The theme this week, seasonal sweets, prompted me to create some treats from the left-overs after I had marzipanned the Christmas cake.

For Macro Mondays - Candy

One of my simple/guilty pleasures - Ghirardelli dark chocolate squares. My favorite are filled with either raspberry or mint. The chocolate square measures 1.25" both ways. HMM, everyone ! !
One of my creations, Almond log with sponge made from roasted almonds, filled with Greek creme Patisserie covered with Vanilla buttercream then bathed in dark coverture!
I felt we all need some sweetness for the weekend:-)
Part of the chocolates on Christmas day,
The large ones are filled with chocolate buttercream and caramel in the middle, the round ones in the center are semi sweet dark chocolate solids, next to them in a circle are the cordials filled with fondant and cherry in the middle,
The ones with sliced Almonds are filled pure almond paste and dipped into a bath of dark chocolate.

I made these pure almond macaroons Sunday morning after I got home from work, 6 dozen for a birthday party and some for my son to take with him to the city,
His Birthday was the 21 and 2 other family members 26 and 27.
Ganache filled, Dark chocolate infused with Kirschwasser Cherry brandy.
Note, not related to coconut Macaroons, closer to Italian and French Macaron but bit more dense with more almond taste.
Over the years I have made Cannoli dipping the entire shell,
drizzle with chocolate the shell, but the most effective way keeping the Cannoli cream fresh is dipping the ends in chocolate, that seals it,
dark chocolate is my preferred.

We had one amazing Christmas with the whole family,
The desserts displayed on my bakers bench in the kitchen was all for the day, the ones on the tupperware are extra,
Everyone loved them and took home a plate or two full of goodies,
Names of desserts on tags.

The Ritter Sport chocolate bars are the best engineered chocolate bar and wrapper (that I know of). A square bar with a 4x4 grid of thick chocolate in a wide variety of flavors and fillings. Grasp the end row of 4 square closest to the wrapper’s back seam and break off the row at the same time the wrapper’s seam opens. This bar is my favorite, dark chocolate with hazelnuts!

Vasilopita "Βασιλόπιτα in Greek" is a New Year's Day bread or cake in Greece and many other areas in eastern Europe and the Balkans, This is traditional Greek sweet bread called Vasilopita. It is a custom of ours to bake this bread and cut it on New Years day with all the family and friends, it is the same bread as our Easter bread with the only difference we put a coin in this one for good luck, who ever finds the coin has good luck for the whole year.

The golden chip sparkles in the afternoon sun amongst all those ordinary chocolate chips...which didn't last very long! For Macro Mondays "Chip(s)" theme. HMM!
My Granddaughter enjoying her work,
8 Years ago Eleni and her brother helped me make a batch of chocolate chip cookies,
we always did something together, now the phone took over:-)
These Petit fours have bottom layer cookie with Raspberry jam, second layer almond cake filled with coffee infused Fudge, another layer of almond cake dipped in Dark coverture chocolate,
Flowers are made with gumpaste, and shaped with a toothpick,
*All these are made by hand no molds.
Black bottom Macarons was something that I came up with,
The crunchiness of the chocolate cookie adds to the delicious almond Macaron top with dark chocolate drizzle,
Filled with Raspberry jam that is mixed with almond paste,
I was pleased when everyone had more than one.
a bit of white chocolate with peppermint sprinkles covering a dark chocolate base. A taste of winter!
Made these Almond desserts on Labor day morning for the barbecue at my brother in laws,
Very quickly made with the main ingredient Almond paste.
Baked then filled with mixture of Raspberry jam mixed with almond paste.

I don't normally (actually ever) arrange my candy, but I thought this would be a fun project. It included the task of eating some of the imperfectly formed M&Ms. It was a tough job, but someone had to do it. Yes, I know American chocolate cannot hold a candle to European chocolate, but we Yankees make do.

My favourite, as a self-confessed chocoholic, is plain dark chocolate - 75% at least! 😊
But it isn't easy to shoot really dark chocolate ... so I decided to cut up the small batons and make a miniature chocolate wall to capture the textures. And of course that lead me to Pink Floyd and "Another brick in the wall". This first part is my favourite of the 3-section album

We don't normally keep candy in the house, so, since I needed to buy something for this theme, I decided on something different. I found this Australian candy in the international area of our local grocery market. However, it was a good reason to also buy peanut M&Ms (my husband's favorite), and dark chocolate almonds (my favorite). We almost ate all the candy before I could get it photographed...oops! :-)
