Besides the assortment of cured meats by Crown Salumi (van Gameren’s retail salumi business) and Hogtown Charcuterie, the restaurant also serves cured meats from Spain including much celebrated Jamon Iberico ($25/40g).
Salmon, which has been cured.
The cure was made from the zest of two limes and a lemon minced up finely, with 1/4 cup of sea salt, a couple of tablespoons of sugar and about a teaspoon or so of freshly ground white pepper. The salmon was coated in the mix, with the extra piled on top; then left in the fridge for about 90 minutes. After that, wash the salt off, and dab off any moisture.
There is barbecue in this salmons future!
This is our den. It's become more of a dump room, as you can see. We lock the cat here at night, so there is cat food and litter in the closet. Plus I use it to store all of my knitting supplies. And our unused furniture is here. And we have the TV here.
What i'd like it to be is a cozy, friendly place to hang out. The desk is too small for me (something longer would be better) the unused furniture and old TV need to go, and I need to get rid of the boxes. How I do that is the main question. I suspect a sofa or comfy chair might be necessary.
