Easy Mint Hummus

 

Hummus is delicious on just about everything (pita bread, corn chips, vegetables… cookies), and luckily it is also super easy to make.

 

Mint Hummus

1 can chickpeas (reserve 1/2 cup of the liquid)

1/4 cup tahini, which is like a sesame seed butter (I use Sunland brand).

About a1/4 cup of fresh mint

1 teaspoon salt

1 teaspoon cumin

1/2 teaspoon pepper

1 clove of garlic

3 tablespoons of olive oil

the juice from one lemon

 

Method

 

With a food processor:

Combine all of the ingredients and 1/4 cup of the reserved chickpea liquid in a food processor and pulse until it is smooth (you may require a little more reserved liquid to reach the consistency you enjoy).

 

Or with a blender:

If you are using a blender, I would start by adding 1/4 cup of chickpea liquid, olive oil , lemon juice, and tahini and blend together. Gradually add the chick peas until it is smooth, then add the other ingredients and you should be good to go.

 

This recipe really is super easy. I plan on posting a more intricate version using dried chickpeas and homemade tahini in the future, but for the time being, this recipe is very convenient and yields a product that is all kinds of delicious!

This is a photograph from the sixth annual Donadea 50KM Ultramarathon which was held in Donadea Forest, Donadea, Naas, Co. Kildare, Ireland on Saturday 14th February 2015 at 10:00. The race was also an International Association of Ultrarunners Silver Label Event and the Athletics Association of Ireland (AAI) National 50KM Championships. There were 178 finishers.

Donadea Forest Park is situated in rural north Kildare and is approximately 640 acres in size. The amenities at the forest include good walking trails, a diversity of natural habitats, a walled stream, a large natural lake, and the ruins of Donadea castle. The Park is a designated National Heritage Area. The basic designation for wildlife is the Natural Heritage Area (NHA). This is an area considered important for the habitats present or which holds species of plants and animals whose habitat needs protection. It is a special occasion to allow the 50KM to be held in this environment.

I ran in the race - but my photograph doesn't appear here in your Flickr set! What gives?

 

As mentioned above we take these photographs as a hobby and as a voluntary contribution to the running community in Ireland. Very often we have actually ran in the same race and then switched to photographer mode after we finished the race. Consequently, we feel that we have no obligations to capture a photograph of every participant in the race. However, we do try our very best to capture as many participants as possible. But this is sometimes not possible for a variety of reasons:

 

     ►You were hidden behind another participant as you passed our camera

     ►Weather or lighting conditions meant that we had some photographs with blurry content which we did not upload to our Flickr set

     ►There were too many people - some races attract thousands of participants and as amateur photographs we cannot hope to capture photographs of everyone

     ►We simply missed you - sorry about that - we did our best!

  

You can email us petermooney78 AT gmail DOT com to enquire if we have a photograph of you which didn't make the final Flickr selection for the race. But we cannot promise that there will be photograph there. I made these using flanelette for pyjama pants. Used Scientific Seamstress Easy Fit pants pattern

Easy Asian Steak

 

1 1/2 tsp vegetable oil

1 lb blade or cross rib simmering steak

3/4 cup orange juice

3 tbsp EACH soy sauce and ketchup

1 1/2 tbsp gingerroot, grated

1/4 tsp dried chili peppers

1 1/2 tsp cornstarch

 

In a medium oven proof skillet (wrap skillet handle in foil if not oven proof) heat oil over medium high heat; brown steak, about 2 minutes on each side. Meanwhile, mix remaining ingredients except cornstarch; pour over steak. Remove from heat; cover and simmer in a 325 degree F oven for 1 1/4 hours or until tender. Remove steak to cutting board; place skillet over medium heat; mix cornstarch with 1 tsp water until smooth, stir into skillet and bring to a boil for one minute. Slice steak into think strips. Serve over wide rice or chinese noodles or fettucini. Toss noodles with sauce and top with steak.

 

Recipe Notes: While I do have an oven proof skillet I still moved the steak to a covered casserole dish and cooked it in that. Don't ask me why, but I don't like using my skillet in the oven. In the end this recipe was deemed okay. Mike thought the orange was a bit over powering and I had to agree. Also I had purchased two different steaks, one being much leaner than the other and we both agreed the steak with more marbling tasted better than the leaner cut. I figured I had pushed my luck enough with Mike I served this with mashed potatoes rather than noodles. Even still I don't think it was good enough to make our "regular rotation" cut.

Easy was very skittish and kept a good 15-20 feet from the man and I that fed her, being so close to a busy road in which she would run for when I got close, I gave up on catching her for fear of her getting squashed. Sometime in september I noticed signs of her being pregnant (which I assumed Diesel was the father) made me worried. I started noticing a woman make several attempts at capturing her made several attempts but in the end had no luck. Easy had speed and smarts which I believe she gained from surviving on the streets. October 9, 2017 wildfires razed sections of my hometown Santa Rosa, California. When the smoke cleared lives were lost and properties in which family, friends and co-workers built memories had leveled or damaged beyond repair. I am very thankful my family and closest friends were unaffected. That day and rest of the week was surreal, it might be cliche but it felt like an event on the national news or rather than my hometown that I've lived since 1987. As an amatuer photographer who statred shooting in early 2017 I took my camera around my immediate neighborhood not wanting to go to far as my family had our pets and most valuable belongings ready to go. I started to make my way back when I noticed large embers falling around me on my way home stopped by the easement and was informed Easy had her litter a couple days previous.

In the eighteenth century, easy chairs (often called “wing chairs” today) were usually found in bedrooms for the use of the aged or infirm. Thick padding and soft down cushions provided comfort, and the wings gave protection from drafts. This example, with its curved front seat rail and flared arms terminating in C-scrolls, exhibits the classic Philadelphia form.

The Santan Freeway Loop 202 is in the southeast valley of Phoenix. Onsite Insite offers the only billboards along a 23-mile stretch of the Santan Freeway Loop 202. This billboard is between I-10 and the Price Freeway Loop 101 in Chandler, AZ.

 

Waiting to cross a road in Vilnius, a biker suddenly came into view. A quick snapshot was all that could be taken of this easy rider.
