Light and filling, this chicken wrap always leaves me satisfied without feeling bogged down. It is so worth it to roast your own chicken.
Serves 3
For the roasted chicken:
1 chicken breast, bone in, skin on
Oilve oil
Salt
Black Pepper
For the wraps:
3-8 inch flour tortillas
Ranch dressing
1 tomato, diced and seasoned with salt and pepper
1 green onion, sliced into thin rounds
1 red chile pepper, finely diced
3/4 cup monterey jack cheese, shredded
2 tablespoons butter or margarine
Roast the chicken:
Preheat the oven to 350 degrees.
Rinse the chicken breast in cold water and pat dry with paper towels. Place the chicken breast on a sheet pan and rub with olive oil. Sprinkle gernerously with salt and pepper. Roast for 35 to 40 minutes, until cooked through. When cool enough to handle, remove the meat from the bones, discard the skin. and shred the chicken meat.
Make the wraps:
Place 1/3 of the shredded chicken in a line down the center of each tortilla. Drizzle ranch dressing over chicken. Top with 1/3 of the tomatoes and then with 1/4-cup shredded cheese. Sprinkle 1/3 green onion and diced red chile pepper evenly over cheese. To soften the tortillas, microwave each wrap on high for 10 seconds. Roll up the tortillas.
Heat a large frying pan over medium heat. Spread butter or margarine on rolled wraps. Place wraps, seam side down in frying pan. Fry until golden brown, about 4 minutes per side.
Tips:
I usually roast the chicken breast several hours before, or even the day before I make this meal. That way the chicken has plenty of time to rest before I shred it.

32.5" wrap style bracelet. Commissioned by a belly dancer friend of mine. This will loosely wrap around the wrist 4 times, 5 times if a really skinny wrist.
My favorite bubble-wrap flower (even though ES says there aren't any blue flowers that look like this!). I made them by coiling approximately 1"-wide flattened large bubble wrap, hot-gluing the back, then lightly spray-painting with Krylon paint. It's for a Secret-Garden themed runway fashion at the Des Moines Bubble Ball (www.childserve.org/index.php/details) at the end of March 2012 to benefit ChildServe.

EDITING: i brought up the exposure, shadows, and clarity and made the blacks darker. with a brush i added more clarity and SHOOTING: i had to wake him up from his 20 hour sleep!!

A piece of sheet metal (probably from the farm on Highway 2A) wrapped around a tree in the shelter belt pictured in the preceding photos. This metal was wrapped around the trunk so tightly that the edges of it touched. The strongest winds were likely in this spot as eastward forward motion combined with the tornado's overall circular motion (translating to a west wind, likely over 200 km/h).
George: While the Naner Lady is having an art day out of the house the Hand has to pack the Play station for when we move next month. We found that she left him some bubble wrap with the box, it is wierd though cause the bubble are bigger and harder to pop. Nigel is even having a hard time with his big bum helping.

In our home, Fran is in charge of everything that involves plastic wrap, she gives it a pull and gets a lovely piece...no wrinkles, no wads. In my 48 years I have yet to make friends with it. It rolls off easily enough and then all of a sudden its a wad of plastic that is impossible to undo, sooo I was heartened to see Fran have to pull the tube out of the box, curse at it a little, feel around for the starting edge and finally gain control over it again.
