I was amused, on December 8, 2013, in Columbia County, New York, to look out the window & see this apple, sitting on a branch of the apple tree. Earlier, my friend Duane has seen a squirrel, eating an apple. It seems that the squirrel got distracted & left the apple on the branch!
There are few things in life quite as empowering as a large stack of money. Sadly, it's always a short-lived joy.
West Brompton cemetery: I've drained the colour from the original shot and upped the contrast to remove the detail from the cross, and added a heavy vignette to create what I hope is a suitably creepy atmosphere.
I picked up some Orzo at Rainbow Grocery after work today. And I wanted to add mushrooms to my diet- since I haven't had any in the last 90+ days, unless you don't count all that Kombucha.
This was pretty simple to prepare (which could be the refrain for most dishes- I think once you start dinner it's easy to feel like it's not as complicated as it looked on the page) and I'd definitely make this in the future. I scaled back on the dairy- mainly because I think I made too much Orzo. So it wasn't as creamy as it is probably meant to be? Not sure. I really liked the pine nuts in this, as the nuts are the same shape as the Orzo grain, so it blends in and makes for a fun surprise while eating.

Orzo with Yellow Squash, Mushrooms and Pinenuts
Ingredients
3 tablespoons butter
2 tablespoons olive oil
1 large shallot, chopped
1 1/4 pounds yellow crookneck squash, cut into 1/3-inch cubes (about 4 cups)
1/2 pound mushrooms, cut into 1/3-inch cubes (about 4 cups)
1 garlic clove, minced
2 cups orzo (rice-shaped pasta; 12 to 13 ounces)
1/2 cup freshly grated Parmesan cheese
1/4 cup whipping cream
4 tablespoons finely chopped fresh Italian parsley, divided
1/3 cup pine nuts, toasted
Preparation
Melt butter with oil in large skillet over medium heat. Add shallot; sauté 2 minutes. Add squash. Increase heat to medium-high; sauté until softened, about 3 minutes. Add mushrooms; sauté until tender, about 6 minutes. Add garlic and stir 1 minute. Season with salt and pepper.
Meanwhile, cook orzo in boiling salted water until just tender but firm to bite. Drain, reserving 1/3 cup pasta liquid.
Mix orzo, cheese, cream, and 3 tablespoons parsley into vegetables in skillet. Stir over low heat until creamy, adding some reserved pasta liquid if dry, about 3 minutes. Mix in pine nuts. Season with salt and pepper. Transfer to bowl; sprinkle with 1 tablespoon parsley.
