For the crust, combine the cookie crumbs and melted butter in a medium bowl. Press mixture onto the bottom and 2 inches up the sides of an ungreased 9-inch springform pan. Chill crust while preparing filling.

In a small saucepan combine the semisweet and unsweetened chocolate and melt over low heat. Cool slightly.

In a large bowl combine the cream cheese, sugar, flour and vanilla. With an electric mixer, beat at medium speed until smooth. Slowly add melted chocolate, beating on low speed. Add eggs all at once and beat at low speed until just combined. Stir in milk.

Pour filling into crust lined pan. Bake for 45 to 50 minutes. Remove to wire rack to cool. Refrigerate 4 hours or overnight.

For the topping, heat the heavy cream in a small saucepan and bring to a boil. Remove from heat and add chocolate. Stir until melted. Set aside for 2 to 5 minutes or until thickened. Spread topping over cheesecake and allow it to set before serving.
