Scattered around Tehran in the winter, are little stands that sell steamed Persian sugar beets (laboo).
I picked up these beets at the Pike Place Market last week, after being inspired by some Beet Gelato I had in New York. Pickings have been slim at the farmer's markets around here so far, but I'm hoping that June will quickly change that (she says as she stares out the window at gray, rainy skies).

Nearing the crest of Calimus Hill, a Union Pacific train of empty beet racks heads north on the Cascade Subdivision. Bound for a beet loader at Metolius on the Oregon Trunk, the train has just highballed Calimus siding. In mid-October, the Aspen groves in Klamath County hit their peak.
Beets are typically prepared with sweet and sour flavors. In this recipe, roasting brings out the sweetness and a balsamic glaze adds the piquant notes.

I realized that I cropped this wrong. I wanted something more like this... so here we are...
As daylight came, I watched workers collecting and transporting sugar beets. When we arrived the night before the fields was filled with greens. 2 days later it was empty and brown.
Art from my trip to Montana. This is just some digital stuff I worked on editing and manipulating. I like how these turned out.

The harvest is on the move as a pair of Union Pacific GP38-2s handle a train of sugar beets across the Snake River into Blackfoot, ID, on an October day in 1990.
Raw, pickled, baked, pureed for soup - beets are good for you! Some people don't like the texture, which make them a good option for juicing - add in a carrot, a little onion and celery and you've got yourself a very tasty juice. Shot for 7DOS, weekly theme Purple, Texture Tuesday, and for Compositionally Challenged, Week 1 - Unity - where everything in the image belongs there.
Like most of the other vegetables beets have also been struggling this summer but in the end they managed to produce a decent harvest.
I've given away most of my beet crop to the neighbours this year and left just a few for myself.
Enough for modest amount of homemade beet soup.
