▶ “If Julia Child was a vegan chef, this is the cookbook she would have written. The Joy of Vegan Baking is a full-fat, full-sugar cookbook that will leave you wondering if those cookies were really vegan. Nothing in this book is sacrificed for the sake of flavor. This is a part of the reason it was awarded the “Cookbook of the Year” by VegNews magazine. Also could be titled, 'How to Gain Back the Weight You Lost While Being Vegan.' ”

▶ YFGF's take...
The Joy of Baking can be as useful for its appendices, explanations, and procedures, definitions (e.g., the difference between baking soda and baking powder) as it is for its recipes.
For example:
“Chickens' eggs perform various functions in baked goods, from binding and leavening to adding moisture and richness, all of which can be replicated as well --if not better-- with healthful, plant-based ingredients.”
☞ Vinegar and baking soda
☞ Ground flaxseed
☞ Ripe banana
☞ Applesauce
☞ Silken tofu
☞ Commercial egg replacer powder.

Who would have thought that flour, baking soda, baking powder, cinnamon, and walnuts would smell as amazing as this did?
Baked Pasta with Ricotta and Ham from Mario Batali's Molto Italiano cookbook. This was dinner on Saturday night. It was Steve's second time making this dish. It doesn't seem to photograph very well, but it's really good anyway.
