Toronto's own Jay Carter is the subject of my summer feature in Best Health. I'm so excited to share this because I think very very highly of Jay. He's been a force in the industry, but always one to put his head down and work hard. No limelight, no spotlight. Except now.
Jay's not one who hams up for the camera (haha, well not for publicity sake), and he's usually pretty off radar, but he gave me the pleasure and privilege to speak with him for Best Health (and another big feature for an unrelated publication this fall), including 2 minutes to capture him in action. One of the shots can be seen here.
Do pick up the magazine, or at least check it out on iPad where there's some bonus features: his best lesson learned and best methods.
He is one of the best.
Jay being candid on his advice for those thinking of entering the culinary industry:

I've long admired Patrice Demers, at least since being introduced to his well crafted desserts (hello, Le Vert) at Les 400 Coups. Long overdue for a visit to his stand alone pastry and wine shop, I've had kind friends bring treats back so that I could still enjoy his shop's wares. In my cross country coverage, it was a chance to head back to middle-Eastern Canada and interview chef Demers for the Nov/Dec issue of Best Health.

Whoo Hoo! These were the cookbooks I won as part of the Canada's Best Chef contest I participated in at Yahoo.ca (http://ca.lifestyle.yahoo.com/bestchef/). I also got $500 in HBC gift cards! Now to wait for the post-Christmas sales :-D.

The second installment of my column for Best Health Magazine: Best Chef, which profiles some of Canada's top culinary talents and their "best" memories, experiences and/or tips.
This time a feature on vegan chef Lauren Marshall of Halifax's enVie, who was at Devour! Film Festival at the same time I was there. Although I missed her food truck popup (I was at a demo session), I did get the chance to meet for a one-on-one chat in Toronto a few weeks later.
This was the interview.
