Lilian and David's Cumin-spiced Lamb Spring Rolls
Spiked with ground cumin (孜然or 阿拉伯茴香) giving a nice spicy kick to the lamb mince.
This photo has been shot in the Aswan zouk. Is quite a classic shot of those kind of markets, maybe the difference is that I have used an off camera flash to bring up the texture and the colors.
2 cups chicken broth
1 lb ground turkey, browned
1 can (drained) or 16 oz frozen corn (thawed)
1 15oz can black beans (drained)
1 1/2 cups Salsa (choose your heat level)
1 cup chopped onion
1 4oz can diced green chiles (drained)
1/2 tsp garlic powder
1 tsp ground cumin
1/4 tsp chili powder (or to taste)
1/4 tsp dried oregano
salt and pepper to taste
Combine chicken broth, turkey, corn, black beans, salsa, onion, chiles, garlic powder, cumin, chili powder and oregqano in a medium pan. Bring to a boil.
Reduce heat to medium and cook for 15 to 20 minutes. Season with salt and freshly ground black pepper.

Heres the recipe I used
1 pound ground beef or lamb (I used beef)
2 tsp sea salt
1 tsp ground fennel seed
1 tsp ground cumin
1 tsp ground ginger
1 small red onion finely chopped
4 large cloves of garlic minced
Roll into 2 ounce balls and brown in canola oil.
These baked fries will satisfy even the most dedicated fried-food lover.

Friend gave me a recipe for Potato Curry from a vegan blog so I made it for lunches this week. Were I to make it again, I'd probably leave out the garam masala. I've really decided I don't like the tongue numbing that you get from all the cloves in garam masala. Maybe its just this particular one I have is heavy on the clove...
My change on the recipe is I put in frozen peas instead of canned, because I don't like canned peas.
Potato Curry
4 russet potatoes, peeled and cubed
2 tablespoons canola oil
1 medium yellow onion, diced
3 cloves of garlic, minced
4 teaspoons curry powder
4 teaspoons garam masala
1 inch of ginger, grated
2 teaspoons cumin
1 1/2 teaspoons cayenne pepper
2 teaspoons salt
1 can diced tomatoes
1 can of coconut milk
1 can garbanzos, rinsed and drained
1 can peas
To get started, put the cubed potatoes in a pot, fill with just enough water to cover the potatoes, and boil until soft (about 20 minutes). Drain and set aside.
Warm oil in a skillet over medium heat. Stir in onion and garlic, and cook until the onions are soft and translucent. Stir in curry powder, garam masala, ginger, cumin, cayenne and salt. Cook for 1 or 2 minutes, stirring. Mix in potatoes, garbanzos, and peas, then stir in the tomatoes and coconut milk. Simmer 5-10 minutes.

I'm partial to a type of parsley called "cilantro," and since I'm not one of the minority few whom think it tastes like soap, I have found that it adds distinctive character to salsa -whether for dips or as a condiment- along with cumin, another favorite herb, which has a distinctive "Mexican" aroma. For many, it is "THE" aroma that, once smelled says "I'm a Mexican dish!"
Of course, cumin isn't limited to Mexican dishes, and is grown and used worldwide in dishes from cultures as diverse as, and ranging from Middle Eastern, French, Mediterranean, Spanish, Indian, even Oriental.
But this is about CILANTRO!
Candied Veal sweetbreads, cumin-marinated sweet corn, Ice wine-lime gelee, golden pools of toasted viscous caramel, micro cilantro, popcorn. Part snack, part palate whetter, crisp thin sugar crusts coated creamy sweetbreads, while a corn pudding acted as a light binder for all the loose elements of this sweet-savoury course. I thoroughly enjoyed the tiny punch of heat that made its way through one of my favourite flavours: roasted sweet caramelized sugar. Then there was the contrast of refreshing pools of ice wine-lime gelee and cool corn kernels to the crisp and full-bodied sugar elements and tongue tingling cumin. Talk about awesome pairing.
