The recent hot and steamy summer days have meant lots of salads for dinner, and meals that don't add any more heat to the kitchen! No hardship, it's an absolute delight to eat all the fresh lettuces, radishes, carrots, etc. that are currently in season and for sale at a farmer's stand just up the road. But a late night at work and an unusually cool evening, left me wondering what to make, and it seemed like a good night for soup. Fresh corn off the cob, sweet new potatoes, and fresh spanish onions, with a touch of homemade chicken broth, milk, and the smoky heat of some chipotle flakes. Yumm!

Was a domestic goddess and made dinner for the husband before going to sleep today. He and I Iove the Corn Chowder we get at Duke's Chowder House here in Seattle. I'm on a quest to replicate it.

 

This soup is a failure in it tastes nothing like Duke's soup. It's spicy, but a little bland in flavor. It's a good starting place, but needs a lot of improvement.

I was looking for an excuse to cook some quinoa and found this recipe for some Quinoa Corn Chowder and thought I'd try it.

 

It was good, but I had some issues with it:

 

* It obviously turned out too thick, so I'd use less quinoa and/or more stock

* I made it on the crock pot (on low) so the potatoes never got hot enough to really break down - as you can see in the photo - and I would have preferred that to potato chunks

* I miss the creaminess of corn chowder that comes from, well, cream. I'm not sure what the combinatino of quinoa AND cream would be like, but I'm going to try it next time anyway.

Still learning to cook.

Trying out some new recipes for low fat meals.

But I can never stick to a recipe so carrots and asparagus sneaked in through the back door.

The milk is semi-skimmed and the ham is low fat. The oil is Flora Cuisine.

Fresh off the stove, oyster chowder made with famed Clausen Clausen Silver Point Oysters, from Coos Bay. I'm lucky: I live just a few miles from Clausen's shop and processing facility, on the banks of the Coos Bay. Better restaurants in places like SF and NYC offer Clausen's oysters.

This one was really good.

 

This place unfortunately didn't have chips but instead "fries" and "wedges" which were both exactly what the mean in American.

My absolute favorite thing to eat at Disneyland! :-)

Former Submarine Miners' Depot. Mines were attached to cables that ran underwater across the harbour - to be detonated if an enemy ship entered the harbour.

This taste great and I love this :D

Dinner at the Llanerch Diner started with a cup of clam chowder. It was kind of halfway between Manhattan and New England style.

Creamy light, satisfying and chocked full of seafood - just cooked mussels, clams and other gently poached to cooked fish. Not at all heavy, hearty; simple.

 

You can't see the bevvy of seafood below, but there is.
