Well, not cheesy enough really. It looks beautiful, is nice and soft if you can believe it ... and of course the jalapeños in there pack a punch. But, still not enough cheesiness for me....
It's a one day sourdough loaf. I think maybe why it is soft..plus..it really pouffed up .. but, It took alllllll day....
and, a fair bit of babysitting. Plus I made my life harder by mixing up a big enough batch of dough for two loaves ... and, I didn't want two plain ones... which meant grating cheese and chopping jalapeños... my hands were on fire.Yes, I know I could wear gloves if I had a pair around that were thin enough so that I could actually feel what I was doing...but, no... had to soldier on without. Then, of course I had to have it in two separate bowls...mix it differently, etc... I put the inclusions in after the second round of stretch and folds.... that was a ... hm...mmm ...let me think what it was. It was hard work dammit !! Just try including stuff in an already resistant dough.... there was a lot of trial and error and folding and squeezing and ..well, a lot of swearing too... but, I got it.
By the time it had risen it was way ahead of the plain guy....due to the 'vigour' with which I had to 'include' stuff I'm sure, as well as a bit of extra moisture from the jalapeños even though they were well drained and patted dry...
All told, I'm ecstatic with the loaf.... with the exception of it not tasting quite cheesy enough for me. I bet I could have sprinkled some grated cheese on top for the last few minutes of browning with the lid off the pot.
I purposely scored only deep enough to expose a nice belly ..no ear required for me. I prefer an earless loaf.
Oh, and.... the pot!! I do not own an oval Dutch Oven... and, decided batards are a better shape for slicing and using so had to get inventive. I was going to use a large casserole but, instead decided to try my turkey roasting pan.
It was perfect!!
Two layers of parchment ... middle shelf.....thin as the pan is compared to a Dutch Oven .... it turned out beautifully....
Really. Cheese in and on it.
You probably can't tell, but it is constructed using 20 dough balls..one layer lining the pan, then paint with butter, and layer the next dough balls. Then, butter and let rise in pan and finally sprinkle with cheese and bake. Oh, YUM!
I'd like to try it with just forming a regular loaf.. but don't know if the cheese would hang on quite as well during baking .. maybe I could slash up the top a bit...but if it doesn't work... back to dough balls because the taste is so worth it even if it is a bit fiddly.
Sage, oregano, basil, pepper, and of course, more cheese and plenty of sauteed onion .... probably the best tasting bread I've ever made. We've already devoured almost the whole thing... although, thankfully I did give about a 1/3 to a neighbour.
Well, it reminds me of one anyway.
This is what the underside of my sourdough loaves looked like. Because I baked them in my turkey roasting pan.
Even with a few layers of parchment they got browned in the pattern on the bottom of the pan. Quite cute.
If I bake any more bread this week...I have to give it away...there is just no more room in the freezer for any more 'stuff' ....

Mushroom usually known as common earthball, but I prefer to call it "pão-de-queijo" due to its resemblance to a brazilian cheesebread.
Não tem como olhar e não pensar em um pão-de-queijo. Mas, é na realidade um cogumelo da espécie "Scleroderma citrinum", até onde pude descobrir e nem sei se é comestível.
INGREDIENTS:
Soup
3 large onions, sliced (3 cups)
3 tablespoons margarine or butter, melted
3 tablespoons all-purpose flour
1 tablespoon Worcestershire sauce
1 teaspoon sugar
1/4 teaspoon pepper
4 cans (14 1/2 ounces each) ready-to-serve beef broth
Cheesy Broiled French Bread
8 slices French bread, 1 inch thick
3/4 cup shredded mozzarella cheese (3 ounces)
2 tablespoons grated or shredded Parmesan cheese
DIRECTIONS:
1. Mix onions and margarine in 3 1/2- to 6-quart slow cooker.
2. Cover and cook on high heat setting 30 to 35 minutes or until onions begin to slightly brown around edges.
3. Mix flour, Worcestershire sauce, sugar and pepper. Stir flour mixture and broth into onions. Cover and cook on low heat setting 7 to 9 hours (or high heat setting 3 to 4 hours) or until onions are very tender.
4. Prepare Cheesy Broiled French Bread. Place 1 slice bread on top of each bowl of soup. Serve immediately.

Location: American Compound, Saudi Arabia
My brother spent his two weeks in Saudi driving around in our old Mercedes limo. My dad loves old cars, and can't seem to bring himself to buy one made within the last 20 years or so. The limo has been our families prized possession since we bought it from a Kuwait Prince oh so many years ago. Still runs fine besides lack of air-conditioning (which can be a little bit annoying in the desert heat). After the two weeks together and probably my brothers last trip to the Kingdom he wanted some good ol' photos with his favorite car. The Dalmatian just happened to be running around the Jebels with his owner somewhere around. He came in for this one shot - the first shot I took - and only stayed for the one. I love his little polka-dotted addition to the shot, I had to put this one up.

I don't remember how I made this ragout but I well remember the Cheese Bread, unique in France, and the fantastic wine: a Givry 1er Cru 2000, an expensive and noble wine that made this dish a dream.
There are about as many ways to make Katchapuri as there are families in Georgia. Traditionally, it is made as the mother before, the grandmother before and the great grandmother before that.
