Boneless shortrib cubes cured in root beer spices, cooked sous vide at 190 degrees for 5 hours in beef broth. Root beer sauce paured over top. Paired with carmelized fennel and vanilla-scented potato puree. Recipe heavily modified from Grant Achatz of Alinea.

Arturo got the puffin feast. First course was this cured style. It was very gummy and fishy tasting. That's cuz it's a fat little bird that eats a lot of fish.
The winning runner crosses the finish line at yesterdays, Cure Coats Disease 5k in Brisbane. A mixture of serious Dolphin South End Runners and Cure Coats supporters/walkers took part in this annual event. (more info coatsdiseasefoundation.org/)
