The sign in the background refers to Keen's Mustard - although this is not actually the origin of the phrase "As keen as mustard". The phrase was first recorded in text in 1672; by their own advertising, Keen's Mustard was "First manufactured in the reign of George 2nd AD 1742".
Founded in 1938, York Castle Museum is housed in buildings that used to form the prisons.
The prison buildings were built throughout the c18th - the county jail between 1701-05 by William Wakefield, the Assize Courts between 1773-77 and Female Prison between 1780-83, both by John Carr (1723–1807). By the c19th these buildings were deemed unsuitable and a new prison, in a Tudor Gothic style, was designed by Peter F Robinson (1776–1858) and George Townsend Andrews (1804–55). York Prison was closed in 1929 and demolished in 1935, leaving behind Clifford's Tower and the c18th buildings which were then repurposed as the museum by Dr John Lamplugh Kirk (1869-1940).

This is one of the backgrounds I use to photograph my diecast cars and cameras on; plus other small items. If I want a darker color behind my subject, I pull the bottom closer to the camera and position the darker area at top behind whatever I'm photographing. If I want a more subtle, lighter background, I'll pull the darker area higher up out of the frame, leaving some of the lighter fade area. It's a real flexible system, as I can adjust the background to about anything I like.
