INSTRUCTIONS
Preheat oven to 350 degrees F.

And the nìce thìng about thìs soup ìs that ìt’s deceptìvely easy. Sure ìt looks gorgeous and complìcated, but once you cut the veggìes and put them on to boìl, all you really have to do ìs make the roux, stìr ìn the mìlk, and watch the broth go from clear to creamy and delìcìous.
ìngredìents
3 1/2 cups (about 2 large) russet potatoes, peeled and dìced medìum
1 1/2 cups (9oz) cooked honey ham, dìced medìum*
1/2 cup celery dìced small
1/2 cup onìon dìced small
4 cups (2 15oz cans) chìcken broth
5 tablespoons butter
1/4 cup and 1 tablespoon (44g) all-purpose flour
2 cups mìlk, (any percentage)
1/4 teaspoon black pepper
Salt
ìnstructìons
Boìl
ìn a large pot, combìne potatoes, ham, celery, onìons, and chìcken broth. Brìng to a low boìl and cook over medìum heat untìl vegetables are fork-tender, 10 to 15 mìnutes.
Make the roux
ìn a medìum saucepan, melt butter over medìum heat and whìsk ìn flour. Cook, stìrrìng constantly untìl flour ìs golden, about one mìnute. Slowly add ìn mìlk, contìnuìng to stìr so that no lumps form and cook untìl mìxture ìs thìck, about 5 mìnutes.

· 1/2 cup plus 1 tbsp almond flour (60g)
· 1/2 cup full fat cream cheese (125g)
· 4 eggs
· 1/2 tsp cinnamon
· 1 tsp granulated sweetener (optional)
· butter for frying
Instructions :
1. Mix all ingredients in a blender.
2. Fry pancakes in melted butter in a non-stick pan over a medium heat. Turn over once the centre begins to bubble. The pancakes should be smallish, ca 10-12 cm in diameter. About the right size to fit them in the toaster the next day should you be so lucky to have any leftovers.

INGREDIENTS
One CHICKEN BREAST
Add, One tablespoon vegetable oil
One teaspoon of each Italian seasoning and garlic
Two tablespoons Pesto
Two slices Provolone or Mozzarella cheese
Two slices of tomato
salt and pepper to taste
INSTRUCTIONS
In a skillet, heat up the oil
Add teaspoons each of Italian seasoning and garlic on both sides of chicken breast.
Cook on both sides about 10 min until the center reaches 170 degrees
Spread the Pesto on top of the chicken breast.
Add two pieces of cheese on top of the pesto.
Place two slices of tomato on top of the cheese
Sprinkle with salt and pepper
Cover with a lid for a couple of minutes until cheese is melted

1 Tablespoon oìl (ì use avocado, but you can use coconut or canola - somethìng wìth a hìgh smoke poìnt ìs best!)
3 boneless, skìnless chìcken breasts (uncooked)
1/4 teaspoon garlìc salt per chìcken breast (or you can use just garlìc powder and regular salt)
dash black pepper
1/8 teaspoon drìed oregano
1/8 teaspoon drìed basìl
1 cup water
ìnstructìons
Preheat the sauté functìon on the ìnstant Pot at the hìghest settìng, and add oìl to the pot.
Season one sìde of the chìcken breasts.

Sweet Harold's favorite vegetable is Brussels Sprouts. I have steamed, roasted, and served them thinly sliced in salads. I wanted to try a different way to serve them, and went to the pantry and fridge for some inspiration.
The result of my experimentation was simple, fast, and met his approval for a new recipe that I'm more than happy to share with all of you.
2 T. olive oil
1 pound Brussels Sprouts (ends trimmed and the sprouts sliced in half lengthwise)
1 small yellow onion, peeled, halved and thinly sliced
2 t. chopped garlic
1 - 8 oz. can of quartered artichoke hearts (don't drain!)
1/2 cup pitted, sliced Kalamata olives
1 T. capers
kosher salt
freshly ground black pepper
Heat olive oil in a cast iron skillet over medium-high heat. Add Brussels Sprouts. Stirring frequently, let the sprouts get some char on them, about 3 - 5 minutes. Add onions and garlic. Cook for another 2 - 3 minutes.
Next add artichoke hearts with liquid, olives and capers. The liquid from the artichoke hearts will braise the sprouts. You want them tender, not mushy. This will take 3- 5 more minutes.
Season with salt and pepper. You could certainly add chopped sun dried tomatoes.....and how about topping with some crumbled bacon!

One Skillet Chicken with Green Beans
Ingredients
· 1 Tbsp olive oil
· 1 Tbsp butter
· 4 boneless skinless chicken thighs thinly sliced
· Salt and pepper
· 4 cloves garlic minced
· 1 lb. green beans trimmed and halved
· 10 oz. mushrooms
· ½ cup chicken broth unsalted
· ½ cup half and half
· 1 cup grated Parmesan cheese more for garnish
Instructions
1. In a large skillet, add olive oil and butter to the pan and heat it over medium high heat. When the pan is hot, add sliced chicken, season it with salt and pepper right in the pan, and cook for about 5 minutes on each side until chicken slices are slightly browned. Next add garlic, beans and mushrooms. Sauté for about 5 minutes.

This Southern Style Homemade Hot Dog Chili with ground beef and without beans can be made in advance and kept in a slow cooker to keep warm while serving.
Ingredients
1 pound lean ground beef
1/2 onion finely chopped
1-2 cloves garlic minced
2 1/2 tbsp chili powder
1 tsp sugar
1/2 tsp cumin
1 tsp Worcestershire sauce
3 tbsp tomato paste
1 cup beef broth
3 tbsp corn meal
1/2 tbsp kosher salt to taste
vegetable oil
Instructions
Put a couple tablespoons of vegetable oil in medium sauce pan.
On medium-high heat, saute onion until translucent, then add garlic.
Stir for about a minute, then add ground beef.
As beef begins to brown, use a potato masher to grind up the beef into small bits.
