The wreck of the Cherry Venture, April 1994, which has since been removed (2007). On this weekend, we were amazed to see a man selling ice creams at this isolated location! The beach is popular with 4WDs but we were walking.
The Cherry Venture was a 1600 ton cargo ship. It ran aground on Teewah Beach in South East Queensland due to a storm, on the July 6, 1973 and remained on the beach for 34 years until it was removed in early 2007.

I had some leftover pâte sucrée and almond paste after making some whiskey pear tarts for Christmas this year, and decided to use it up for dessert tonight. We happened to have some cherries in the fridge, and I figured the cherries would pair well with the almonds, especially after introducing the two to a little vanilla. So, cherry-almond tartlets, which I had with my wife and daughters as a New Years Eve dessert with some tea (we're being bums and staying in this year).
Since I had the opportunity to shoot with natural light, which I don't get to do as often as I'd like, I set these up in front of the dining room window, with white bounce cards to front left and front right, and using one of my half-sheet pans to bounce a little light from above as well. My wife preferred a wider crop that shows more of the plate and the pedestal, but I liked the closer-in crop with more of the frame occupied by the tartlets. I'm pleased with how this came out.
The crust is a pretty straightforward pâte sucrée (flour, butter, and sugar, bound with egg, similar to this one). I had enough left over to line six 3" tartlet molds. Here's the rest of the recipe.
Ingredients
For the macerated cherries
20 cherries, pitted and halved
2 tbl. sugar
2 tbl. Luxardo Maraschino liqueur
For the almond cream filling
4 oz. almond paste
2 oz. unsalted butter
1 large egg
2 tbl. corn starch
1 tbl. Luxardo Maraschino liqueur
1 tsp. vanilla extract
For the glaze
1/4 c. water
1/4 c. sugar
1 tsp. cornstarch
1 tbl. Luxardo Maraschino liqueur
1 tsp. vanilla extract
Directions
One day before, toss the pitted halved cherries with the sugar and Luxardo and allow to sit overnight.
Preheat your oven to 375°F.
Line six 3" tartlet pans with pâte sucrée. Dock the dough, line with parchment and pie weights or dried beans, and bake for 10 minutes until the edges just begin to brown. Remove from the oven, remove the parchment and weights, and return to the oven until evenly golden and set, another 12-15 minutes. Remove from the oven and allow to cool. Leave the oven on.
While the shells cool, cream the almond paste and butter together in a stand mixer fitted with the paddle attachment until light and fluffy, 3-4 minutes. Add the egg and continue beating until combined. Sprinkle the corn starch over the surface of the mixture, and start beating slowly. Pour in the liqueur and vanilla and beat until just combined.
Divind the almond cream evenly over the tartlet shells and smooth it out. Add 6-7 cherry halves to each tart, pressing them gently into the almond cream. Return to the oven, and bake for 20-25 minutes until the almond cream hass puffed up and turned evenly golden brown.
While the tarts cool, prepare the glaze. Heat the water and sugar in a small pan until it comes to a boil, and allow it to boil for about 1 minute to form a simple syrup. Make a slurry of the corn starch, liqueur, and vanilla, and whisk that into the syrup. Brush lightly over the tops of the tarts.
Serve at room temperature of slightly warmed. A little whipped cream or a small quenelle of good vanilla ice cream would be a nice touch, possibly with a sprinkle of sliced almonds.
