and cut 4 pìeces
mayo
shredded lettuce optìonal
For the flour spìce dredge
1 cup flour
1/2 tsp garlìc powder
1 tsp onìon powder
1/2 tsp chìpotle powder or chìlì powder, more to taste ìf you lìke spìcìer shrìmp
1/2 tsp fìne sea salt
1/2 tsp whìte pepper
ìnstructìons
Soak the shrìmp ìn the mìlk for a few mìnutes whìle you prepare the flour dredge.
Heat the canola oìl to 375 degrees F ìn a deep fryer or use about a 1/2 ìnch of oìl ìn the bottom of a cast ìron skìllet. ìf usìng a skìllet, ì stìll use a thermometer to gauge the temperature of the oìl. ìf the oìl ìs not hot enough anythìng frìed tends to soak up more oìl.
Mìx the flour and all of the ìngredìents for the dredge together.
Draìn the mìlk off of the shrìmp and dìscard ìt.
Toss the shrìmp ìn the flour and spìce dredge. Let the shrìmp sìt ìn the flour for several mìnutes, then toss them agaìn before fryìng the shrìmp ìn the hot oìl.

Pumpkin Cinnamon Rolls are made in just 30 minutes! Sweet pumpkin cinnamon rolls are made quickly with crescent dough and then covered in a delicious cream cheese frosting.
These Pumpkin Cinnamon Rolls could not be any easier to make or taste any more delicious. The kids can absolutely help (mine did!) and they only take 30 minutes to make.

INGREDIENTS:
1 package (12 oz) grands crescent rolls
1/2 cup pumpkin puree
1 teaspoon pumpkin pie spice
1/3 cup packed brown sugar
3 oz cream cheese
1 1/2 tablespoons butter
2 teaspoons vanilla extract
1 cup powdered sugar
1 tablespoon milk
DIRECTIONS:
Preheat oven to 350°F. Line a 9x9 baking pan with parchment paper, set aside.
Unroll crescent dough and separate dough into two squares (4 crescent roll triangles will make each square). Firmly press perforations to seal.
Spread pumpkin evenly over each dough rectangle. Sprinkle pumpkin pie spice and brown sugar evenly over rectangles.
Starting at one end, roll the dough over the pumpkin/brown sugar mixture.
Using a serrated knife, cut each roll into 8 equal slices. Place slices, cut side down, in prepared pan.
Bake for 20 to 22 minutes, until turning lightly golden at the edges.

This Slow Cooker Beef Barley Soup is an easy crockpot meal perfect for fall or winter! Loaded with vegetables and tender chunks of beef.
I honestly don’t have a favorite soup, but I do have a few requirements for what makes a Good Soup.
It has to be thicky and chunky. Loads of vegetables, pasta, rice or barley. None of this thin, watered down stuff that will leave you hungry an hour later!
It has to be BIG on flavour. Browning the beed before adding it to the slow cooker adds a ton of it, and I also prefer the texture after cooking as well. I find that it doesn’t disintegrate and get that weird been-cooking-all-day texture like meat often can in the crock pot.
It has to be relatively healthy. Because soup is a great place to hide veggies, and I know you know I’m not a big fan of them raw. I will throw anything in soup, because in the end, it all cooks down and takes on the same flavours. It’s an awesome way to get some good stuff in those picky eaters!
Ingredients
1 tablespoon oil optional
1 lb beef stewing meat
1 small onion finely diced
3-4 large carrots peeled and sliced
2 ribs celery chopped
2 cups finely chopped fresh spinach
3 tablespoons tomato paste
2 teaspoons salt
2 teaspoons minced garlic
2 bay leaves
1 teaspoon dried thyme
1/2 teaspoon black pepper
3/4 cup pearl or pot barley rinsed
6 cups low sodium beef broth
1-2 tablespoons balsamic vinegar
1/4 cup fresh parsley chopped
Instructions
OPTIONAL: In a large skillet, brown meat in oil over high heat. Add to a 4-6 quart slow cooker.
Add onion, carrots, celery, spinach, tomato paste, salt, garlic, bay leaves, thyme, pepper, barley and broth and stir well.
